I was really in the mood for something like a healthier vodka sauce - so I blended some cashews, salt, onion/garlic powder, nutritional yeast, splash of lemon juice and water.  Transferred that mixture to a pot with @traderjoes no oil mushroom tomato sauce, some frozen mixed veggies and a splash (well, a few splashes if I’m keeping it real 😛) of @ketelone. Combined with brown rice pasta and a little vegan parm. #easyveganmeals

  • Easy Buckwheat Chili
INGREDIENTS
* 	1 tbsp (15ml)  olive oil
* 	1 onion, diced
* 	2 cloves of garlic, minced
* 	1/2 cup chopped celery (about 1 stick)
* 	1/2 cup chopped carrot (1 carrot)
* 	1/2 cup chopped red bell pepper (1 red pepper)
* 	1 cup (170g) buckwheat groats
* 	2 cups (480ml) water
* 	1 16-ounce can diced tomatoes (or 1 and 1/2 cup (360ml) tomato puree)
* 	2 tsp ground cumin
* 	1 and 1/2 tsp chili powder
* 	1/2 tsp smoked paprika
* 	1 tsp oregano
* 	1/2 tsp salt
* 	1 tbsp (15ml) maple syrup
* 	1 15-ounce (425g) can red beans, drained and rinsed
* 	1 tbsp (3g) nutritional yeast
* 	toppings: sliced avocado, fresh parsley, coconut cream, tortilla chips
INSTRUCTIONS
1. Heat the oil in a large saucepan over medium heat. Once hot, add the onion and garlic. Cook for 3-5 minutes, stirring regularly until onions are soft and start to caramelize.
2. Add the chopped celery, carrot, and red bell pepper. Cook for another 5 minutes.
3. Next, add the buckwheat groats, water, diced tomatoes, cumin, chili powder, smoked paprika, oregano, salt, and maple syrup. Bring to a boil and let simmer for about 20 minutes. Check regularly to make sure there is still enough water. After 20 minutes, taste it, the buckwheat groats should be cooked, soft but not mushy.
4. Finally, stir in the red kidney beans and nutritional yeast. Cook for another 3-5 minutes. Taste and adjust seasonings if needed, adding more chili powder for a spicier chili, or more maple syrup for a sweeter one.
5. Serve hot topped with avocado slices, coconut cream, and a drizzle of lime juice.
6.   • The NYT Cooking section included a recipe for Mexican Meatball Soup so I decided to try a vegan spinoff of it for the week ahead.

Ingredients: one onion, 3 garlic cloves, 4 carrots diced, 4 celery stalks diced, and one potato cubed and sautéed in oil, salt & pepper, cumin, oregano, and a dash of chili powder; 3 tablespoons of tomato paste; 8 cups of broth (here I subbed veggie broth), and one 8 ounce can of tomato sauce all stewed together. I added a cup of rice since I used vegan meatballs instead of the original recipe’s homemade meatballs. I also added cayenne pepper and crushed red pepper for more spice. Toppings include 2 jalapeños sliced, half a red onion, and lots of fresh cilantro.

For this prep I had to buy the vegan meatballs, the jalapeños, onion, and tomato products. All together, it probably cost $7 (those vegan meatballs cost the most for sure). Everything else I used I already had in the kitchen. I’ve got 2 lunches and one dinner for the week ahead and dinner for tonight!

Loving cheese and being vegan could be considered a huge contradiction. But when you can formulate a recipe like THIS, it’s truly the gold at the end of the frickin’ dairy-free rainbow!

I’ve tried for years to make a bowl of SERIOUS Mac ‘n Cheese and lemme just say, I’m so damn glad I wrote it all down as I was working on it.

Y’all, I would go as far as to say that even cheese-eaters would fall in love with this bowl sitting in front of me.

Here’s the how to:

While the @eatbanza Cavatappi pasta is boiling put the following in a sauce pan:

2T plant-based butter
Diced spinach, onion, tomatoes, 
salt, pepper, garlic paste
Sautée until softened and fragrant.

When pasta is done, drain and start cheese mixture in pot pasta was in.

Add the following to the warm pot and cook/melt onmedium heat:

2T plant-based butter
2T @goveggiefoods vegan plain cream cheese
2/3 c @wholefoods 365 vegan cheddar shreds
1/2 c unsweetened plain almond milk
2T nutritional yeast
A sprinkle of curry, salt & pepper
2 T Dijon mustard

When cheese sauce is ready add tomato, spinach onion & stir then add pasta and get yourself a private room. Seriously.

Too each portion w fresh ground pink salt, ground pepper & paprika.

looks weird but @chloedadge can confirm it was yummy - fried butternut in oil and garlic w basil & chilli, and then added frozen soy beans and spinach and a tiny bit of pasta water when i added the pasta to the pan! then absolutely covered it in salt & pepper and it was amazing!! 💚

#veganuary tip: i buy frozen endamame beans from asda for £2.25 and theyre a really really easy way to add some of that all important #protein to meals without any of the effort. i used to hate them but now i cant get enough of em. 10/10 recommend for lazy people like me 💃

  • Tried to do Mac and Cheese all by myself for the first time yesterday. Turns out it's pretty easy. You just pour some oil on a pan, add a couple of table-spoons of flour, fry it a little while constantly stirring, then you start adding plant milk with (and it's the key ingredient) nutritional yeast (see second picture). The yeast gives cheesy taste and colour. Then you just stir it all together for a while on a medium fire and it's done. Literally took me about 20 minutes to prepare dinner.

All her veggie burgers are divine and easy to make. 🍔 Despite the rain and cold in Vancouver, on the menu tonight are Spicy BBQ Jackfruit Sandwiches with grilled Pineapple. 🍍Before that, Banana Chocolate Pecan Muffins are always a good idea! 🧁What’s your favourite plant-based cookbook?

🔥Recipe: Serves 2
160-200g pasta (depending how hungry you are)
1 cup broccoli florets (about half a large head steamed over the boiling pasta in a sieve until slightly soft, rinsed in cold water straight away)
2/3 cup packed fresh basil
1 clove of garlic
1/3 cup fresh frozen garden peas
1tbs nutritional yeast
juice of half a lemon
2tbs of water to blend

Get the pasta on to boil and steam the broccoli over the boiling pasta until slightly soft then rinse in cold water. Place all ingredients into blender and blend, add in the water 1tbs at a time just to get it going. When the pasta is cooked drain and rinse, add the pesto and mix well, return to heat and warm through for a few minutes. Serve and enjoy! 🙏 "Green Goodness 12 Minute Pesto Pasta" theplantifulchef.com
