The toasted seeds (sesame, coriander, cumin) intensify the experience of this February starter. If you are not a great admirer of their taste, I can assure you the fritters are as flavoursome as without them. However, before dismissing them, please check their nutritional content (e.g. Fennel seeds are source of calcium, iron, Vitamin C and magnesium)⠀

  • I have tomatoes and zucchini’s coming at me in waves from the food forest! Sooo, I have made a  sauce with the overflow which I will use when I make ratatouille! Zero food waste. For the sauce I roughly cut up tomatoes, onions, zucchinis, capsicums and added a few basil leaves from the window sill herb planter. I baked it for an hour then whizzed it up. Now it is canned and ready to eat.

🥒 黃綠櫛瓜
🧂 麵粉 梅子胡麻醬
🥚 雞蛋

作法👉
1. 櫛瓜切片 雞蛋打散成蛋液
2. 櫛瓜沾麵粉後再沾蛋液
3. 熱油鍋 煎! 不要懷疑! 翻面再煎! 你還懷疑! 完成! 不要再懷疑了就是這麼簡單!

📝 INGREDIENTES:
-	2 cdas de aceite de oliva
-	1/2 taza de cebolla fileteada
-	1 cda de finamente picado
-	1 taza de jitomate picado
-	1 taza de elote blanco desgranado
-	4 calabazas italianas en rodajas
-	1 taza de puré de tomate
-	1 cda de orégano
-	1 cda de tomillo
-	1 pizca de sal
-	1 pizca de pimienta
-	1 taza de jitomate cherry
-	1 taza de queso Oaxaca deshebrado
PREPARACIÓN:
1.	Precalienta el horno a 200° C.
2.	Calienta una sartén a fuego medio con el aceite de oliva y cocina la cebolla y el ajo. 
3.	Agrega el jitomate, el elote y las calabazas. Cocina 3 minutos y añade el puré de tomate, las especias y sazona a tu gusto.
4.	Coloca la preparación anterior en refractarios aptos para horno. Acomoda los jitomates cherry y cubre con el queso Oaxaca deshebrado. 
5.	Hornea durante 15 minutos tapando con papel aluminio hasta que se derrita el queso.
6.	Sirve caliente.

Na, kennt ihr mich noch?! 🤪 Da ich mich das erste Mal dieses Jahr melde, schulde ich euch wohl noch ein Frohes Neues! 🎉 Mein Jahr hat ganz entspannt angefangen, mit einer Auszeit und ganz viel Zeit für mich. Jetzt habe ich neue Energie und ganz viele Ideen. 😃💪🏻 Außerdem nach drei Wochen das erste Mal wieder fotografiert und gemerkt, wie sehr es mir gefehlt hat. Den Kuchen gab's vor ein paar Tagen zu meinem Geburtstag. 🎂 Mein Geburtstag ohne Instagram, war auch mal etwas ganz anderes. 🤭 Wer mir schon länger folgt, weiß, was ich das hier immer mit euch gefeiert habe, genauso wie Miss Grünkerns Geburtstag, der vor 9 Tagen war. 5 Jahre! Aber die Party holen wir noch nach. 😉 Ich hoffe ihr seid dabei. ❤️

  • VEGAN ZUCCHINI “RICOTTA” ROLL UPS! 😍🌱(Nut free)

RECIPE
2-3 zucchini
32 ounces marinara sauce
1 (14 ounces) container firm tofu
Juice of 1 lemon
1/2 tsp salt
4 tbsp nutritional yeast

1/2 tsp garlic powder
Fresh basil to garnish

Instructions: 
1. Remove tofu from package and wrap tofu block in 2 paper towels. Squeeze for 10 seconds then break apart tofu into your food processor. To the food processor add salt, lemon juice, nutritional yeast and garlic powder. Pulse 6-10 times until you reach the consistency of ricotta cheese. Taste and adjust salt and seasonings as needed.
2. Preheat oven to 400°. Slice zucchini lengthwise into 1⁄8” thick strips, I used a vegetable peeler!
3. Spread marinara sauce sauce onto the bottom of a oven-proof skillet; set aside.
4. Spread 1 tablespoon ricotta mixture evenly along each zucchini slice. Roll up and place in the prepared skillet; repeat with remaining zucchini slices and filling.
5. Place into oven and bake for 25-30 minutes, or until lasagna rolls are heated through and the cheese is beginning to brown.
6. Serve immediately. Garnish with ground pepper and fresh basil.
