  • Laksa. Not a fan of noodle soups so I tried the stir-fried version. I know laksa is an iconic Malaysian spicy noodle soup but it is also popular here in SG. 
This one's vegetarian, and of course suuuuper spicy, and suuuuper yummy I ordered for another plate, ooops! 🙊 buuurp!

  • Selassie “the king of kings” knew the score. You probably don’t know who he is or what he did because the same white washed education that taught you to vote erased anyone who asked questions or tried to rise up against colonial powers who raped the people and gave birth to predatory capitalism and the world as we in North America know it. Fuck this system that is only for the few and hurts so many. Stop the madness and start thinking 🙏

  • Made a super yummy veggie soup the other night! Once all the veggies were soften, I squeezed a whole lime in. The lime juice really brightened up the soup!

  • Greetings beautiful friends 🙋🏻‍♀️ So excited to wake up to 100k of you this morning 😱 Sooo I thought I would take this time to introduce myself with 5 random facts about me and hopefully start a dialogue to get to know a few of you more 👫👬👨‍👩‍👧👨‍👩‍👧‍👦⠀

1️⃣ I worked as a model for 13 years; it was the only job I ever knew until one day I decided that I didn’t like how rather than developing my inner-qualities, it was hindering them. So, I decided to give it up full-time, delete my Instagram account and cut ties with my agencies. I wanted to trail down a different path, developing myself as a person and helping others to find contentment in their lives by volunteering in the Philippines. Three years later and I’m still here, it was the best decision I ever made! I go back home to Australia to visit friends, family and work if I need extra funds to support my volunteering – and I’ve never been happier 🤸🏼‍♂️⠀

2️⃣ I’m a true introvert and have always struggled keeping that in balance in a world with so much noise and distraction. I think part of a woman’s twenties is discovering who she truly is and coming into her own; being comfortable in her own skin. Importantly, this involves working on what she can offer others as a means to bring more joy to those she comes into contact with. In a society that’s all about me me and more me many might not agree with this sentiment, but I truly believe that it’s only when we can bring joy to others that we can open ourselves to receiving it 💛⠀

3️⃣ I love animals more than words can describe. I run a sanctuary for neglected and abused animals here in the Philippines and look forward to expanding and saving more precious souls. I started this page because of my love for animals and deep desire to inspire others to leave them off their plate, one delicious and abundant vegan recipe at a time. I love supporting all chefs and recipe developers who have this same desire 🤗🐮🐷🐰🐶🐱🐣⠀

4️⃣ I’ve loved cooking since I was five years old. I would be in the kitchen after school making "Emily’s Secret Recipes" - and of course they were hit and miss, but regardless of that I would force feed them to any guests

  • 🎃😍 VEGAN RICOTTA STUFFED SHELLS w/ creamy pumpkin sauce! 📷 by @alexafuelednaturally 🚨🚨Recipe: Serves 5-6 people
Ingredients:
25 uncooked pasta shells (or gf shells)
1 (14 ounce) package of firm tofu
1 cup raw almonds
1/2 tsp salt
4 tbsp nutritional yeast
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/4 tsp pepper
3 cups chopped spinach
1/2 cup unsweetened almond milk

CREAMY PUMPKIN SAUCE
1 small sugar pie pumpkin or butternut squash
1/4 cup raw cashews
1 cup unsweetened almond milk
1/2 cup watered
1 tsp salt
1/2 tsp pepper
1/4 cup nutritional yeast
1 1/2 tbsp tomato paste
1 tsp garlic powder

Method:
1.Preheat oven to 400 degrees F.
2. Cook the pasta according to the package directions, drain and set aside.
3.Cut the pumpkin in half, de-seed and carefully cut skin off. Cut into chunks, place the pumpkin on a baking sheet lined with parchment paper and bake for 25 minutes.
RICOTTA:
1. Mean while bring a small pot of water to a boil. Place your raw almonds into the boiling water. Let boil for 2 minutes.
2. Drain the almonds immediately in a colander or strainer and rinse them with cold water to cool them. Blot the almonds dry with a paper towel.
3. Use your fingers to gently squeeze the almonds and loosen the skin from them. Set skinless almonds in a bowl and set aside.
4. Remove tofu from package and wrap in a clean kitchen towel or paper towel and squeeze for 20 seconds to allow for excess water to strain.
5. In a food processor or high speed blender combine tofu, blanched almonds, nutritional yeast, unsweetened almond milk, garlic powder, onion powder, salt & pepper. Blend for 1-2 minutes or until there is no chunks. Mixture will look lumpy and that is okay! Add more almond milk if needed. 6. In a small pan cook chopped spinach with 1 tbsp on water for 1 minute or until spinach is wilted down.
7.Once ricotta mixture is made and spinach is ready, combine the two in a medium size bowl and mix well. Taste mixture and add any extra salt or seasonings if needed
