  • Hey guys! It's been a long time since I posted a recipe... But here I come with a hivernal pancake recipe version.
RECIPE: [1 person serving] -1 & 1/2 cups flour
-2tbps raw sugar
-2tbps cacao powder(unsweetened) -1tbp backing powder
-a pinch of salt
-1/2 cup milk (almond, oat...)
-1 cup water
-2tbps vegetable oil
METHODE:

1)mix the dry & wet ingredients separately, then add a little at a time from the wet to the dry ingredients

2) let the mixture sit for 10 minutes

3) cook 2tbps worth of dough in a non-stick pan for 30 seconds per side

4)stack the pancakes with peanut butter layer in between

5) add your favorite toppings, and I think Japanese persimmons, pomegranate seeds and drizzles of maple syrup or honey on top, you can also add a handful of roasted peanuts or some granola as I did(check out the recipe on a recent post)

Korean customs have this noodle soup on celebratory occasions such as birthdays, wedding, etc. 🥳🍻👰👰🤵🤵 Realizing today is the most depressing day of the year according to who knows 🤷‍♂️ I thought about making a big noodle soup with kimchi. To celebrate this depressing Monday 😩

  • Found a lovely recipe for lentil and chickpea dahl today. Threw in a few red chillies for an extra kick with brown rice on the side. It was so tasty and accidentally vegan so we can feel all virtuous as a bonus😋

  • Happy #MeatlessMonday! Or rather, should I say early #TacoTuesday ?
🌮🌮🌮🌮🌮
Last week, @aldiusa had plenty of plant-based and meatless products on special. One product I have been meaning to try was plant-based (beef-less) crumbles. I have been eager to try a vegan taco meat recipe. These were only available at Aldi’s for a limited time, but you can find beef-less crumbles in many grocery stores’ meat substitute section. We liked this recipe so much, we went back to buy 2 more bags of beef-less crumbles to keep in the freezer for later! Adding the lentils thickens it up and adds more plant-based ingredients.
🌮🌮🌮🌮🌮
Ingredients:
•2 cups Beef-less Crumbles
•1 cup Lentils
•2 Tbsp Taco Seasoning
•3 Tbsp oil of choice (I used Olive Oil)
•Taco garnishes (shelles, lettuce, salsa, etc.)
🌮🌮🌮🌮🌮
Directions:
1. Bring 2 cups of water and 1 cup of lentils to boil. Reduce heat and let simmer for 6-8 minutes, or until lentils are tender, but not mushy. Drain any remaining water
2. Heat oil a pan to medium-high. 
3. Add beef-less crumbles. Heat for 1 minute until warmed.
4. Add lentils to pan with crumbles, stir to combine.
5. Add 2 Tbsp taco seasoning to pan, mix thoroughly.
6. Heat for 2 more minutes.
7. Serve as you would taco meat! We added it to soft shells with lettuce, corn, salsa, and vegan sour cream! This would also be great in a taco bowl!

  • This weekend I did my first ever park run! It was great and the atmosphere was so contagious. After my 5k run I made this delicious vegetarian salad with lettuce, spinach, sweetcorn, tomato, avocado, roasted sweet potato and a soft boiled egg. I served it with a delicious vinaigrette with homemade basil 🤤

  • Happy Monday! 🌞 So happy the weather is better this week! I don't know how much more of -30 my car or I could take 😅 Starting a brand new week after a nice, relaxing weekend off. I went to the gym, I cooked and baked some good food and I hung out with my boyfriend in between his shifts. It was a much needed recharge 😊 I'm sharing a photo of this Superfood Trail Mix I made a bit ago from @joyoushealth first book! My boyfriend and I have really enjoyed snacking on this! I didn't use as much coconut sugar or oil as the recipe called for and I added in some chopped dates because we really love dates! It was really good! I took this to work for snacks, ate it while I was working around the house and needed a little something. The recipe actually makes a good amount and although there's many superfoods people might find expensive, I got only what I needed at bulk barn, some of it I already had on hand and didn't spend that much at all too make this! 🌱 A trail mix is super versatile and can be customized to your own liking. A perfect snack for on the go or traveling! Anyway, hope you have a good start to your week! 😁 Enjoy your day ❤ #foodbycourtneyraeann

  • Förra veckan körde vi @portionenundertian s 300-kronirsvecka, en av rätterna var denna soppa;

Slät linssoppa med kokosmjölk

1 st gul lök
2 st vitlöksklyftor
2 msk ingefära, färsk
1 st röd chili
1 kg morötter
2 dl röda linser, torkade
6 dl vatten
1 st grönsaksbuljongtärning
4 dl kokosmjölk
0.5 st citron
Olja att steka i
1 dl solroskärnor

Tillagning

Skala och hacka lök och vitlök. Riv ingefäran och finhacka chilin. Skala och grovhacka morötterna.

Stek lök, vitlök, ingefära, chili och morötter på medelvärme i en kastrull några minuter. Tillsätt sköljda linser, vatten och grönsaksbuljong. Låt koka tills linser och morötter är mjuka, ca 10 min.

Mixa soppan helt slät i en blender eller med en stavmixer. Häll i kokosmjölken och låt koka upp. Pressa i citron och rivet citronskal och ställ åt sidan.

Rosta solroskärnorna gyllene i en torr stekpanna och använd som topping till soppan.

At Ben’s Chili bowl, the history is as rich as the food that they serve. We first learned about Ben’s while attending college in DC. Ben’s is special to us for many reasons. For one, Ben’s was serving vegetarian chili long before the recent uptick of vegetarian food markets. And secondly, the owner is a Trinbagonian-American.

As we reflect on Dr. Martin Luther King Jr’s life and legacy today, the story goes that Ben’s was the only restaurant that remained open during the riots that ensued after’s Dr. King’s assassination. They remained open at the request of civil rights activists, Stokely Carmichael (also a Trinbagonian-American), and fed activists and law enforcement officials alike.

But beyond all the intriguing history, Ben’s food is just downright delicious. I feel like we’ve mentioned that euphoric, tingly feeling of satisfaction that we get when we eat something incredibly good. Ben’s definitely gives us all those feels. We had the chili dog with onions and mustard. Their smokey, rich chili has been nourishing stomachs and souls for a long time, and hopefully they will continue to do so for a long time to come.

Today’s lunch is very much a raid the cupboards as I haven’t been shopping lunch. Mexican spiced jackfruit and pilau rice. The sauce is a bit weird, might try the other ones in the range though.
