  • Trust me on this you guys. This side dish is sweet and savory. It’s nutrient and fiber rich and it’s just so good. 🤤 
Sweet and Savory Butternut Squash Side 
Ingredients: * 200g roasted butternut squash, cubed * 2 slices bacon * 2 cups spinach * 1 tbsp @vitafiberimo syrup * Pinch of cinnamon * Pinch of cayenne * Pink Himalayan sea salt to taste 
Directions: 
1. Cut the bacon into smaller pieces and cook bacon in a skillet over medium heat.
2. When bacon is about halfway cooked, add squash and spinach and sauté. 
3. Drizzle the @vitafiberimo syrup and add the salt and seasonings. Stir the mixture and continue to heat until squash is slightly seared and bacon is fully cooked.
4. Serve with your favorite entree for a delicious fall inspired meal! Makes about 2 servings.

  • Pumpkin Spice Protein Mini Donuts with Glaze
32 calories; 4g protein, 3g carbs and<1g fat
Yields: 16 mini donuts

Protein Donuts:
30g oat flour
1 scoop (30g) @beyondyourself_ Vanilla protein powder
92g egg whites
120g pure pumpkin
10g @vitafiberimo 
1 tsp baking powder
2-3 tsp Pumpkin Pie spice

Protein Frosting
25g fat-free cream cheese

<1/4 cup unsweetened cashew milk

Preheat donut pan and spray with non-stick spray.
Warm up Vitafiber in microwave 20 seconds and mix all donut ingredients into bowl.
Spoon batter into donut pan and bake.
While that’s baking, mix 3 ingredient for glaze.
Once cooled, frost donuts and enjoy!

  • I am never NOT in need of a peanut butter #pickmeup 🤓 And despite my greatest resistance, pumpkin season seems to be upon us, so here I am jumping on board! Remade my #vegan #lowsugar Pumpkin Chocolate Chip bread (#linkinbio) to be a Peanut Butter Pumpkin Bread, and I’m thoroughly hooked. Whether you lather it with more peanut butter, smother jam between two slices, or even drizzle some chocolate on top, this is about to be your new favorite sweet snack! Here’s what you need:

Ingredients:
1.5 cup spelt flour 
1/2 cup peanut flour (I love @betterbodyfoods PB Fit)
3T ground flaxseed
2 tsp baking powder
1 tsp baking soda 
1 1/2 tsp cinnamon
3/4 tsp sea salt 
1 can pure pumpkin purée
1/3 cup creamy peanut butter 
1/2 cup @vitafiberimo syrup
1/4-1/2 cup honey or maple syrup (sweeten to taste)
1T vanilla extract 
1 cup+ peanut butter chips, divided (if not #dairyfree, you can sub dark chocolate chips or crushed nuts!) Method:
•Preheat oven to 325F
•Combine all the dry ingredients together in a bowl until evenly mixed.
•Add the wet ingredients and stir just until combined.  Fold in 3/4 cup (or more!) of the peanut butter chips.  Pour the batter into a greased standard sized loaf pan.  Sprinkle remaining chips on top.
• Bake for 45-55 minutes until the top is crisp and a toothpick inserted into the center of the bread comes out clean.  Remove from the oven and allow to cool in the pan at least 30 minutes.  Pop the bread out of the pan, slice, and serve.  Store at room temperature or in the fridge!
Note: I baked my bread in a glass loaf pan.  If using a metal loaf pan, raise heat to 350F and check on it at the 40 minute mark, then every 3-4 minutes thereafter until it reaches doneness of your liking. #plantbased #eeeeeats #inseasonnow #vitafiber #peanutbutter

  • Pumpkin Pie Protein Fudge! 
I took a hundred pictures #sorrynotsorry and I can never decide which is my favorite! But I’m so happy with how this recipe turned out! The texture is a cross between pumpkin pie and traditional fudge, the flavor is pumpkin pie but sweeter and it doesn’t require the stove or oven so you can be basic even if it’s still 90 degrees where you live! 
Ingredients: * 2 tbsp gelatin * 1 cup pure pumpkin purée * 2 tbsp coconut oil * 2 tbsp @vitafiberimo syrup * 1/2 cup brown swerve/sweetener of choice * 1 tsp cinnamon * 1 scoop protein powder ( I used cinnamon @terraorigin ) * pecans for topping *optional: @oooflavors pumpkin pie flavoring 
Directions: 
1. Hydrate the gelatin in about 1/3 cup cold water. 
2. In the meantime, combine the pumpkin, sweetener, cinnamon, coconut oil, and fiber syrup in a medium bowl. 
3. Heat the mixture for about 20 seconds in the microwave. 
4. Add the protein powder until thoroughly combined. 
5. Stir in the gelatin until thoroughly combined and transfer to parchment lined pan. 
6. Top with pecans and place in the fridge to firm. 
7. Enjoy!

DIET CHEESECAKE

recipe⁣

Crust:⁣
1 cup crushed low-fat graham crackers ⁣
1 T cold water⁣
⁣

Filling:⁣ 2 (8oz) containers of Greek cream cheese ⁣
1/4 cup nonfat plain @chobani Greek yogurt ⁣
2/3 cup @vitafiberimo Sugar (feel free to use other sugar substitutes like monk fruit, xylitol or granulated Splenda) ⁣
1/2 cup granulated Splenda⁣
2 eggs ⁣
2 egg whites ⁣
1 T corn starch ⁣
1 tsp vanilla extract ⁣
1 tsp lemon zest (optional)⁣
1 tsp lemon juice⁣
Pinch salt⁣
⁣
Steps for the crust:⁣
Mix crumbs with the cold water (it should form a ball when you press it together but it should still be able to crumble easily).⁣
Line muffin tins with cupcake liners. ⁣
Distribute graham cracker mixture evenly between 12-14 muffin tins and press down so it sticks to the bottom of each tin.⁣
⁣
Steps for the filling:⁣
Mix sugar, lemon juice, lemon zest, eggs, vanilla extract and corn starch together until combined.⁣
Add the rest of the ingredients and mix until smooth. ⁣
Fill muffin tins 3/4 way full. ⁣
⁣
Bake on 325 for 20-30 min until it feels firm to the touch.⁣
Turn off the oven and leave them in for another 10 min.⁣
Take out and let them cool fully before putting them into the fridge. ⁣
⁣

If you like crispy cookies, this one’s for you! Made these cookie extra big, because who’s want’s small cookies when you can make big ones? It’s very easy to make and you only need two ingredients without toppings. Don’t eat to much (I know it’s hard), because one big cookie contains 33g of fiber. - recipe contains: 2 big cookies - 
MACROS per cookie
Calories: 170
Carbs: 3g
Protein: 20,3g
Fats: 1,4g

INGREDIENTS
For the muffins:
50g protein powder (I used vanilla almond)
70g vita fiber (@myproteinnl )
30ml water

Optional: toppings

METHOD
Preheat your oven to 180 degrees. Put the vita fiber in a pan and add the water to it, stir until it becomes a clear syrup. Then add the vita fiber to your protein powder and knead. Make two cookies out of you dough and put on a baking tray. If you like, you can add some toppings. Put in the oven and wait for 9 minutes.

  • Mondays aren’t so *crumby* when Sweet Potato Walnut Crumb Muffins are involved ✸

The chocolate muffins I posted yesterday tend to *steal* the attention because 
A) chocolate 
B) they’re simply BEYOND 
but I promise you, these are next level too 🙌🏼 They already only had 1/4 cup of added sugar in the batter, thanks to the natural sweetness of the potato + @mrm_usa’s superfood Lucuma powder- but this weekend I tested them with replacing that 1/4 cup with powdered @vitafiberimo and it worked perfectly! Sich alleine zu verwöhnen, Me Time und was es alles für Namen dafür gibt...finde ich mittlerweile so wichtig und deswegen wie das hier jetzt genossen. Mit Tee, am Tisch, ohne Fernseher...voll erwachsen und so.

  • Chocolate Cookie Protein Bars ❤
Die waren jetzt einfach der Hammer und sind der ideale Ersatz für die oft so überteuerten und eh nicht leckeren Riegel, die es so zu kaufen gibt. 😁
Mit 31 g Kohlenhydraten, 12 g Fett und 31 g Eiweiß können sie sich echt zeigen lassen. 😍 Zudem haben die drei Stück rund 45 g Ballaststoffe. 😇  Je nachdem, welche Kekse ihr verwendet, ändern sich dementsprechend auch die Makros. 
Diese drei Riegel bestehen aus:
50 g #Vitafiber Pulver 
20 g Wasser 
40 g Schoko Whey 
2 Keksen
Wasser und Vitafiber Pulver einfach vermischen und für ca 40 Sekunden in die Mikro. Falls ihr den Sirup habt, erübrigt sich dieser Schritt natürlich. Danach Whey dazu mischen und die Kekse zerstampfen und ebenso hinzugeben. Anschließend die Riegel einfach in Form bringen und ab in den Kühlschrank damit. 😊❄ Direkt aus dem Kühlschrank sind die einfach am besten. 💕
Da kann kein #questbar mithalten. 😈
Ich hab die letzte Zeit total vergessen, mir selber Riegel zu machen. Wird es jetzt definitiv wieder öfter geben. 🙈🙈
Soviel dazu 💁 
Mein Osterhase hat mir unter anderem eine neue Sporthose, sowie diese Milka Kekse versteckt. 🐇💕 Habe auch ewig gebraucht, bis ich mein Nest gefunden habe. 😅
