  • Chickpea salad with roasted lentil crisps 
We had chole pooris for lunch yesterday  and I had some leftover boiled chickpea. I conjured up this healthy dish in less than 15min. Diced some potatoes and roasted in olive oil with some salt. Green chutney was made in a jiffy by grinding green chilly, cilantro, chaat masala, lemon juice and salt. I had onions, tomatoes at home so used those up.   • Wonderful vegan chocolate brownies, perfect for the tea time in the afternoon 尼徉歹 Ingredients:
- 140 g plain flour
- 20 g of cocoa powder
- 200 g of sugar
- 100 ml vegetable oil
- 1 tbs vanilla extract
- 200 g melted dark chocolate
- 240 ml of vegan milk (almond, coconut or the one you prefer)
- 75 g chocolate chips

1.Preheat oven to 180簞 fan - forced , in a large mixing bowl, add the dry ingredients, flour, cocoa powder and sugar and mix.

2.After this you can mix the oil, vanilla, melted chocolate and the milk when everything is combined add the chocolate chips and mix.

3.Transfer to the oven 25-30 minutes until skewer inserted in the middle comes out clean. 
Wait couple of hours until it cools down, they will turn super fudgy. 中

  • Moooooooooore burrata! Its quarantine, there are no rules when it comes to food (except for hoarding - plz stop buying more than you need and whoever bought up all the yeast in San Diego u suck bruh). This lil diddy was a delightful plate of heirlooms, basil, Sherry balsamic shallots, artichokes and ooobviously a perfect pillow of Buffalo milk burrata and we had it party with grilled slices of slightly sour herby fresh baked bread. Needless to say I am happy and our shelter-in-place diets are going great.

In our house waffles are one of those staple dishes we do for midnight snacks or any time of the day in this lockdown. Perfect if youre feeling a bit low on energy and you just want to treat yourself to some healthy sweetness. Either way we will always turn to our trusty waffle maker, it never lets us down. Whatever we mix in the bowl (usually anything we have in our pantry) and pour it into the warm crispy maker it will turn out utterly delicious. How did i make this bowl
Take a bowl add 4 idlis, you can cut or just whole idlis.
Pour in 4-5 ladles of hot onion sambar
 top with 1 tspn ghee, chopped onions 1 tspn, coriander if available.
Enjoy 
Some can pour a little coconut chutney also if you like.

  • Boiled/Steamed Plantain Banana - Nenthra pazham Vevichathu

3 ripe plantain banana cut in to lengthwise(3-4,pieces each)
Boiling method:- In a sauce pan add banana pieces and 3tbsp water cover and cook in a low flame for 10 minutes or till bananas are soft.(optional- add little salt in the water and boil the banana for a salted version)
Or
cook in a pressure cooker for 1 whistle(add only 1tbsp water)
Or 
steame the banana in a steamer till bananas are soft and cooked .

Adopted @holycowvegan vegan brownie recipe, replaced walnuts with toasted almonds and added copious amounts of @ghirardelli bittersweet chocolate chips. Served it with store bought vanilla ice cream and homemade kumquat marmalade. Best pick-me-up in this moody weather!

  • MakkaCholam Rava Upma with boiled Plantain banana- Maize Semolina Upma- Broken Corn Upma .

1cup roasted Maize Semolina/ Makka cholam rava/broken corn 
21/2cup hot water 
2 chopped onions,1tbsp minced ginger 4 green chillies minced and 1/4 cup grated coconut
Heat oil in a deep pan,add mustard,when it starts spluttering add red whole chilli and fry,add 1tbsp urad dal and fry till golden brown, now add minced ginger fry for a second, add chopped onion, curry leaves,green chillies and salt.Fry till onion is lightly browned.. Add makkacholam/maize semolina and fry for 30 seconds. Add Hot water and mix well.  Cover and cook for 5-10 minutes,stirring occasionally. Add grated coconut and mix well. Serve with boiled Plantain banana or ripe banana or with sugar

What youll need;
 1 head of cauliflower
 sweet & spicy sauce
 chickpea flour
 garlic salt
 pepper
 all season salt
 pink sat
 short grain brown rice
 oil -

Instructions;
 cook 1 cup of rice in 2 cups of water  add oil, salt and pepper in rice  cut cauliflower into medium size pieces
 make 2 batters of chickpea flour adding in garlic salt, pepper & all seasoning
 add water to only 1 batter until the texture is similar to pancake mix
 add about 1/4 of oil in pan and heat to medium/high
 dip pieces of cauliflower in wet batter first, then dry and put in the pan to fry
 once cauliflower is browned, take out of pan and place in a large bowl
 pour sweet and sour sauce in bowl and toss until covered
 place tossed cauliflower in oven to bake for 10 minutes
 top rice off with finishes cauliflower

Quick spicy garlic noodles
2 servings vegan noodles of choice
2 cloves garlic, minced
2 tbsp tamari
1 tbsp rice vinegar
1 tsp sesame oil (optional)
1 tsp hot sauce
1 tbsp water
1 tsp corn starch
Sesame seeds and chilli flakes, to serve
Cook the noodles according to packaging instructions. Meanwhile, stir together the garlic, tamari, rice vinegar, sesame oil if using, hot sauce, water and cornstarch. When the noodles are done, drain and rinse and transfer to a non-stick frying pan together with the sauce. Toss together until the noodles are coated and the sauce is thickened. Serve with sesame seeds and chilli flakes.

Recipe:
Ingredients
3/4 cup refined organic coconut oil (solid, not liquid, if yours is liquid stick in fridge until a bit more firm)
1 cup packed organic brown sugar
1/2 cup organic granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon sea salt
1 tablespoon vanilla extract
1/3 cup water blended with 2 tablespoons ground golden flax-seed until smooth and creamy.
2 1/4 cups organic all purpose flour
1 1/2  2 cups vegan chocolate chips
Optional: flaked sea salt, for cookies that are extra

Preheat oven to 350 degrees. Cream coconut oil, sugars, baking soda, baking powder, vanilla and flax mixture until smooth and fluffy, about 2 minutes. Add flour, combine until well mixed. Add chocolate chips. Stir until incorporated.
Transfer cookie dough to a 12 inch cast iron skillet, I use one made by Lodge. Press the dough with your hands to even and spread it out. Sprinkle with flaked sea salt if desired. Bake for 20-25 minutes depending on your desired level of gooey center. Top with vegan ice cream. Enjoy!

METHOD

迎Sift the flour, baking powder, and salt together in a bowl.

迎Fold in the dry ingredients just until moistened. Pour the batter into the prepared loaf pan. Carefully slice the remaining banana in half lengthwise and place on top of the batter
