Because yes having sweet potato and hummus is always a shout regardless of what cuisine 😂😍
Just stir fried courgette, mushroom, spinach and carrot in lemon juice, soy sauce, garlic and ginger and then added in a can of cannellini beans and topped with sesame seeds 🥕💪🏼
So quick and only takes like 15 mins so great for you busy students 👍🏼

I’ve been feeling a lot better today, did an essay plan this morning then went for a loooong 21.4k run midday, then I did my washing, my grocery shopping and then went to costa with my friends to do some work and I finished writing my essay. My mum was also not doing anything all day and wanted to come check I was okay after my breakdown the other day so she and my mums partner drove up and came to costa and sat with us for a bit whilst we were working (they only live an hour away and they love driving so they didn’t mind coming up to see me!🥰). It was lovely to see her again and give her a big hug! I’ve seen so much family the past few days as my dad also came yesterday with my baby doggy Luna which always makes me feel so much better 🐶

  • VEGAN MAYO 🤩🤪 Went past a @tescofood today and noticed both @hellmannsuk vegan mayo and @nandosuk new vegan perinaiae were £1.50, so had to pick them up to try! 😋 Then saw tesco's plant chef mayo for £1.25 and thought might aswell get that too 🤷♀️ Have you tried any of these vegan mayos? I LOVE mayonnaise and need to find a good one!! Anyone know any good garlic ones?? 🥰💛

In sure it’ll that taste just great though! We have pasta, spinach, broccoli, tomatoes, chickpeas, carrots, ginger and topped with some roasted onions and pumpkin seeds

  • after our trip to scotland i just fancied a light meal, but felt like i had nothing in the house.  found these microwave rice bags but OH NO we don’t have a microwave!!! what will we do 😱 i steamed the rice instead and cooked some quorn in soy sauce and garlic, then mixed em together, added more soy sauce and then enjoyed 😋 really nice and cheap meal, think the rice bags were from morrison’s? would be v tasty without the quorn too 🍛 #vegan

  • Aldi’s new Stone-baked Spicy Cauliflower Pizza👀 I’ve been shopping in Aldi for a while now as it is ridiculously affordable as a student and their new range of plant based foods is incredible! • This was one of three new pizza options, the others being bbq jackfruit and “bacon” and mushroom. I thought I’d try the cauliflower first as it’s different to other brands I’ve tried before and in terms of flavour it definitely wasn’t a let down. • The spice was the perfect level and the texture of the cheese much better than I usually expect from vegan pizzas. • The toppings were on the sparser side, with some parts being all base, and there was a underwhelming amount of cheese which made it a bit dry without any sauce added. • Overall, I really enjoyed the taste and will 100% be picking up the others to try next time as it’s hard to refuse at £1.75, but it isn’t the most sensational frozen pizza I’ve tried. #vegan #veganuary #veganpizza #aldi #plantbased #plantmenu #cheapvegan #veganstudent

  • tried the new grow porcine tortellini by coop, it’s nice but i had to add quite a bit of salt! really missed stuffed pasta so good that there’s some vegan ones about now, it was quite spenny however, think about £2.50 ? 7/10 😘

Might have taken a one year hiatus from posting on this account...oops😬 but I’m back and going to try and post as much as I can about all things vegan and (hopefully) lots of training too🏃🏽‍♀️💪🏽✨ 🌱

In 2019 I achieved 2 of my major running goals...1) running a marathon and 2) running an ultramarathon...(and did them only 6 months apart✨). I’ve really started to enjoy running again so can’t wait to share all my training on here in preparation for my next big race: the Manchester Maratón🏃🏽‍♀️🎉 just over 2 months to go...lessss get it💪🏽🌱

These bowls were filled with green peas, brocolli, leek and miso for some flavour kick. Yes, you can say I am on the miso bandwagon 😗 Topped with some @oatly crème, peas, sunflower seeds, garden cress and black pepper.
Not scrolling through your phone and being in nature makes it feel like time stops and I just feel so calm. This is just a little reminder to put your phone down today and be in the present moment. Go into nature, take deep breaths and get some fresh air into your lungs. And eat some delicious plant foods afterwards to nourish your body🙏🏼 Hope you all had a lovely Sunday!

I’m v glad I’ve moved past this stupid construct that a snack had to be under x amount of calories or only be like a snack bar or something - any food can be a snack/meal/whatever u want!

Don’t let society’s constructs make you feel like you’re eating ‘too much’ or eating something that ‘shouldn’t’ be a snack - if it’s edible, vegan (my preference but u eat whatever u want) nd tastes good then it can be eaten whenever!✌🏻

🌱choc protein oats recipe🌱
- 1/2 cup quick oats
- 1 cup water
- 1 scoop @awesomesupps salted chocolate protein
—> microwave the oats+water for about 2-3 mins and stir halfway, then add the protein and a lil more water if needed and voila
—> I topped mine with fruits, dates, cacao nibs, maple syrup and some strawberry almond mylk yogurt from @nushfoods aka the tastiest yogurt I’ve ever had 🤩

  • This is easily one of my favourite dinners, that my boyfriend originally gave me the recipe for from a @gustohq recipe! It’s an adaptation of pasta alla genovese! 🌱 so it’s pasta, potatoes & homemade pesto sauce and I have mine with pine nuts and rocket on top! 🥦🥬

looks weird but @chloedadge can confirm it was yummy - fried butternut in oil and garlic w basil & chilli, and then added frozen soy beans and spinach and a tiny bit of pasta water when i added the pasta to the pan! then absolutely covered it in salt & pepper and it was amazing!! 💚

#veganuary tip: i buy frozen endamame beans from asda for £2.25 and theyre a really really easy way to add some of that all important #protein to meals without any of the effort. i used to hate them but now i cant get enough of em. 10/10 recommend for lazy people like me 💃

I was very kindly sent lots of different types tempeh to try by @betternature_ and thought I’d experiment a little with lunch 🙆🏻‍♀️

For this teriyaki tempeh bowl, I cooked up some mushrooms, onions and some smoked lupin tempeh with -
• 1 tbsp soy sauce -
• 1 tbsp bbq sauce -
• ginger
• 1tsp sesame oil
• garlic -
• a little bit of agave 
And served it with some couscous, radish + green beans. -

If you haven’t had tempeh before, I’d highly recommend trying it!! This was my first time cooking with smoked tempeh and because it’s already got a lot of flavour on its own, it was super simple to season + make a delicious meal from 😱

Homemade granola is 10000 times better than shop bought ones you can’t argue with me 😂 This was a little experiment using @grecious_ltd chocolate tahini, cinnamon, agave, hazelnuts, seeds and a few other ingredients and it turned out so yum 🙈

Think Nutella but In granola form!! •
The secret ingredient to this recipe is the chocolate tahini from @grecious_ltd which has the most delicious cocoa taste with a hint of tahini 😻 but I’m sure you’ll get similar results with any vegan chocolate spread!!

Especially for those of you recently gone vegan or are taking part in. Veganuary this year, it’s so simple to create meals just as you would do just by making a few swaps!

🌱 “egg” can be replaced with crumbled up tofu and a little soya milk -
🌱 nutritional yeast gives foods a “cheesy” sort of flavour -
🌱 and these Richmond vegan sausages are just like the real thing only completely plant based and cruelty free!! -
🌱 @flora’s range is also vegan so if you have some in your fridge, you can butter your toast too!

  • ✨CINNAMON SUGAR OATS✨

Definitely need to stop eating on my bed which has gorgeously white sheets that are now c o v e r e d in food stains but oh well, oats are worth it💁🏼‍♀️

I’ve spend the majority of today working on my ebook and I’m super excited to be able to share it with you all! I was hoping to be able to share it in January but uni/exams made it impossible to properly start until now, so hopefully sometime in February I can release it (also I’m literally cringing at how ‘instagrammer’ that all sounded so pls don’t hate me I’m just a gal wanting to share some tasty vegan food with u all ✌🏻)

🌱cinnamon sugar oats🌱
- in a pan combine 1 cup jumbo oats, 1 cup oat milk, 1/3 grated courgette (optional), 1 tsp cinnamon, tbsp flaxseed, tbsp brown sugar and a pinch of salt
- cook on medium but don’t stir them too much if you want to keep the chunky texture of the jumbo oats
- when they’re kinda creamy and still chunky looking, pour into a bowl and serve with yum toppings
- I topped with banana, soy yog, homemade chia jam and mixed seeds

    I’ve spend the majority of today working on my ebook and I’m super excited to be able to share it with you all! I was hoping to be able to share it in January but uni/exams made it impossible to properly start until now, so hopefully sometime in February I can release it (also I’m literally cringing at how ‘instagrammer’ that all sounded so pls don’t hate me I’m just a gal wanting to share some tasty vegan food with u all ✌🏻)

    🌱cinnamon sugar oats🌱
    - in a pan combine 1 cup jumbo oats, 1 cup oat milk, 1/3 grated courgette (optional), 1 tsp cinnamon, tbsp flaxseed, tbsp brown sugar and a pinch of salt
    - cook on medium but don’t stir them too much if you want to keep the chunky texture of the jumbo oats
    - when they’re kinda creamy and still chunky looking, pour into a bowl and serve with yum toppings
    - I topped with banana, soy yog, homemade chia jam and mixed seeds
    .

There’s nothing more comforting than a big bowl of pasta with a cheesy, creamy, tahini sauce 😻

I added paprika + chilli powder to this as a little experiment and it worked so well!!

The key to making tahini pasta is definitely having a good quality, runny tahini (not like some supermarket brands that are like clay 🤦🏻‍♀️) The brand I used is @grecious_ltd greek tahini (In the third photo) and I can confirm - it worked so well In this dish!!
