Many years ago, @guarnaschelli sat across from me at a @nokidhungry event and we were having dinner. Alex said “you know, you can learn a lot about a person by eating their food.” I didn’t really understand this at the time so she proceeded to explain, through little details that I would definitely have missed, in each dish things that gave me a good insight into whoever was cooking. Last night I had dinner at @butternyc and as @johnnapgoldman and I were eating I kept thinking about that conversation that Alex and I had all those years ago. Alex’s food says alot about Alex. It’s hard to describe (Alex is much better at describing food than I am) but words like flawless, surprising, naughty, balanced, thoughtful were used by both of us. The salted rolls with soft butter were just a little oily crispy on the edges and pillowy on the inside. The demi on the short ribs looked so deep and dark and mysterious and when you tasted it there were flavors that were totally light and delicate and not obscured by salt or smoke. The donuts were hot, filled with a mellow jam, and served with an absolutely perfect anglaise (see the last photo) that had just the smallest hint of booze that warmed the tongue and made everything come together. Amazing meal by a truly fantastic chef whose playfulness and craftsmanship is evident in everything you see. The decor, the music choices, the friendliness of the FoH staff, and most importantly, the food.
