I have spent the last few days at @artahretreats spending most of my time outdoors, immersed in nature. I have never felt healthier after the daily hikes and power yoga 🧘♀️ Incredibly grateful to have spent it with some wonderful women who I will most definitely be keeping in touch with. My favourite day to relax and recharge (by means of pancakes of course).
I had eye surgery on Thursday, so this weekend more so than ever has been about resting at my family home and trying not to overdo it - not something that comes naturally to me because I’m always on the go, keeping busy!
Anyway, I’m sure you’re more interested in these 4 ingredient bad boys.
1 cup oats
1 cup non-dairy milk (I didn’t actually have any at home so used water instead)
1 1/2 tsp baking powder
Coconut oil to fry
Berries and maple syrup to finish
1. Blend the banana, oats and milk (or water) in a blender such as a @nutribullet until smooth.
2. Once smooth, stir in the baking powder.
3. Add a small amount of coconut oil to a medium heat pan, and pour into the middle a pancake sized amount. Cook on each side until golden, and repeat until all the mixture has gone.
4. Pile them up, top with berries and drizzle with maple syrup!
