Традиционный тайский десерт, весьма популярен, особенно в сезон урожая манго. Попробовав приготовить это блюдо, я была очень удивлена, насколько это необычно и восхитительно вкусно. А этот манящий  аромат кокоса, просто сведит с ума 🤗.
Сложность этого блюда лишь в том, что Вам нужно будет найти тайский белый клейкий рис, мне пришлось очень постараться и не один супермаркет обыскать. Но как говориться: "если только захочу на луну я полечу" 😉. А манго и кокосовое молоко найдете повсюду, с этим проблем нет.

  • Pink cheese! I mixed goat cheese with some pickled beet juice, easy and tasty. The salad was so good; kale, sunflower sprouts, romain, quinoa, roasted sweet potato and avocado with my usual homemade vinaigrette. A+++ 🥗

What & How I did it...
.
2.2kg bone-in Lamb Shoulder.
Smoked for 13hrs on my Offset.
.
I trimmed it down and removed most of the hard fats on both sides. I then scored the top making sure that the 🔪 incisions ran into the meat but not too deep. This helps the rub penetrate into the meat and you will also get that killer bark!! 👊
.
A light coating of Olive Oil first to hit the lamb & then a generous coating of @barbecuemafia Mafia had a little Lamb BBQ RUB😉
.
Smoked over 100% lump charcoal and primarily 🍏 chunks from the best!! @natural_smoke_australia
I added chunks of 🍊 & 🍒 through the middle of the cook (this lamb was part of a bigger feast **check out my gallery**)

Smoked at various temps between 225f to 320f. Hit it with high temps at the start and then kept it to a low/min during 3/4 of the cook, then maintained 300f for the last 1/4.
.
At the 6hr mark i took a med size disposable aluminium pan; placed 2 oranges & 2 onions that i cut into quarters in the pan and then placed the lamb on top of the oranges and onions. I then curled up the pan to 'boat' my lamb so the edges of the lamb were not exposed. 
I spritzed the top of the lamb (equal parts, water, apple cider vinegar & apple juice) every 30 mins from this point until the last hour of the cook. .
For the last hr, I loosely covered the top of the lamb with foil so not to burn it whilst getting the lamb to an internal temp of 207f. Rested for 1hr and then pulled.

I served this pulled lamb with home made sides of a spicy vinegar mop sauce and a hickory sauce 🤪😜

It tasted as good as it looked🤘 When you have someone who prefers chicken over red meat moaning at the table, you know its bloody awesome!!!

  • Saturday morning last weekend was reserved for Unicorn Toast (recipe from @littlebitesofbeauty, pics coming soon). These lovely pastels were the product of blending vanilla greek yogurt with matcha powder, spirulina, beet powder, and turmeric. They made a wonderful bright and light breakfast on a that consisted mostly of paper writing. I’ve about had it with this term, Spring Break please :) super easy and colorful way to liven up your breakfast. And you could totally use a coconut yogurt for a vegan option! 😋💜
