  • 🇺🇸 I used to think that pancakes are only meant for lazy Sunday mornings until I got interested in clean eating and especially veganism, and realized how fast and easy it is to make a wholesome and delicious stack. This time, I also went a little further and upgraded my regular recipe to a chocolate protein version. I blended 1/2 banana with about 1/2 cup of oats, 1/2 water, 2 heaping tsp of almond butter powder which I got back in the states and which is basically almond meal, and 1 tbsp of cocoa powder. That’s it! Your pancakes are ready to be made!

Para la salsa: mezclamos todos los ingredientes energéticamente hasta emulsionarlos.
. 
Rellenamos los pancake con la salsa de chocolate y la fruta.
A disfrutar!!!

  • Spinach pancakes with lingonberry jam! 🥬🥞These go well with both sweet and savory toppings.

150 g frozen spinach
4 dl plant milk
2 dl flour
1 ts baking powder
1 ts salt
1 tbsp canola oil
Oil for frying

1. Melt the frozen spinach in a microwave.
2. Combine flour, baking powder and salt together.
3. Add the melted spinach, plant milk and oil to the mixture and mix well.
4. Heat a lightly oiled pan over medium high heat. Pour small amounts of the batter onto the pan and fry till the pancakes brown a bit on both sides.

  • I originally saw @namasteandchow raving about this bacon recipe. It is the closest to traditional bacon I’ve had to date. It has the burnt crispy edges, which were always my personal favorite part 🖤 I want to do a crumble version to keep on hand to add as toppers to burgers, pizza, pasta, salads, soups, anything really! So so good. Another vegan kitchen victory 🏆 🥓 🐷

  • Vegan Protein pancakes! This morning I made some delicious vegan pancakes packed with protein! I typically only make these every other week or 2  weeks they take time to make but are so worth it! The ingredients that are necessary are 
1/2 tsp  baking soda 
1 teaspoon baking powder
2 cups oats make Sure you have a high blender power I used the bullet or Nitra X) *also blend oats first before combing other ingredients for a final blend!*
3 bananas or more if you like
3 dates
1/4 cup Plant based protein powder vivo life has nice options or you can buy pea protein 
Half a lemon squeezed (this helps the mix rise)
1 cup of almond milk
(Optional)
Agave sweetener 
Lions mane powder super food (helps with cognition boost highly recommend)

For the mashed potatoes: 🍠
7 yukon gold potatoes (7 cups when chopped up)
1 sweet potato (3 cups when chopped)
Pinch of salt
1 tsp dried rosemary
5 garlic cloves, minced
3 tbsp olive oil
For the mushroom sauce: 🍄
1 1/4 cups chopped onion (half a large onion)
3-4 tbsp avocado oil
4 cups sliced cremini (baby bella) mushrooms
1/4 cup flour (or 4 tbsp)
1/2 cup water (or 6 tbsp)
2 cups regular vegetable broth (if you use a low sodium broth, you’ll need to add salt)
1/8 tsp pepper
For the mashed potatoes: 🍠
Add the potatoes and sweet potato to a large pot filled with cool water and a pinch of salt. Water should be an inch higher than the potatoes.
Bring to a boil and cook for 20 min. When done, set aside a cup of the potato water for the recipe. You can discard the rest or put it in the fridge and drink later when it’s cold!
Add the olive oil and minced garlic to the potatoes. Mash everything up! Add the potato water to the mash in small increments to get your desired consistency. For a really smooth texture, you can use a hand blender for a few seconds to mix the potatoes together, but do not overmix!
For the mushroom sauce: 🍄 
In a saucepan over medium heat, add the onion with 1 tbsp oil. Cook over medium heat for 4 minutes while stirring.
Add mushrooms and 2-3 tbsp oil. Stir consistently while cooking over medium heat for 6 min.
Add pepper and vegetable broth, and stir. Bring to a light boil and immediately reduce to a simmer. Simmer for 7 min.
In a small bowl, whisk the water and flour together to make a thin slurry. Add the slurry to the mushroom mix and stir over medium heat until sauce has thickened. Serve immediately with mashed potatoes. If you’re serving later, keep over a low heat and stir occasionally to prevent a skin from forming.

These pancakes  are super easy to make and only use minimal ingredients that you can find at any store🥳
I kept this recipe as easy as possible yet those are extremely nutritious, too, especially if you opt for the spelt flour. The sour "buttermilk"and the sparkling water makes the pancakes super fluffy. You won't miss on these!
200g organic spelt flour
40g cornstarch
6g baking powder
300ml Soy milk
40ml apple vinegar
5 tbsp rice syrup
2 tbsp sunflower oil
1 tsp vanilla
3 tbsp sparkling water
a pinch of fine sea salt
👩‍🍳 In a jar combine the milk with the apple vinegar and let curdle. 
In a bowl combine the flour with the cornstarch and baking powder.
Add the milk vinegar mix and the rest of the ingredients and whisk together until well combined. (DO NOT OVERMIX, or you'll use fluffiness!)
Grease a little frying pan and cook pancakes for about 1-2 minutes per side or until nice and golden brown. Add anything you fancy for topping.

🥞 𝔼𝕚𝕟𝕗𝕒𝕔𝕙𝕖 𝕗𝕝𝕦𝕗𝕗𝕚𝕘𝕖 𝕧𝕖𝕘𝕒𝕟𝕖 𝔻𝕚𝕟𝕜𝕖𝕝𝕡𝕗𝕒𝕟𝕟𝕜𝕦𝕔𝕙𝕖𝕟 (𝕠𝕙𝕟𝕖 𝕣𝕒𝕗𝕗𝕚𝕟𝕚𝕖𝕣𝕥𝕖𝕟 ℤ𝕦𝕔𝕜𝕖𝕣)
Gönn dir am Wochenende was Gutes für dich! Wie wärs mit diesen wahnsinnig leckeren vegane Pfannkuchen – ohne Eier – ohne Milch! Schneller gemacht als du denkst und absolut gelingsicher!

Für ca 8 Pfannkuchen, brauchst du
200g Dinkelmehl, hell
40g Maisstärke
6g Backpulver
300ml Sojamilch
40ml Apfelessig
5 EL Reissirup
2 EL Sonnenblumenöl
1 TL Vanillepaste
3 EL Mineralwasser
1 Prise Salz
👩‍🍳 In einem Glas die Milch und den Essig vermengen.
In einer Schüssel, vermengt ihr das Mehl mit der Maisstärke und dem Backpulver.
Die Mich-Essig Mischung plus die restlichen Zutaten beigeben und mit dem Schwingbesen vermengen. (Nicht zu lange mixen, sonst verlieren die PFannkuchen ihre Luftigkeit) Eine kleine Pfanne fetten und die Pfannkuchen pro Seite für je ca 1-2 Minuten goldbraun brutzeln.

    These pancakes are super easy to make and only use minimal ingredients that you can find at any store🥳
    I kept this recipe as easy as possible yet those are extremely nutritious, too, especially if you opt for the spelt flour. The sour "buttermilk"and the sparkling water makes the pancakes super fluffy. You won't miss on these!
    200g organic spelt flour
    40g cornstarch
    6g baking powder
    300ml Soy milk
    40ml apple vinegar
    5 tbsp rice syrup
    2 tbsp sunflower oil
    1 tsp vanilla
    3 tbsp sparkling water
    a pinch of fine sea salt
    👩‍🍳 In a jar combine the milk with the apple vinegar and let curdle.
    In a bowl combine the flour with the cornstarch and baking powder.
    Add the milk vinegar mix and the rest of the ingredients and whisk together until well combined. (DO NOT OVERMIX, or you'll use fluffiness!)
    Grease a little frying pan and cook pancakes for about 1-2 minutes per side or until nice and golden brown. Add anything you fancy for topping.
