  • D I N N E R ➡️ Chicken and Chorizo Paella 😋

Rice 2 nights in a row 😱 Am I the only person who wouldn't usually have the same carb 2 days in a row? I usually try to space things out so we have pasta, potatoes, rice then back to pasta or potatoes.

The only reason I've done it is because I forgot I was out Tuesday night for work and wasn't cooking 🙈 So Mr cooked pasta for them on the night I'd planned chilli.  At least tonight was filling though, after my pathetic lunch I needed it 😂 (see my stories if you haven't seen it!)   • My morning smoothie recipe for the past month 🌱
• 2 handfuls of spinach
• 1 tablespoon of hemp seeds • 1 teaspoon of ashwagandha powder
• 1 tablespoon of peanut butter
• frozen strawberries, kiwi & banana
• water
Blend it all up for a yummy breakfast smoothie 🤤

  • It’s a little Autumnal 🍂 today in Hampshire, so I’ve made a tasty, sunshiny ☀️ sort of breakfast. This is orange 🍊 and apricot baked oats layered with @lindahls_uk Peach 🍑 and passion fruit Kvarg and a few roasted almond slices 😋🤤. It’s a very cheery, tasty breakfast on such a drizzly day

  • Reposted from @whatiateforbreakfast (@get_regrann) -  RED PESTO OMELETTE STACK. Red pesto mini omelettes stacked with avocado and a pork & herb sausage patty, topped with chilli jam 😍. Not the prettiest of breakfasts but so tasty 👌.
For the pesto omelettes, I whisked 1 egg with a drop of milk and 2 tsp @belazu_co paprika & tomato pesto [gifted], heated a large pan with a little oil spray, added 4 egg rings, poured in the mixture and cooked on each side for 2 mins 👍. If you've never tried adding pesto to omelettes or scrambled eggs, definitely give it a try 🤤.

  • PIZZA BEANS 🍕🥫. Homemade beans in a herby tomato sauce, topped with cheese and an egg in the middle 😍. This one takes a little longer because of the beans, but I prepared a batch in advance to keep in the fridge and reheat when needed, so all I needed to do was heat them up in a pan with the cheese & egg 👍.

Recipe:
BEANS (serves 4):
🥫 Heat a pan with a little oil/frylight, add 1/2 chopped onion and cook until translucent.
🥫 Add 1 400g tin of beans of your choice (I used a mixture of haricot, cannellini and adzuki beans), 250g chopped tomatoes/passata, 1 tsp @jdseasonings Amatriciana seasoning, 1/2 tsp cinnamon and 1/2 tsp sugar/sweetener. Mix well.
🥫 Simmer on the hob for around 15 mins, then either serve or leave to cool & store in an airtight container in the fridge for up to 3 days.

PIZZA BEANS (serves 1).
🍕 Add 1/4 of the beans to a small, non-stick frying pan and heat gently.
🍕 Create a well in the centre and crack in 1 egg.
🍕 Sprinkle over 30g grated cheese (I used a mixture of mozzarella and Red Leicester) and add a pinch of oregano.
🍕 Cook until the egg white has set but yolk still runny, around 3-4 mins. To speed up the cooking time, cover with a lid.
🍕 Serve and enjoy the cheesy, tomato bean goodness 👌.

Recipe (serves 2):
🥓 Peel & cut a medium sized sweet potato into wedges, then soften in the microwave for 2 mins (this just speeds up the cooking time in the oven).
🥓 Cut 2 bacon rashers into thin strips and wrap 1 strip around the centre of each piece of sweet potato.
🥓 Pop under the grill until the bacon is crispy & golden.
🥓 Meanwhile, bring a saucepan of water to the boil, add your eggs and cook for exactly 6 minutes. This timing is for large eggs straight from the fridge so if you're using smaller or room temperature eggs then reduce the cooking time by 1 minute.
🥓 Serve and enjoy 😋.

  • Who's tried my recipe for dippy eggs with melt-in-the-middle cheesy broccoli & potato dippers? If you've enjoyed my potato cake version of these, definitely give the dippers a try next 😍.

Recipe:
🧀 Pierce a medium potato with a fork, microwave for 6 minutes then leave to cool slightly before scooping out the flesh. For the best results, use Maris Piper or King Edward potatoes as they are fluffier & bind together better.
🧀 Mash the potato with 40g cooked broccoli, 1/2 tbsp plain flour and any seasonings of your choice.
🧀 Separate the mixture into 10 pieces then shape into cylinders. Flatten slightly with your hand (tip: doing this on a floured board stops them sticking).
🧀 Grate 30g cheese of your choice, then evenly distribute in the centre of 5 of the cylinders. Top each with another cylinder, press to seal around the edges and re-shape with your hands if required.
🧀 Heat a pan with a little oil/frylight and add the dippers. Cook on each side for 2-3 mins then serve.
