  • Kolejny #instawtorek w czasie epidemi, bardzo domowy i bardzo super, czyli jedzonko!
Bardzo lubię gotować, jest dla mnie też ważne żeby jedzenie dobrze wyglądało, bo jak wiadomo najpierw jemy oczami. Na zakupach i w czasie gotowanie sugeruje się prosta zasadą, aby było kolorowo :)
Dla mnie najlepszym posiłkiem w ciągu dnia jest śniadanie, gdy nie muszę nigdzie wcześnie wyjść to jest to cudowna celebracja, i mogę się postarać o coś smacznego i niekoniecznie szybkiego. 
Na zdjęciu warzywny omlet, z herbata z 🍋 i imbirem, oraz pieczywo z masłem.

  • 3-ingredient KETO nut butter cups!🥰 By @panaceas_pantry 
They are, for real, life changing 😱. Well, they are to me anyway... I’m kinda easily pleased, obviously 😂. I use a 85% dark chocolate, and nut butter of voice. I adore pics peanut butter, Byron bay smooth PB, the Mayvers dark roast, homemade roast macadamia butter or freshly ground from the source. What’s your fav nut butter? Always keen to try new brands, and love hearing your recommendations xxx

I have been obsessed with these little cups the last few weeks, my go-to snack/afternoon pick me up. •
Ingredients.
•
70 grams dark chocolate.
 3/4 cup dark roast/runny peanut butter. 
2/3 cup macadamia, chopped.
30 g dark chocolate (extra, to finish)
•
Method.

1. Add chocolate to a heat-proof bowl, and melt over a pot of simmering water.
2. Once melted, remove from heat and add peanut butter and macadamias. Mix well, until silky and even. Pour between 10 mini silicone cups, and set in the freezer.
3. To finish, top with the extra melted chocolate. 
4. Store cups in the fridge, or freezer if you don’t wanna eat them all in one sitting 😉 😆. •
Notes:
1. If you don’t have scales, but a 100g block of dark chocolate and use 3/4 of it for the cups.
2. You can swap the peanut butter for any nut butter, but I personally recommend one that is roasted and on the runnier side: cashew, macadamia or almond butter would work well, as would tahini or sunflower butter! 
3. I personally recommend buying a nut butter that contains only 2 ingredients: nuts and salt.

Made suji halwa with milk and cashews powder and mould it in shape of diamonds that looks like kaju katli🙊. As there cashews powder added so it has similar taste.

  • Japanse duizendknoop, van maart tot april kun je de jonge spruiten plukken. De plant groeit overal dwars door heen en is daardoor niet erg geliefd. Maar in de keuken is ze prima te gebruiken! Ik heb wat geëxperimenteerd, de toppen heb ik geschild en geblancheerd. De smaak is zurig en heerlijk frisgroen. Je proeft de lente. Prima als accent te gebruiken in een gerecht. En ik maakte #pickles. Omdat die altijd lekker zijn😋 #fermenteren

sim amigos, é a torta da larica 😈💁🏻‍♀️💜🏄🏽‍♀️🍬
gente, essa torta ficou maravilhosa, cremosa, tudo combina, nham 💫
- eu tinha um monte de paçoca diet aqui em casa (❌❌ credo, so pq tinha comprado errado, essa diet acho pessima), daí misturei com açúcar, e um pouco de óleo e água até ficar uma farofinha que gruda quando você junta ela na mão. essa foi a massa! deixei ela muito rapidamente no forno e gelei
- tinha também um monte de banana estragando aqui em casa, peguei elas e bati no liquidificador com um pouco de castanha de caju de molho e chocolate meio amargo derretido (o chocolate, nem que seja em pó mesmo,  é bem essencial pra torta não ficar bananuda demais, ele disfarça total o gosto). ficou um creme muito gostoso, depois de gelado ficou parecendo uma mousse
- as bananas que tavam menos maduras eu fatiei, daí fui recheando a torta com camadas de creme, banana fatiada, mais chocolate derretido, e por fim mais uma paçoquinha, daí geladeira nela

  • Hoy os anuncio que me declaró oficialmente AMANTE del tofu. Aquí abajo tenéis una de las razones!
⬇️⬇️⬇️⬇️⬇️⬇️⬇️⬇️ Judías verdes con tofu y salsa chraimeh, basada en la receta original de Ottolengui

4 raciones
 Ingredientes :

450gr judías verdes redondas cocidas en su punto, ni blandas ni duras. 
1cda aove
400gr de tofu (cortado en dados)
15gr cilantro picado
Sal

Ingredientes salsa chraimeh
6 dientes de ajo
2cda pimentón picante
2cdtas comino molido
1m2 cdta canela molida
3cdas aove
3cdas salsa de tomate
2 limas: 1cda de zumo de una y la otra como veis en la foto para servir.

Preparación:

Ponemos aceite en una sartén grande a fuego medio alto. Cuando esté caliente añadimos el tofu, 1/3 cdta de sal y salteamos hasta que se dore durante 5 min. Reservamos.

Para la salsa, mezclamos el ajo y las especias y el aceite, y ponemos la mezcla en la sarten. Sofreímos 1 minuto, añadimos la salsa de tomate, el zumo de la lima y 3/4 de la cdta de sal.
Removemos y añadimos 250ml de agua. Cuando hierva removemos a menudo hasta que se quede más espesa. Incorporamos las judías a la sarten y que cuezan un minuto más hasta que estén calientes.
Retiramos del fuego, incorporamos el tofy y el cilantro y movemos con cuidado.
Servimos con los trozos de lima al gusto!

    Removemos y añadimos 250ml de agua. Cuando hierva removemos a menudo hasta que se quede más espesa. Incorporamos las judías a la sarten y que cuezan un minuto más hasta que estén calientes.
    Retiramos del fuego, incorporamos el tofy y el cilantro y movemos con cuidado.
    Servimos con los trozos de lima al gusto!

Simple jackfruit curry with mushrooms
1 medium onion, chopped
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp cumin
1 tsp garam masala
1.5 cups mushrooms, chopped
1 can jackfruit, drained and rinsed
1/2 can coconut milk
1/2 can tinned tomatoes
1 tbsp vegan curry paste (or curry powder)
Salt and pepper, to taste
Add the onion, garlic, smoked paprika, cumin and garam masala to a non-stick saucepan with a splash of water. Sauté for 2-3 minutes, until softened and fragrant. Then, add the mushrooms and sauté for around 3 minutes more, until they begin to cook down. Meanwhile, pull apart the jackfruit pieces using your hands or a fork. Transfer the jackfruit to the saucepan and add the coconut milk, tomatoes, and curry paste. Simmer over a medium heat for 8-10 minutes, until thick and creamy. Season to taste with salt and black pepper before serving.

INGREDIENTS

1 cauliflower

BATTER

1 cup flour

1 cup unsweetened almond milk (or other plant milk)

1.5 tsp onion powder

1.5 tsp garlic powder

1/4 tsp salt

Generous sprinkling of black pepper

MAPLE SRIRACHA SAUCE

2 tbsp vegan butter

1/3 cup maple syrup

1/4 cup sriracha

1 tbsp rice wine vinegar

2 tbsp lime juice

RANCH

1/2 cup vegan mayo

2 garlic cloves, crushed

1 tsp apple cider vinegar

Juice of half a lime

1/2 tsp onion powder

Salt and pepper to taste

INSTRUCTIONS

Preheat the oven to 180C/350F.

Cut the cauliflower into bite sized florets (it will make around 25) and line two baking sheets with baking paper.

Place the batter ingredients in a bowl and whisk. It should be like a pancake batter consistency, not too runny.

Using a fork, place the cauliflower florets into the batter making sure to fully coat them. Let any excess batter drip off and then place onto the lined baking sheet.

Continue until they are all coated, make sure they aren't touching.

Place into the oven and set the timer for 10 minutes. Using a spatula carefully flip them over and place in for a further 10 minutes.

In a saucepan, melt the butter and then add the remaining sauce ingredients. Stir and bring to the boil for about 45 seconds. It should be nice and sticky. Taste (careful as it will be hot) and if you think it's too spicy, add some extra maple syrup.

Once the timer goes off, use a brush to coat each cauliflower wing with the sticky sauce.

Place back into the oven for 15 minutes.

Mix all the ranch ingredients together in a bowl and serve with the wings. I topped them with some fresh coriander and sesame seeds!

3 cups of fresh cherry or canned tomatoes halved or diced in large chunks 🍅🥫
3 tablespoons of olive oil (divided)
3 cloves of garlic, finely minced
2 tablespoons of raw honey 🍯 
2 tablespoons of balsamic vinegar
sea salt & pepper to taste ~1/4 tsp each 🧂

Instructions 🌟🌟🌟🌟🌟
Preheat your oven to 400F and line a baking sheet with parchment paper. Place the tomatoes in a bowl and drizzle 2 tablespoons of extra virgin olive oil, sea salt and pepper, toss well to coat. Move the tomatoes to the baking sheet & place them in a single layer for even-roasting, do not stack them on top of each other. Bake for ~20-25 mins or until brown and juices are flowing. Bring a sauce pan to medium/high heat and add the remaining 1 tbsp of olive oil & the minced garlic. Stir often b/c garlic burns easily and after 1-2 mins add the tomatoes & use a potato masher or wooden spoon to crush them. Add the honey and balsamic. Stir & taste test. Lower the heat & allow them to simmer for ~12-15 mins & they will thicken nicely. Once cooled- I served the spread on crostinis topped with crumbled creamy goat feta & basil. #vegetarianfood #tomatolove .
I shared these last September & so many of you have made these and shared them back. The 🍅🍅 spread has a long-fridge life (~3-4 days) and reheats nicely. Also delish over feta and spinach omelettes, white or brown rice, over fajitas, burrito bowls, and on top of grilled steak, salmon or chicken.

Dressing

3-4 tablespoons extra virgin olive oil
juice of 1/2 a lemon
3 tablespoons red wine vinegar
2 cloves of garlic, finely minced
1 1/2 teaspoons dried  oregano
handful of fresh, rough chopped dill
1/4 teaspoon of sea salt
1/4 tsp of black pepper

Salad Base

2 cans of organic, low-sodium chickpeas
1 small cucumber, sliced! 
1/2 cup red onions pickled in white vinegar & sea salt! You could add raw sugar to the brine.
2 avocados, cubed into chunks
Instructions 🌟🌟🌟🌟🌟
Pour the dressing over the salad base ingredients right before serving. Don’t do it too far in advance; to keep it as fresh as possible. Because this salad doesn’t have any leafy greens i.e. spinach, kale or lettuce; wilting won’t occur. *Avocados may blacken, so I cut them up right before serving, too! Great with low mercury canned tuna or salmon, too! I’ve also made it with grilled halloumi or crumbled goat feta for that extra salty creaminess.
