  • Butternut squash fusilli with avocado and pumpkin seed butter pesto by @the_clumsy_vegan 💚 Share this with someone who loves pasta! ​
Recipe:
Crinkle cut butternut squash: 2 cup (shop bought)
Olive oil: to coat
Nutritional yeast: 1 Tbsp
Smoked paprika: 2 tsp
For pesto
Avocado: 1
Basil leaves: 1/2 cup
pumpkin seed butter: 1 Tbsp
Smoked salt: 2 tsp
Almond milk: 1 Tbsp
Method: 
1) Preheat oven to 175C
2) Make pesto by blending all the ingredients together
3) Coat squash with olive oil and roast in a preheated ovnfor 20-25 min till done
4) Coat with pesto and sprinkle with nutritional yeast and paprika.
5) Enjoy!

👩‍🍳 Why I stopped being a raw food chef.

Have you ever heard of the “bliss-point”? It’s a term used in the food industry. Companies or chefs who make food try to create the perfect balance between sweet and salty to leave the customer wanting more and more of the product 🍔 This is the reason you’re addicted to your favourite tomato sauce 🥫 or salad dressing and keep eating it despite actually feeling full.

Having been a raw vegan chef for 5 years, I have mastered the bliss point in the food that I make, which at first made me happy because everything tasted absolutely scrumptious… 🥙 but then it dawned on me after I was eating my second salad 🥗 to the point of almost throwing up (that’s how full I was!) that I was addicted to my own flavours!! .

It’s not that I needed that second salad, I simply wanted the taste of the dressing, but with each spoonful my brain kept saying more, MORE!!

Why is it that we fully accept addictions such as drugs or alcohol, but food addictions are often overlooked? 🍟🍕🍝🍭 In my opinion, they’re even worse, as food is readily available in any supermarket, specially sugar.

I had a choice to make…

And thus I had to make a difficult decision, and I decided to give up my raw food career. 🥬 I will still do workshops on occasion and do some catering for retreats, and of course I will still have my raw vegan book (click on the link in bio) 📖 , but I won’t be catering everyday like I was doing it before. . .
.
So that’s the story, which is also why I haven’t been active on my Instagram.

  • @beyondmeat hot Italian sausage, kale, and white bean skillet: it may not be pretty but it sure is tasty — and so quick to throw together when you do the beans in advance. (I *cannot* with canned beans anymore knowing how amazing they taste cooked from dry in the instant pot, not to mention how much cheaper they are in bulk.)

Earlier this year I discovered my new fav way to make oats by simply adding in turmeric and a bunch of other spices! 🥣 Not only is it great for you, but it’s simply delicious… especially when paired with sweet fruit! 🍌This recipe is in my cookbook but I’ll be sharing it with you all today so you can can give it a try yourself, enjoy:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
👉 FULL RECIPE
[Serves: 2 ⠀Time: 15 min]
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ In a saucepan combine 1 cup quick oats, 1 cup unsweetened almond milk (or your fav plant-based milk), 1 cup water, 2 tsp chia seeds, 2 tsp ground flaxseed meal, 2 tsp hemp seeds, 1 tsp turmeric, a pinch fo black pepper, 1 tsp cinnamon, 1 tsp ginger and 1/4 tsp nutmeg. 
2️⃣ Cook on medium heat and stir until it thickens to your desired consistency. Turn off the heat and add in a dash of maple syrup to sweeten the oats. 
3️⃣ Divide into two bowls and top with fresh fruit, nuts and a dollop of home-made raspberry chia jam if desired (recipe is also in my book) 👌🏼

  • Eating what is probably my recipe obsession over here 🤗. I know hummus as a sauce sounds ridiculous but sometimes the most ridiculous ideas are my absolute fav! I just thin it out with some water and it is beyond delish! Plus anything with a thiccc slice of halloumi is automatically a winner. 
I’m working on a new problem set over here which sounds incredibly boring but I’m actually learning a lot by completing it. Sometimes I wish i could just freaking focus on one interest but I kind of love having both blogging and Econ when I get frustrated with one 😂. Let me know if you want me to share more Econ stuff while I’m studying for my PhD here. Happy to do so either way!

Recipe: 2 Servings
1 onion diced
2-3 cloves of garlic, minced
1 tbsp vegetable oil
11 oz mushrooms, sliced (300 g)
4 tbsp white wine (optional)
1 tbsp tamari or soy sauce
3/4 cup vegetable broth or water (180 ml)
3/4 cup plant-based milk/cream (180 ml)
2 tbsp cornstarch
Spice mixture: 1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, a pinch of chili flakes, sea salt & pepper to taste
1 tbsp nutritional yeast flakes (optional)
Fresh thyme leaves and/or parsley (and/or tarragon), chopped
Serve with brown rice or pasta of choice

Instructions
Heat oil in a large pan/skillet, add onion and fry for about 5 minutes. Add garlic and fry for a further 1 minute.
Now add the mushrooms and fry over medium heat for about 5 mins.
Pour in white wine (optional), vegetable broth, tamari (or soy sauce), and the spice mixture. I love adding nutritional yeast flakes as well but that's optional! Bring to a boil.
Add cornstarch to the plant-based milk or cream and stir to dissolve.
Pour the milk/cream mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens. Taste and adjust seasonings as to your preference.
Add fresh thyme leaves and/or parsley and/or tarragon to taste! Enjoy with brown rice or pasta of choice!

Recipe veggies in cheese sauce: Sauté 1 small sweet onion (chopped) in a little olive oil or veggie broth until translucent, about 5 minutes. Add 1 medium russet potato (grated), 4 garlic cloves (minced), 1/2 tsp ground mustard seed powder, 1/2 tsp garlic powder, 1/2 tsp onion powder/granules, 1/4 tsp red chili flakes. Sauté another minute. Add 2/3 cup raw cashews and 1 cup vegetable broth or water. Bring to a simmer and cook until potatoes are done(about 10 minutes), adding more water or broth as needed and stirring regularly. Transfer to blender and add 1 tbsp apple cider vinegar + 1/4 cup nutritional yeast (+ 1/2 tsp pickled horseradish optional). Blend until smooth. Salt to taste. Mix in sautéed or lightly steamed veggies of choice.
