  • Oven baked Spinach Tacos by @elavegan 😍 Tag someone who loves Tacos! Recipe below: 
Ingredients

9 small spinach tortillas (5-inch diameter)
2 cups of cooked rice (360 g)
One 15 oz can kidney beans or black beans (rinsed and drained)
1 small/medium onion
1/2 tbsp oil
2 garlic cloves
1/2 bell pepper
3/4 cup canned mushrooms (100 g) or use fresh
Spice mix: 1/2 tsp onion powder, 1/2 tsp ground cumin, 1/2 tsp paprika, 1/4 tsp smoked paprika, 1/4 tsp ground ginger, sea salt to taste
1 tbsp lemon
1 tbsp Liquid Aminos
4 tbsp plant-based milk
1/3 cup passata
1 batch vegan cheese sauce
Instructions
Cook rice as per the instructions on the package. You will need 2 cups of cooked rice for this recipe.
Prepare spinach tortillas as per this recipe (click). Or use store-bought flour tortillas or corn tortillas of choice.
Meanwhile, heat oil in a pan/skillet over medium heat and add the onion, mushrooms, and bell pepper.
Sauté for about 3-5 minutes, then add garlic for a further minute. Stir occasionally.
Add all spices, balsamic vinegar, soy sauce, plant-based milk, passata, and hot sauce. Stir and let simmer for about 3 minutes.
Add cooked rice and beans, stir and turn off the heat.
Taste and adjust seasoning if needed.
Preheat oven to 410 degrees Fahrenheit (210 degrees Celsius) and line a baking sheet with parchment paper.
Make one batch of the vegan cheese sauce (on feed) or use store-bought vegan cheese.
Add about 2 tbsp of the rice filling on one side of a tortilla and 1 tbsp of the vegan cheese. Fold the other side over the filling and press it slightly down with your fingers. Do the same for the remaining tortillas.

Transfer all tortillas onto the baking sheet. Bake in the oven for about 10-15 minutes or until crispy. Enjoy hot!

  • Spaghetti, one of my favorite dish since around 10 years. 😂🍝 When I was 14 or 15 my mum made for me spaghetti almost every day, I'm not joking. After she stopped, but for me it was just a way to make it how I like.

Since I'm vegan, I don't eat that much 🍝 anymore but it is still in my heart ♥️😅 Chickpeas pasta with broccoli🥦, leek and tomato🍅 sauce. 😍

  • Super green Spaghetti 🍝🥗 makes for super happy KIDS. 
#Quick fix for Tuesday's tiffin. 
Pesto sauce I made is not authentic one rather I used fresh herbs and ingredients available in my refrigerator. It was more like a cross between pesto and chutney.  It was delicious with 💯 approval from kids. Anyways, who cares when something with so much spinach and other greens in it got finished in no time. The best part about #homemadepesto is that it keeps well in fride 4-5 days so you can make the batch well in advance. Cook pasta al dante, transfer in bowl, toss in your pesto.. voila!

Coming back to #pestochutney recipe, I used

1 cup fresh basil
1 cup baby spinach
1/2 cup fresh parsley (optional, may alternate with cilantro)
1/2 cup walnut kernels (6-8)
Garlic pods 3-5
Crushed pepper corns 8-10
1 green chilly (optional)
1/2 cup grated Parmesan cheese (I used britania cubes 🙊)
Extra virgin olive oil, a few tbsp
A pinch of salt

I blanched the greens for 5 seconds in boiling #pasta pot using a wire strainer (you may skip that step). Immediately transfer the greens to blender along with walnuts, garlic, chilly and crushed peppers. Make a coarse paste, add cheese, olive oil, salt and pulse. If too thick, can use a little pasta water to help blend nicely. Leftover #greensauce can be  stored in a glass jar as keeps well for 4-5 days in fridge. Can be used in pizzas, with crackers or as a dip. 
Do try if you like the recipe as fresh herbs are available in abundance during spring. .

Skip cheese for vegan version 🧀

P.S. I've added some steamed corn kernels to add a little more colour to #tiffinbox 😁

  • Spaghetti sauce with dehydrated soy bits 😋

When I was skiing in Austria I bought some dehydrated soy bits. I’ve used them a few times before but never quite know what to do with them... I like the structure, but honestly, they don’t really taste like anything 🙈

However, they are a nice source of protein, which I definitely need up here in the Arctic 🥶 💪🏼 So I made a sauce out of red onion, sjalot, grated carrot, tomato sauce and soy bits. With sun-dried tomatoes and nutritional yeast on top, it was actually really tasty 😋 🍝

Have you tried dehydrated soy bits before? Any tips how to use them? 😅

Zacznę od tego, że daleko mi od promowania stwierdzenia, że znalezienie czasu na gotowanie to kwestia organizacji i wystarczy pozmieniać swój grafik, żeby przygotowywać sobie posiłki...

📍zdrowe odżywianie to NIE dążenie do komponowania idealnych posiłków - zawsze z warzyw i owoców dojrzewających w pełnym słońcu. To nauczenie się wyboru i co ważne umiejetność wykorzystywania produktów gotowych, które są ogólnodostępne w sklepach.

Czasami są to produkty przetworzone - rozumiem przez to również obróbkę termiczną, którą zastosował producent, pakowanie, przechowywanie i tak dalej, jednak jeśli skład nie razi po oczach to nie widzę przeciwwskazań.

Dzisiaj mam dla Was post z przepisem na ekspresowy sos do spaghetti 🍝 - Z GOTOWCÓW!

Robi się dosłownie w 15 minut a smak? Hmm, moim zdaniem wygrywa z tym tradycyjnym, czyli przygotowanym z mięsa. Jest petarda!
➡️ na oliwie (1 łyżka) podsmażyłam cebulkę szalotkę, dodałam pokruszone burgery roślinne od @dobrakaloria - całość chwilę podsmażyłam i następnie dorzuciłam sos pomidorowy ze słoika (patrzcie na składy!). Całość wymieszałam na patelni i podgrzewałam, aż się zredukuje. W międzyczasie ugotowałam makaron strączkowy (z ciecierzycy) - uzupełnienie białka w posiłku. Na koniec połączyłam z sosem. Podałam ze świeżą bazylią, pomidorkami i parmezanem. W wersji wegańskiej możecie użyć płatków drożdżowych - też będzie pysznie!

Jako osoba, która jest w biegu przez sześć dni w tygodniu, doskonale rozumiem wszystkich nie mających czasu, żeby stać nad garnkami.

Dobrze zbilansowany posiłek nawet nie zawsze musi wymagać gotowania. Czasy w których żyjemy to z jednej strony wieczna pogoń, a z drugiej: duży wybór produktów żywnościowych! Korzystajmy z tego i nauczmy się funkcjonować w naszej rzeczywistości.

  • I'm a bit too tired to make myself a more majestic night snack, so I'm calling in a @nocow #veganprotein bar to help me reach my macros. 
After a delicious light lunch (random fridge veg salad with homemade avocado dill @traderjoes hummus lemon dressing) and a heavier dinner (@barilla protein pasta with #fullcirclemarket marinara sauce and @morningstarfarms chick'n strips), I don't feel bad reaching for an easy crutch to get me up above 100g protein for the day😊

With only 1g sugar and 21g protein, this bar is a macro stunner. As an ex lover of Quest protein bars, I was happy to find a bar with similar macros. It's not quite as decadent and smooth as Quest, but it has delicious flavor. I'm pairing it with a glass of almond milk 🥛🤤

* 3 tablespoons diced Onion
* 1/2 teaspoon Cumin powder
* Salt to taste * Oil
* 1/4 cup Crumbled Feta cheese or Feta Vegan Cheese * 1 cup Spaghetti, boiled (or Vegan Spagetti) 
DIECTIONS:
1. Blend spinach into smooth paste.
2. In a pan, heat oil and add garlic, onion, cumin powder and salt. Mix well.
3. Add blended spinach. Mix and stir in 3 tablespoons of the crumbled cheese, Reserve the remaining cheese for topping.
4. Add boiled spaghetti and mix well.
5. Serve with additional crumbled cheese on top.

🌱Recipe (makes about 8 small cakes): (Save the cooking liquid from canned or cooked chickpeas.) Rinse and drain well 1-14oz can artichoke hearts. Roughly chop into lump crab-like pieces. In large bowl, add 1 cup cooked (or canned) chickpeas. Use hands to mash chickpeas until fairly smooth with some larger pieces remaining. Add chopped artichoke to chickpeas. Add to bowl: 1 small minced+deseeded jalapeño, 2 tbsp vegan mayonnaise, 1/2 tsp vegan Worcestershire sauce, 1/2 tsp lemon juice, 1/2 tsp Dijon mustard, 1/4 cup thinly sliced green onion, 1 packed tbsp chopped fresh dill, 1/2 tsp paprika, 1/2 tsp garlic powder, 1/4 tsp ground ginger, 1/4 tsp ground mustard seed, 1/4 tsp black pepper, salt to taste. Whisk 2 tbsp chickpea liquid (can or cooking liquid) until foamy. Add to bowl. Mix well. Add 1/2 cup breadcrumbs (I used gluten-free) and mix. Transfer to freezer for 20 minutes. If the mixture still feels very wet, add more breadcrumbs 1 tbsp at a time, up to 3 tbsp. Form cakes/patties and bake at 400F on lined-sheet until golden brown on both sides, about 15 minutes. (Flip patties after 7 minutes.) If you prefer you can pan-fry in non-stick with a little oil.

Here’s how to make it (serves 2-4)
200g Barilla gluten-free linguine
1 tbsp olive oil
1-2 garlic cloves, finely chopped
1 red chilli, finely chopped
Juice of 1 lemon
125g asparagus
200g frozen broad beans, thawed
5 sun-dried tomatoes, finely chopped
A small bunch of parsley, chopped
salt & pepper to taste

Cook the linguine according to pack instructions.
Heat the olive oil and add in the garlic and chilli, cook on a medium heat for 2-3 minutes, then add in the asparagus and cook for another 5 minutes.
Add the cooked linguine along with the broad beans, sun-dried tomatoes, lemon juice and season to taste with salt and pepper.
Take off the heat and add the chopped parsley.

  • Life is all about exploring pasta - bilities 🍝 . And on that note I tried to make a kind of twist on spaghetti alla Puttanesca.
To make this I boiled some spaghetti 🍝 on top of the pasta I steamed some asparagus and some broccoli 🥦 
In a pan I sauteed some chopped red onion and minced garlic and chili. To make the sauce I added tomato passata and tinned chopped tomatoes with some tomato purée with some basil and pepper flakes. Then I added a small jar of capers and some of their juice. Finally I added the cooked spaghetti into the pot with the sauce and added my steamed veggies and then squeezed one lemon on top 🍋 and some parsley . It was a very zingy fresh dish filled with flavours and carby goodness. Also the capers add a sea like richness that easily elevates this dish.
Steamed veggies also keep more crunch and vitamins than boiled ones so win win.
Tip: you can also steam easily by microwaving veggies in a tupperware with a lid loosely put on top.
I’ve just come back from my trip from North Scotland which was so beautiful but now I’m also glad to be able to get back into cooking 🥘 This Is a perfect summer meal❤️ and as its a phenomenal 19 degrees here In Glasgow rather than the chilly 9 degrees on the Orkney Islands summer meals are what I wanna eat haha 😂 if not now when?

  • This weather has got me Italy 🇮🇹 dreaming 😍 and tbh all I ever want eat is pasta 🍝 but especially in summer in the warm evening you just want to make a quick meal and drink 🍹 a whole glass of icy lemonade 🍋 
To make this I added passata and a tin of chopped tomatoes to a pot and added a whole garlic clove and also some sliced garlic as well as basil flakes and fresh basil and let that simmer with the lid on at a low temp. I just boiled the spaghetti in some salted water til they were al dente stirring them occasionally so that they don’t stick together.  And voilà a super easy yummy satisfying meal which doesnt require hours in a steamy kitchen and followed hopefully with a pitcher of iced lemonade

Gotta make the most of all the Italian imports before Brexit day now the BJ is here😂

I just made this easy peasy “no recipe” veggie pasta for lunch using some #gifted @barillaus goodies, including their veggie spaghetti (which packs a nice bonus serving of vegetables) and their super tasty vegan-friendly sundried tomato pesto! 😍 You can see the full play by play in my stories. I love this kind of “recipe” because you can make it with anything you have in the fridge and it ALWAYS comes out delicious.
