This vegan 🧀Mac and Cheese Bake🧀 with spinach and broccoli is the bomb 😍👌🏼 super creamy with a crunchy and cheesy breadcrumb topping 😋 super simple to make using @sacla_uk vegan ‘cheese’ sauce in the filling. Here’s how to make it:
150g macaroni, cooked according to pack instructions.
1 jar Sacla vegan ‘cheese’ sauce
1 tbsp oil
2 garlic cloves, finely chopped
1 tsp mustard.
Juice of 1 lemon
1 small head of broccoli, chopped into florets, boiled for 10 minutes and drained
Salt & pepper to taste
Topping - mix 2 tbsp of bread crumbs and 50g grated vegan cheese in a small bowl.
Method - heat the oil in a large pan and cook the garlic for a few seconds, then add in the spinach and lemon juice. Cook for a couple of minutes until the spinach has wilted. Add in the macaroni, broccoli, Sacla cheese sauce, mustard and season to taste with salt & pepper. Cook until heated through. Transfer into a baking dish and sprinkle on the cheese and breadcrumb topping and cook under a hot grill for 5-10 mins or until the top is golden brown. Enjoy!

1 frozen banana
1 cup frozen blueberries
2 tbsp Tahini
2 scoops protein powder
1/2 tsp cinnamon
Splash of oat milk
