  • Egg Sandwich - A quick and appetizing recipe or those days when we need a quick fix for our lunchbox. ⁠

EGG SANDWICH⁠
⁠
Ingredients⁠
⁠
4 boiled and peeled eggs⁠
Salt to taste⁠
3 tbsps softened butter⁠
Crushed black peppercorns to taste⁠
2 spring onion greens⁠
4 brown bread slices⁠
Tomato ketchup to serve⁠
⁠
Method⁠
⁠
1. Add butter in a bowl, beat it till it becomes light and fluffy.⁠
2. Grate and add eggs. Add salt, crushed black peppercorns, and spring onion greens. Mix well.⁠
3. Take 4 brown bread slices, add 2 spoonfuls of mixture on a slice and spread it completely. Add 2 spoonful of mixture on another slice. Cover each slice with another slice on top to form a sandwich. Trim the edges of the pieces of bread and vertically cut each sandwich into half. ⁠
4. Transfer sandwich slices on a serving plate.⁠
5. Serve immediately with tomato ketchup.⁠

QUINOA LEMON RICE⁠
⁠
Ingredients⁠
⁠
3 cups cooked quinoa⁠
1 tbsp lemon juice⁠
2 tbsp oil⁠
¼ cup of raw peanuts⁠
½ tsp mustard⁠
½ tsp chana dal⁠
½ tsp urad dal⁠
2 dried red chilies⁠
7-8 curry leaves⁠
½ tsp turmeric powder⁠
Salt to taste⁠
Coriander sprig for garnish⁠
⁠
Method⁠
⁠
1. Heat oil in a non-stick pan, add peanuts and sauté for 2 minutes on medium heat. Add mustard seeds, chana dal, urad dal, break and add dried red chilies. Sauté for a few seconds.⁠
2. Add curry leaves and turmeric powder. Add cooked quinoa and mix till well combined. Add salt, mix well and cook for 3-4 minutes.⁠
3. Add lemon juice and mix well. Take it off the heat and transfer to a serving dish.⁠
4. Garnish with a coriander sprig and serve hot.

1 cup boiled sweet corn kernels, crushed ⁠⠀
2 cups grated processed cheese⁠⠀
Oil for deep-frying ⁠⠀
1-inch ginger, finely chopped⁠⠀
Salt to taste ⁠⠀
1 teaspoon red chili powder⁠⠀
½ teaspoon garam masala powder⁠⠀
1 green chili, finely chopped⁠⠀
1 tablespoon cornstarch ⁠⠀
½ teaspoon baking soda ⁠⠀
1 tablespoon refined flour (maida)⁠⠀
Crushed black peppercorns to taste ⁠⠀
2 tablespoons chopped fresh coriander leaves⁠⠀
Tomato ketchup for serving⁠⠀
⁠⠀
Method⁠⠀
⁠⠀
1. Heat sufficient oil in a kadai. ⁠⠀
2. Mix together crushed sweet corn kernels, processed cheese, ginger, salt, chili powder, garam masala powder, green chili, cornstarch, baking soda, refined flour, crushed peppercorns and coriander leaves in a bowl. ⁠⠀
3. Dampen your palms with some water, divide the dough into equal portions and shape into balls. ⁠⠀
4. Put the prepared balls in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. ⁠⠀
5. Serve hot with tomato ketchup. ⁠⠀

  • Dahi Wale Aloo is one of those simple yet flavorful recipes. All you need is boiled potatoes, yogurt, and your spices box. ⁠
Serve it with Rotis and parathas and enjoy a special meal. ⁠

4 medium potatoes (aloo), boiled and peeled⁠
¼ cup yogurt (dahi)⁠
1 teaspoon red chili powder⁠
¼ teaspoon turmeric powder⁠
A pinch sugar⁠
Salt to taste⁠
1 tablespoon oil ⁠
1 teaspoon cumin seeds (jeera)⁠
2 green chilies, roughly chopped⁠
¼ teaspoon asafoetida (hing)⁠
3-4 fresh coriander sprigs, chopped + for garnishing⁠
⁠
Method⁠
⁠
1. Mash the potatoes in a bowl. Add chili powder, turmeric powder, sugar and salt, and mix well.⁠
2. Heat oil in a non-stick pan. Add cumin seeds and sauté till it changes color. Add green chilies and asafoetida and sauté.⁠
3. Add mashed potato mixture and mix. Add ¾ cup water and mix well.⁠
4. Reduce heat, add chopped coriander sprigs, mix, cover and cook for 2-3 minutes. Remove the pan from heat and set aside for 5 minutes to cool.⁠
5. Add yogurt and mix well. ⁠
6. Serve hot garnished with a coriander sprig. ⁠
