With winter FINALLY coming to an end it’s time to pull out one last squash recipe to wrap up the season. This Roasted Butternut Squash Soup is light and refreshing but loaded with flavor. Topped with some crunchy chickpeas and a drizzle of olive oil, this soup is the perfect lunch when paired with a piece of bread or salad!

One of my keys to meal prep is freezing soup. We all have weeks where the days just get the best of us and we struggle to find the motivation to cook a meal at night. Having soup on hand in the freezer is the perfect solution! Pop it in the microwave and you’ve got dinner ready in under 10 minutes!

Give yourself the foods that support you and help you stay happily balanced.
Some of these foods might be — 
Apple cider vinegar
Greens
Kombucha
Pickled veggies
Sourdough bread
Ginger
Fruit 
Turmeric
Warm water with lemon juice
Oregano oil (taken in a capsule with olive oil)
Aloe Water
A digestive enzyme 
A fiber supplement
A probiotic supplement
(Whole grass fed yogurt if you eat yogurt)
**LESS, sugar, processed foods, coffee and alcohol, and staying AWAY from foods that give you a “red light” aka cause digestive discomfort**
This will always be a practice of balance, it won’t be perfect. Just remember to return to the foods that serve you the most 💚

  • This girl loves a fresh baked good, but sometimes all those cookies and cakes can be so full of sugar that they leave me feeling rather ‘bleh’. But the cravings still hit every now and again so I love finding alternatives that are both healthy and delicious. These chocolate chip blondies are high in protein, low in sugar and gluten free. They’re a great excuse to have cake for breakfast 😏🍪

Ingredients
400g tinned butter beans
50g almond meal
1/3 cup honey
1 Tbsp peanut butter 
1 tsp vanilla essence 
Pinch of salt 
1 tsp baking powder
1 tsp bicarbonate of soda
50g dark chocolate .

Method:
1. Add all the ingredients except the chocolate into a blender and blend. Add a dash of milk if you’re finding it hard to blend everything 
2. Add the chocolate and fold in gently with a spoon
3. Pour into a baking tray and bake at 180C for 25 minutes
4. Leave in the tin to cool (if you have that much self discipline 🤭)

  • 🌶 Mexican Stuffed Bell Pepper
⏲ 10 mins Prep Time | Serves 2-3
These stuffed peppers were one of my first posts on here! 😋 Revamped the recipe to use brown rice instead of quinoa & it was absolutely delicious 😍

▫️3 Bell Peppers, halves, any color
▫️1 cup Brow Rice
▫️1/2 cup Fresh Salsa (@heb)
▫️15 oz can Black Beans
▫️1 cup Sweet Corn
▫️Spices - Smoked Paprika, Garlic Powder, Chili Powder, Salt & Pepper
▫️Shredded Mexican Cheese (@kraft.naturalcheese)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 400°.
Prep your bell peppers. Coat with avocado oil & bake for 20 mins.
Meanwhile, cook your rice according to the package instructions. In a mixing bowl, add in your remaining ingredients - salsa, black beans, corn & spices.
Once your rice is cooked, add to your bowl & mix evenly. Then stuff your cooked peppers with the mixture (save any remaining mixture for future recipes). Top with shredded Mexican cheese & bake for another ~15 mins.
Serve with fresh cilantro & sliced avocado 🥑

  • HOMEMADE: Daal and Roast Okra, a dish inspired by my time in Nepal but also the lentil dish I had at Kokeb, London recently! 🇳🇵🇮🇳🇵🇰 🇪🇹 I like to keep my daal a little more simple but I did heavily flavour this one with garlic. As with any other fibrous green veg, I love to roast my okra on high heat in a skillet with good olive oil and flake salt 👌. A little off the cuff but after plating I floated a layer of EVOO over the daal for added richness, texture gradient and a cool sheen! Very pleased with this. Makes for a terrific starter 😎
