  • I hereby dub today: #mscm Mexican street corn Monday!  I stopped at a roadside market this afternoon and bought bicolor sweet corn. Fresh from the field. Boil for a few minutes, slather on a thin layer of mayo, coat with parmesan cheese, sprinkle cayenne and drizzle lime juice. Done. All sorts of flavors and textures dancing around your mouth.  Brings back memories of my first time eating street corn on a stick while walking the streets of the breezy little town of Tlacotalpan, Veracruz. Every building bursting with bright colors. Even saw a car there with the old yellow Wisconsin license plates! Food creates such amazing memories and unites cultures. Viva la comida!! Of course you can't go wrong with eating corn the traditional way with butter, salt and pepper either.   • Well, I'll be making this again. This is delicious! This is an herbed turkey and wild rice casserole made in the slow cooker. I've never made this recipe before but made a couple of modifications right off the bat. It takes a few more steps than the just dump and cook most crockpot recipes call for but it's so worth it. Take 6 strips of bacon (I fried the whole package because c'mon, it's bacon) and fry until crispy. Then take 1 pound turkey breast and cut into 1" chunks (I used 2 #). Cook the turkey, 1 medium chopped onion, 1/2 cup sliced carrots, and 1/2 cup diced celery in the same pan as the bacon until the turkey is seared on all sides. I used a slotted spoon to remove everything from the pan so as to cut down on the bacon fat transfer. Set aside. In  the crockpot whisk together 28 oz of chicken broth and 1 can of cream of chicken soup (I try to use as little processed food as possible so substituted the canned soup for 1 block of cream cheese and no whisking required). Then add in the turkey mixture, 1/4 tsp dried marjoram, salt and pepper and 1.5 cups wild rice (rinsed). I didnt have wild rice so just used brown rice. You're supposed to add the bacon at this point also but I don't like soggy bacon at all so decided to leave it out and just crumble it on top when I served it for some extra texture and I'm sooooo glad I did. Cook on low for ~6 hours until rice is fully cooked. This is totally a comfort food dish. I added cayenne to my hubby's when I served it so this is great for the whole family and is customizable for all heat preferences. As good as this is, I will probably add peas or green beans next time just to brighten it up a little. Cooked on high for 5 hours. The house was brimming with rich smells by the time we got home. But the fun doesn't end there. Then keep the crock pot on and take 1 cup of bisquick, 1/2 tsp thyme, 1/4 tsp sage, and 1/4 - 1/3 cup of milk. Mix until just moistened. Drop by small spoonfuls on top of the stew pieces (not into the liquid), cover, and cook for about 30 minutes. (Mine took a little longer - i learned to keep the  dough in the middle in a thinner layer than along the sides for more even cooking). It's a complete meal in 1 dish!   • Moroccan chicken. Gearing up for a busy week and not feeling like heating up the kitchen so I pulled out my Betty Crocker Slow Cooker Cookbook for some fresh ideas. All the recipes this week will be from there and all made in a crockpot. This is super quick prep. Take the skin off of 8 drumsticks and put into your crockpot. In a bowl mix a can of pineapple chunks (in it's own juice), 1 chopped onion, 5 chopped garlic cloves, 2 T lemon juice, 1 T marjoram leaves , 1 tsp crushed red pepper, 1 tsp turmeric. Mix well and pour over chicken.  Cook on low for about 4 hours. When chicken is fully cooked, remove from the pot. Take 1 T cornstarch and mix well with 1 T water. Pour into sauce in crockpot and stir. Cook on high about 15 minutes until sauce starts to thicken.  Add in 1/2 cup chopped green olives. (I also added about 1/4 cup of olive juice from the jar of olives).I served it over wild rice. My husband said it has the perfect mixture of sweetness, saltiness, and brineyness. He went back for thirds. Turmeric is so good for you and has anti inflammatory properties.   • I cannot even tell you how sad I am that @sujeomadison is closing!  It’s been one of my favorite restaurants since day one, serving up unforgettable dishes that can’t be found anywhere else...certainly not in Madison, but sometimes anywhere else too!  I hope that Chef @tmills608 can find another way to showcase his Asian dishes, because my mouth is going to be very sad after August 24. 😭😭😭

  • Calling all lovers of spice! This dish will hit all the notes. This is an Indian-inspired  chicken chili.  Gather and prep all your ingredients because this comes together very fast. Brown a pound of ground chicken with a hearty drizzle of avocado or peanut oil. Grate 1" fresh ginger, grate 3 garlic cloves, chop 2 jalapeno peppers (remove the seeds and veins if you dont like it too spicy), chop 1 large onion. When the chicken is cooked and broken into bits, add all the above ingredients and cook for a few minutes until they're not so raw. Then add in 1 palmful (approx 1 Tb) of cumin, coriander, chili powder and garam masala. The smell alone will drive you crazy and test your self control. Stir until well combined. Add in 1.5 cups chicken stock, 14 oz of canned chopped tomatoes, 1 cup of tomato sauce and stir well. Take a can of chick peas and drain them and semi-mash them in a bowl. I used a potato masher but you could take the food processor out for a couple of spins. Add to the chili and just simmer away.  Add s&p to your liking. You might have neighbors knocking on your door as the fragrant warm spices waft around encircling them in memories. Serve with garlic naan that's been grilled with some butter. Serve with a dollop of sour cream or Greek yogurt and a tablespoon of mango chutney to mix in. Also good with fresh cilantro and lime but I'm currently out of both.  Less than 30 minutes from fridge to bowl.  If you've never cooked with garam masala you are in for a real treat. It's one of my favorite spice mixes...although hard to find in your average grocery store. I bought mine at Penzeys. It's a combo of cumin, coriander, cinnamon, clove, cardamom, red pepper flakes, bay leaves.   • There's nothing too special about meat and potatoes. It's hearty and provides a stick-to-your-ribs meal for budget conscious families. But...... add a spectacular bright herby sauce and it's so much more than standard fare.  On a sheet pan I cubed up some baby potatoes and added evoo and salt and pepper. Popped it into a 400° oven for about 20 mins. I prepped the asparagus and when the potatoes were almost fork tender I added the asparagus on top with a drizzle of evoo and some s&p. Bake for about 10 mins until asparagus is tender crisp. (Depends on thickness of asparagus). Cut the steak (sirloin or strip) into bite size pieces. Evenly coat the steak with evoo, garlic powder, paprika and s&p. Sear on high heat in cast iron pan and then stick it into the oven until desired tenderness (then tent with foil and let rest. The evoo and juices from the steak and the spices make a delicious gravy). While the steak is cooking, make the herb sauce: Whisk together the zest and juice of 1 lemon, 1/4 cup finely chopped parsley, 2 T freshly chopped mint, 3 finely chopped garlic cloves, some red pepper flakes, s&p, and 2 T evoo. Whisk well and drizzle over asparagus and potatoes. The blend of flavors from the savory beef to the brightness of the herb sauce and vegetables is a match made in your heavenly kitchen. Leftovers for lunch tomorrow!   • Do you like cinnamon rolls? Then you will L❤VE this cake. This is a poke cake which are some of my favorite cakes to eat. They are dense, moist, and literally exuding flavor.  Make a white cake, per instructions. Allow to cool and poke holes all over with the end of a wooden spoon.  In a small bowl melt 4 T of butter and add 1 can sweetened condensed milk, 1/2 cup brown sugar, 1 tsp cinnamon (I used 1 Tb), and a pinch of kosher salt. Mix well and drizzle all over the cake, filling all the holes. In another bowl, whip 1/2 cup hwc until stiff peaks form then set aside. Next,  blend 1 block of cream cheese, 4 Tb of soft butter, 1 cup powdered sugar, 1 tsp vanilla, and a pinch of kosher salt until all smooth. Gently fold in the whipped cream until combined and frost cake. I also dusted the frosting with a bit of cinnamon. Refrigerate for at least 1 hour so the filling has time to penetrate the cake. This is soooo good. Imagine sitting down with a pan of this (I mean a piece) and a hot cup of coffee.     I’ve got all this passion, right. I’ve got the enthusiasm, the knowledge, the skills, and the determination to be a super impactful, compassionate, empowering nutrition coach. ⁣⁣
    ⁣⁣
    BUT. ⁣⁣
    ⁣⁣
    I get caught up in the creativity generating numerous ideas, lacking decisiveness and implementation. ⁣⁣

    I procrastinate and marinade on ideas too long, second-guessing myself and waiting for it to be “perfect” rather executing. ⁣⁣

  • Good morning everyone! ☕️ Have you ever heard of or tried Bulletproof coffee? ☕️ If not, the idea is that by adding healthy fats to good quality coffee, that it will give you added nutrients that will help you feel full longer and curb cravings. 
Our version of this coffee also adds collagen, which is the most abundant protein in our body.  It supports healthy skin, bones, joints, hair and nails.  As we age, however we decrease production.  That's why we choose to supplement it and adding it to coffee is perfect.  It has no flavor! 
Ingredients: 
1 cup of quality coffee
1 T. grass-fed butter or ghee
1 t. MCT oil
1 scoop of collagen
1/2 t. cacao powder (optional) 
1 t. liquid stevia (optional)

1. Brew one cup of coffee. 
2. Combine all of the ingredients in a blender. 
3. Blend for at least 30 seconds to combine well.
