Isolation has given me more time to experiment more with baking, something I wouldn’t normally have the time to do much of. 
Although you may need to be careful with these little treats if you are calorie counting at the moment, it’s good for the soul and if your exercising every day like me, I’m sure you can make allowances to taste these !! @ellen6780 inspired me to try this little number ! 
What you will need : 🛒 •180g Flour
•1 tsp of baking powder
•3 tbsp of cocoa powder
•150g dark chocolate (smashed) • Zest 1 orange • 1 Orange juice squeezed
•90g light brown sugar •90g butter •Pinch of salt

🔥 Complete INGREDIENTS LIST:
1-2 teaspoons olive oil
2 cloves garlic, minced
1/3 red onion, diced
1/3 white onion, diced
1 jalapeno, seeded and diced (optional for extra spicy) 
1 red bell pepper, quartered 
80g mushrooms 
1-2 small zucchinis, quartered
100g sweet corn
1/4 teaspoon cumin
Salt and pepper, to taste
3-4 large whole wheat tortillas
1/2 cup vegan cheese (brand optional, just one that melts well) ➖
🔥HOW to:
First, sauté the garlic, onions, mushrooms, zucchini, bell pepper and the corn with a bit of oil at least until the onions become translucent. Next, stir in the spices like cumin, salt, pepper to taste. Remove from the stove and place aside. In a separate or the same pan, use again a bit of oil and place a whole wheat tortilla in it while covering the tortilla with some vegan cheese, cook until the cheese is melted. Now, just put the sauté mixture on top of the cheese tortilla and cover everything with another tortilla (the tortilla should be Gesten up first as well). Repeat the process for as much mixture you have still left with other tortillas. Cut into evenly slices and simply ENJOY this! 😋🙌”

Today I wanted to go over a study that compared plant vs animal protein in terms of inducing muscle protein synthesis. in the study, they show that MPS is actually higher in animal protein, but ONLY for a very rare case.

The participants in this study were fed .78g of protein/kg of bodyweight, which is WAY too low for an athlete looking to build muscle.

Also, they found that when they increased daily protein intake to 1.15g/kg of bodyweight (which is still too low), there was NO difference in muscle gained in those who ate animal protein VS those who ate plant protein only.

Bottom line: As long as you are eating adequate protein daily (.7g/lb of bodyweight), you will build muscle just as fast no matter where your protein source is coming from.

  • My 12 step checklist to keep myself sane every day... 1. Nutrition - all the whole foods, fruits and veggies 
2. Optimal sleep 😴
3. Creativity - new workouts, redecorating, gardening
4. Learning - Plant-Based Diet specialisation incoming!🌱
5. Daily walks in nature🌳
6. Yoga & stretching - to keep my mind and body healthy and flowing 🧘🏻‍♀️
7. Routine - keeping my days as ‘normal’ as possible
8. Fasting - I’m moving less so eating less🥦
9. Self-love - face masks, bubble baths, green tea
10. REALationships - friends and family who bring me joy, unfollowed all accounts that make me feel negative about myself
11. Focus on being grounded, patient & present
12. Practising gratitude - I’m healthy, my friends and family are healthy, I have food and a roof over my head

  • #LONGRUNSUNDAY bei 14 Grad ☀️🥵 viel zu warm angezogen und dennoch der 2ter HM dieser Woche im GA1/GA2 Tempo, ohne es vorher zu planen 🎉 danach ging es noch auf eine #MTB Ausfahrt mit Family, fast die gleiche Strecke, nur etwas mehr Gelände 🚴‍♀️ zugegeben, ich war das Schlusslicht 🤓

Vegan Nutella ✨⠀

Did you know the actual Nutella is mostly comprised of sugar and oil? Hazelnuts only account for 13% 😳⠀
⠀
This homemade alteration is focused mostly on hazelnuts with added sweetener and cocoa powder for that chocolati-ness (if that's even a word) 😜⠀
⠀
Process:⠀
- Roast the hazelnuts for 15 minutes at 180C/360F and then let cool down⠀
- Optional:Using a towel or your hands remove all the skin off the hazelnuts⠀
- Removing the skin simply makes the nutella way more creamier, it's totally up to you⠀
- Using a high speed blender only blend the hazelnuts alone until you have hazelnut butter, while scraping down the sides every minute or so⠀
- Add the rest and blend well⠀
- Keeps in the fridge for 2-3 weeks⠀

  • 🔥 Veggie Mac n Cheeze Chowder

What you need: 8 oz cooked macaroni ( or your favorite small pasta shape) For the Cashew Cream: 1/2 cup cashews, 1 cup veggie broth, 1/4 cup jarred roasted red peppers chopped, 3 tbl nutritional yeast For The Soup:1/4 cup vegan butter, 1 onion finely chopped, 1/4 cup flour, 2 tsp Dijon mustard, 3 cups veggie broth, 2 cups broccoli florets finely chopped, 2 celery stalks chopped, 1 large carrot peeled & finely chopped, 1 1/2 cup non dairy milk (I used soy), 1 tbls white vinegar, salt/pepper to taste

What you do:
1️⃣ In a high speed blender combine cashew cream ingredients & mix on high till smooth. Set aside
2️⃣ In a large pot, melt butter on med heat, add onions and sauté till translucent about 5 minutes 
3️⃣ Add mustard, mix, then slowly whisk in flour, over med heat for about 2 minutes 
4️⃣Add broth & veggies, bring to a boil, then simmer 20-25 min till veggies are tender
5️⃣ Add non dairy milk, cashew cream, & vinegar. Adjust seasonings.
6️⃣ Fill bowl with desired amount of macaroni & add chowder. Enjoy!❤

  • Gestern sprach ich in der Story darüber, dass jede Ernährungsweise kritische Nährstoffe beinhaltet die es zu beachten gibt. Das dies nichts ist, was per se nur auf eine vegane Kost zutrifft. 
Und ich habe darauf hingewiesen, dass es grundsätzlich immer wichtig ist vollwertig zu essen. Das gilt auch für die Mischkost: Grundlage ist auch hier eine pflanzliche Ernährung welche in einigen Punkten durch tierische Produkte ergänzt wird. (Studien belegen aber auch, dass hierbei oft mehr Tierprotein aufgenommen wird als empfohlen, außerdem zu viel Zucker und Fett und zu wenig Gemüse, das ergab u.a. Nationale Verzehrstudie II). Daher: die Ernährung zu optimieren ist Thema bei jeder Ernährungsweise und nichts womit sich nur vegan lebende Personen beschäftigen dürfen und sollten.

Was nämlich noch oft vertreten wird, ist, dass eine vegane Ernährung eine Mangelernährung ist und eine Mischkost dagegen rundum gesund. Und wenn ich zurück blicke erinnere ich mich auch: Hauptsache mischköstlich. Aber was genau täglich gegessen wurde, spielte keine oder kaum eine Rolle. Und so sollte es nicht sein😊. Wir sollten aufhören in Schubladen zu denken💚. .

Natürlich ist für mich aus ethischer und ökologischer Sicht die rein pflanzliche Ernährungsweise der absolute Favorit. Je mehr Menschen sich dafür entscheiden, desto glücklicher stimmt mich das.

Aus Ernährungsberater Sicht weiß ich gleichzeitig, dass wirklich jeder, unabhängig von der Ernährungsform, sich mit gesunder Vollwertkost auseinander setzen sollte. Denn keine Ernährungsweise ist per se gesund- es kommt IMMER auf die Umsetzung an!

Deshalb- achtet gut auf euch, euer Körper ist euer Zuhause und was wir essen hat direkten Einfluss darauf💚 Ich spreche aus Erfahrung wenn ich sage, Theorie ist das eine, praktische Umsetzung aber dann oft die Herausforderung im Alltag😊. .

Daher liegt in meiner Beratung der Fokus genau darauf- dich im Alltag hierbei bestens zu unterstützen! Theoretisches Wissen finden wir heutzutage überall, wichtig ist für dich, es möglichst entspannt umsetzen zu können und Essen weiterhin zu genießen.

At first it wasn’t really messing with mine at all. Go to bed early, wake up early, meditate, affirmations, gratitudes, stretch, workout, school etc... eating patterns remained normal. .

After a couple weeks I started staying up later, sleeping in, watching more tv, spending less time on school, snacking more and eating just to eat.

I feel like this is the case for a lot of people. It’s totally ok as our routines have been thrown for a loop and there has been such a huge energy shift in the world. No need to get down on yourself. .

The last couple days I’ve just been working on getting back into my routine. Earlier bedtime, waking up earlier and spending more time on what’s important to me. Rather than just try to hop right back into my usual routine I decided that at the moment it would be best effective to ease back in over a couple days. .

I’d say in another day or 2 I’ll be back at it 100%! I’m thankful for this mindset and capability to do so. You’re all very capable as well.

So like I said no need to get down on yourself if things have shifted in your routine. Just acknowledge it and take action to get back to where you want to be.

  • Green lentil curry for dinner 💚 Lentils are just everything your body needs: protein, fiber and carbs. Plus there are so many options to used them in the kitchen - this easy peasy plant-based curry is one of them ☺️

Recipe for 2 portions:
✔️150 gram uncooked green lentils
✔️100 gram basmati rice
✔️1 medium small zucchini
✔️2 gloves garlic
✔️1/2 can coconut milk (keep the other half for smoothies or cook your breakfast oats in it 🥥)
✔️1 tablespoon curry powder
✔️1 teaspoon curcuma powder
✔️frozen coriander (to add to the sauce but can also be fresh)
✔️salt according to taste
✔️chili flakes
✔️fresh parsley (optional)
Cook lentils for around 30 minutes. Cook basmati rice for 10 minutes. In the meantime, slice the zucchini and chop the garlic. Fry them together, add coconut milk and spices. Add lentil once cooked and mix well. You can let it on a low heat for some time to absorb the flavours. Serve with basmati rice and fresh coriander/ parsley

👉  As you may have seen in my STORIES yesterday (make sure to watch my stories 😏) I / more like my mom baked 😂 a DELICIOUS CIABATTA BREAD! I thought that this recipe can be even better if we add olives and some Mediterranean herbs! Et voila here it is! SAVE & SHARE today's BREAD recipe! 😍

ALL INGREDIENTS:
4 1/4 cups Ciabatta flour (bread flour) 
2 cups of water
1/4 teaspoon of instant yeast (if the flour you buy already has yeast in it, you can leave it this one out) 
1 1/2 teaspoons sea salt
1/2 teaspoon olive oil 
120g Mixed Olives 
1 tablespoon dried Mediterranean herbs ➖
👉 HOW TO:
In a bowl, combine the yeast and the warm water. Cover with plastic or with a kitchen towel and let it proof for at least 5 minutes. In another bowl combine the salt and the bread flour. (if you buy flour that already has yeast in it then you do not need to add extra yeast!) Mix everything either with your hands or stand mixer together. Add the yeast/water mixture and mix on low until a shaggy dough forms. Cover bowl with plastic or a towel and let the dough rise at a warm place for around 1 hour, time depends on the flour and how the dough rises. Preheat oven to 200 C°. Now, put the dough onto a floured surface. Sprinkle 1/3 of the chopped olives on top and fold the dough once. Repeat two more times until you've used all the Olives and sprinkle some Mediterranean herbs on it as well. Then, form a ball with floured hands. Cover the dough loosely with plastic and let rest for at least 30 minutes (another hour or two recommended), until doubled in size, while the dutch oven preheat. Once the Dutch oven has preheated, transfer the dough ball into the heated Dutch oven. Cover with the lid and bake for 30 minutes. Remove the lid and bake, uncovered, for 15 more minutes or until golden brown. Enjoy this yummy bread recipe! 🙌🌱

    👉  As you may have seen in my STORIES yesterday (make sure to watch my stories 😏) I / more like my mom baked 😂 a DELICIOUS CIABATTA BREAD! I thought that this recipe can be even better if we add olives and some Mediterranean herbs! Et voila here it is! SAVE & SHARE today's BREAD recipe! 😍

    ALL INGREDIENTS:
    4 1/4 cups Ciabatta flour (bread flour)
    2 cups of water
    1/4 teaspoon of instant yeast (if the flour you buy already has yeast in it, you can leave it this one out)
    1 1/2 teaspoons sea salt
    1/2 teaspoon olive oil
    120g Mixed Olives
    1 tablespoon dried Mediterranean herbs ➖
