  • Long day, Marcella’s roasted chicken with lemon does the trick. It’s a great recipe because you do almost NOTHING. Pat chicken dry, stuff it, cook, turn once, crank heat and done. Extra lemon and potatoes in the pan.

  • Missing quiet early morning like these. A while back #FoodiePaikias visited the newly opened Flor Patisserie at Capitol, so glad it’s now more accessible, Duxton then a wulu part of Siglap, takeaway kiosk at Takashimaya. Now it’s finally at City Hall! #FlorPatisserie #EatCakeforBreakfast

Personally it is my first time trying a mala lasagna and I am impressed by it, it is definitely a comfort food to have, shiok with a tingling numbing effect while enjoying the cheese filling!

3-4 tablespoons extra virgin olive oil
2 cups of any rice of your choice
4 cups of water or bone broth (any broth makes it more flavorful! 💯)
1 small onion, finely chopped
2 shallots, finely chopped
4 cloves of garlic, finely minced
sea salt to taste🧂
2 cups of halved cherry tomatoes
one can of small organic chickpeas OR black beans
a handful of chopped organic cilantro
1 cup of finely chopped red or green bell peppers
2 cups of roasted corn (or organic corn) I season mine with paprika, chili powder, cumin, a pinch of Tabasco and garlic powder. About 1/4 tsp each!
Instructions🌟🌟🌟🌟🌟
In a large saucepan with a lid, heat the extra virgin olive oil & add the shallots and onions. Stir until softened/translucent then add the garlic. Finally, stir in the rice until well coated/mixed with the oil and onions. Add the broth and stir, once it boils: reduce heat to a simmer and cover the saucepan with a lid. Simmer for ~ 20 mins. Turn off the heat and leave covered for at least another 10 mins so it can fluff up. In a separate bowl: mix in all the vegetables. Before serving, top over the rice and mix in. Other option: add the vegetables to the rice before you add the broth and have them cook with the rice if you prefer everything warm/sauteed.
Tip: I add a tiny bit of pickled chopped Spanish red onions to the fresh salsa rice topper for a little kick. I pickle them with white wine vinegar and sea salt.
I like to use jasmine, brown or black rice for mine- I love the smell and taste!🙃🙌🏼💣 Perfect side to your mains, or even doubles up as a main because it has a ton of plant protein!👊🏻🌱also great inside chicken or steak or veg 🌯 burritos or as the base to your taco rice bowls!

  • I guess salad is okay if it’s on top of pizza and next to burrata cheese.
I topped my new fave cauli pizza crust with olive oil, mozzarella, prosciutto, @mikeshothoney, burrata and arugula. I found it at @heinens - local grocery store in a few diff Cleveland areas and it’s soooo fluffy and tastes like regular pizza crust. 🥰👏

مواد لازم برای ۴نفر:
گوشت چرخ‌کرده  ۴۰۰گرم
پیاز  ۲عدد رنده شده
نمک، فلفل سیاه و زردچوبه  به میزان لازم
آرد نخودچی  یک قاشق غذاخوری
روغن سرخ کردنی  به میزان لازم

پیاز نگینی ریز خرد شده  یک عدد
سیر رنده شده  ۳ تا ۴عدد
گوجه فرنگی رنده شده (بدون پوست و تخمه)  دو عدد بزرگ
رب گوجه فرنگی  یک قاشق سوپ‌خوری
آب جوشیده  دو لیوان
زعفران دم کرده غلیظ  دو قاشق سوپ خوری
بادمجان  ۴ عدد
غوره ۴قاشق سوپ خوری
روغن پخت و پز  به میزان لازم

طرز تهیه:
بادمجان ها را پوست گرفته و کلاهک بادمجان را نگه دارید فقط دم آن را کوتاه کنید، روی بادمجان ها مقداری نمک بپاشید و نیم ساعت صبر کنید تا تلخی بادمجان بیرون بزند سپس آن ها را شسته و روی حوله کاغذی بگذارید تا آب اضافی آن ها برود. بادمجان ها را در مقداری روغن سرخ کنید و روی حوله کاغذی بگذارید تا روغن اضافی آن برود.
برای درست کردن کوفته قلقلی ها ابتدا باید گوشت مناسب تهیه کنید، من از مخلوط گوشت گوسفند و گوساله به نسبت مساوی و خیلی کم چرب استفاده میکنم. گوشت دو یا سه بار چرخ شده را در کاسه ریخته پیاز رنده شده و آب گرفته، آرد نخودچی، نمک، فلفل سیاه، زردچوبه و مقدار کمی پودر سیر یا یک حبه سیر رنده شده را اضافه کرده و مخلوط کنید و ورز دهید. از این مخلوط کوفته هایی به اندازه گردو بردارید و در دست مرطوب گرد کنید. در مقدار کمی روغن کوفته ها را سرخ کنید فقط در حدی که کمی رنگ بگیرد، زیاده از حد کوفته ها را سرخ نکنید چون خشک و گلوگیر می شوند.
در تابه بزرگی دو سه قاشق روغن پخت و پز بریزید، پیاز خرد شده را اضافه کرده و تفت دهید، کمی زردچوبه اضافه کنید، پیاز که سبک و کمی طلایی شد سیر رنده شده را اضافه کرده و تفت دهید عطر سیر که بلند شد پوره گوجه و رب گوجه را هم اضافه کرده و تفت دهید تا رب رنگ باز کند، آب جوشیده را اضافه کرده و صبر کنید خورش به جوش آید، نمک و فلفل را هم اضافه کنید.
کوفته ها را در خورش بچینید، بادمجان های سرخ شده را از وسط یک شکافی طولی بدهید تا جایی برای گذاشتن غوره ها باز شود، بادمجان ها را هم در کنار کوفته ها بچینید، حرارت زیر تابه را کم کنید تا سس خورش غلیظ شده و بادمجان و قلقلی ها مغزپخت شوند. نیم ساعت بعد که خورش جا افتاد داخل شکاف بادمجان ها را با غوره پر کنید زعفران دم کرده و در صورت دلخواه کمی دارچین اضافه کنید.... ادامه در کامنت👇👇👇
