  • Roasted veggies and homemade tzatziki 💚 An easy go to recipe from todays dinner made with simple slices of potatoes, broccoli, carrots, snack pepper and onions - oven baked in 35 min at 200c until golden and crispy.

  • Pan fried ( on the grills of our outside kitchen) Alaskan Keta Salmon fillets @waitroseandpartners served with roasted peppers, wild rocket from the veg garden, marinated artichoke and marinated anchovy fillets @marksandspencerfoodpr ... a creamy sliced avocado. We’ve served this on a bed of couscous,  which we’ve made by adding in some pan fried mushrooms, kale, cherry tomatoes and broccoli.. plus then dressed it with a course grain mustard dressing and there you have it .. supper is served quickly for our fish eaters this evening 💚 don’t be afraid of using good quality prepped products.. they’re a life saver.. but always check the labels! 💚

    Breaking news: Alexis ate vegetables!😁🎉 After sitting in the car for a few hours, the very essence of my being was begging me for some plants. Getting your greens in, I realized, isn’t as hard when you have a realllyyyy good salad! Wishing you a restful Sunday💆‍♀️✨

  • quinoa is one of my favorite foods year round because you can make it as refreshing or comforting as you want and it’s ALWAYS delicious 🤤 for lunch I made a quinoa bowl cooked with chicken broth and I steamed carrots and kale with it (all simultaneously in one saucepan which I didn’t know you could do!!!) and then topped it with hummus, cherry tomatoes from my garden, avocado, and after the pic added some sriracha 🌶😈 it makes for a great satisfying, fresh, and warm bowl for lunch or dinner. You can also add any animal protein or nuts/seeds or beans if you want! I was just in a time crunch 😝

  • Coconut Flour Protein Pancakes!! Super simple + easy pancake mix, but the real MVP is my iced coffeee !!! I don’t drink coffee very often but when I do it has to be like this, coffee latte, coffee on ice and @califiafarms almond milk for that creamy delicious texture (can’t wait to try their creamer tho) went perfectly with my pancakes, here the recipe:
Ingredients:
1/4 cup coconut flour 
1 scoop @sunwarriortribe vegan protein
1 tsp cinnamon 
1 tsp baking soda 
2 flax eggs (2 tbsp + 5 tbsp water) 
1 tsp vanilla 
1/2 cup almond milk or water
Directions:
Stir dry ingredients in a large bowl
Prepare flax egg (let it soak for at least 10 mins) and add wet ingredients until smooth consistency 
Pour spoonful of batter on medium skillet, cook until crispy and serve with your fav toppings

  • I judge every brunch restaurant by their potatoes and I’ve picked up a couple things to improve my own potato game:
🍠cut them chunky - there’s nothing like a big bite with a crispy outside and soft potato-y center
🍠go easy on the salt but use LOTS of seasoning - like everything bagel 😋
🍠cook at a lower temp for longer - otherwise you risk burning the outside with an undercooked inside 😝
🍠cook em on the stove - I love oven roasted too, but my favorite method is in a non stick skillet: heat oil over medium heat, stir potato cubes to coat them and add seasonings, pour in 1/4 c water and cover. Cook ~ 15 min, stir occasionally, until water is absorbed and potatoes are starting to crisp. Voila!

  • Jalapeño Mac and Cheese made with @eatbanza chickpea pasta, @violife_foods dairy-free cheddar, a scoop of Greek yogurt for extra creaminess, and chopped jalapeños.

I just made the pasta, returned to the pot, put on low heat and added a handful of the cheddar shreds and a scoop of yogurt alone with 1/2 small chopped jalapeño. Mix together on low heat until cheese is melted and creamy.

The reason I use a vegan cheese + Greek yogurt is because too much cheese (as much as I love it) makes me feel bloated and gives me tummy aches 😪 Greek yogurt tends to work way better with my digestion, so I like to combine the 2 cause it just feels better for me. Plus I always love to incorporate more plant based products when I can. But you do you! Feel free to leave out the Greek yogurt or even use regular cheddar if you wish!
