  • So, me and my friend decided to make a vegan fondue from scratch last night. I have to say it turned out really nice. I will definitely be making it again. Recipe: @edgyveg

Ingredients
* ¼ cup olive oil
* ¼ small yellow onion, chopped
* 3 cloves garlic, minced
* 3 vegetable bouillon cubes * 6 cups water
* 1 large yellow potato
* 1 cup short white rice (arborio rice is best)
* 1 cup raw cashews
* ½  cup white sauerkraut water
* ½ cup nutritional yeast flakes
* 2 tbsp white wine vinegar
* ¼ cup + 2 Tbsp tapioca starch
* 2 Tbsp brown miso
* 2 tsp sea salt
* 1 tsp mustard powder
* ½ cup dry riesling white wine
* 3 tbsp kirsch schnapps

Instructions
* In a large saucepan, heat up olive oil over medium high heat. Add onions and garlic and sweat until translucent, about 3 minutes.
* Add bouillon cubes, water, potato, rice, and cashews and bring to a boil.
* Once boiling, reduce heat to a simmer, and cover.
* Cook until rice and potatoes are soft, 25-30 mins. Stir occasionally.
* Once the rice and potatoes are soft, remove from heat and transfer to a blender. If you have a smaller blender, and it doesn't all fit, do this in batches.
* Blend with the feeding hole open to release steam, until very very smooth. If you do not have a high speed blender, this will take longer. Give the motor a break every minute or so, and blend until smooth.
* Once your potato mixture is smooth, add sauerkraut water, nutritional yeast, vinegar, tapioca starch, miso, salt and mustard powder. Blend again until well incorporated 30-60 seconds.
* Now you can store this in the fridge until you are ready to serve your party guests, or serve right away

Make the fondue:
* Pour the cheese mixture into the top of a double boiler or a fondue pot set, heat.
* Once heated and soft, using a whisk, mix in white wine and kirsh schnapps.
* Heat and whisk the mixture until it’s very hot.
* Serve with warm chunks of French bread, roasted potatoes or veggies, green apples, and gherkins or pickled onions.
* Bon apetit!

  • 🍕🍕Purezza 🍕🍕 I chose @purezza Brighton for my 30th birthday meal with my friends 🥂 I had the parmigiana party, another had pesto manifesto, we also had lots of sides: mac and cheese, garlic bread, dough balls and courgetti spaghetti 😁 I thought everything tasted great and I'm really glad I've finally tried it but I didn't find it to be anything exceptionally special 🤷🏼‍♀️ as it wasn't a Christmas party they said we couldn't have the free glass of prosecco for parties of 6 or more (we did ask in advance) and despite confirming several times they were fine to decorate the table prior to arrival, it wasn't done and my friends had to panic do it 😂 the female who served us was great though 👍

  • @lightningwilks is a former UFC champion and co-producer of record breaking film the @gamechangersmovie, which some have claimed includes ‘cherry picked’ studies and is misleading. Because of this controversy, @joerogan invited him on to his world famous podcast with Chris Kresser who claims to have ‘Debunked’ the film.
The podcast is almost 4 hours long, but James does a convincing job at refuting the claims made against the film, dispelling the myths that animal protein is superior to plant protein, vegans are more likely to be deficient in B-12, and proving that the scientific consensus suggests a whole-food plant-based diet is optimal for all humans including high-level athletes.

This has been my goto this year for Friendsgivings & potlucks!! We usually make it gluten free by using Organic Brown Rice pasta, then we mix a very generous amount of @credofoods Mac Sauce, & top it with @watuseefoods Chickpea crumbs! Fully Plant Based, Gluten free, Oil free, & SUPER delicious!! You don’t even have to say it’s vegan! 🤣

  • Eind oktober organiseerde ik als redactielid van VEGAN Magazine/@NLvegan een vegan blinddate. Geweldig hoe @RestaurantVanPlanten alles had verzorgd voor twee superleuke mensen. De bedoeling? VEGAN Magazine/#veganmagazineNL nodigt ism Vega dates/@vegalifenl iedere keer een match uit voor een date. En in de volgende editie staat dan het artikel. Aanmelden kan via: www.vegadates.nl/blinddate. 
Naast mijn betrokkenheid bij de vegan blind dates, wil ik ook iets toevoegen aan de community. Beschouw het als een experiment voor single vegans, die niet per se opzoek zijn maar wel willen laten zien dat ze er zijn. Als het je iets lijkt, gebruik dan voortaan de tag #dutchsinglevegan.   • Smoothie bowl heaven 😍 (Serves Two) 
Smoothie (Blend all in a high powered blender and pour into breakfast bowl):
350ml of hemp milk 
1/2 Cup of oats 
2 bananas 
1 Avocado 
1 Pear 
2 Kiwis 
2 Handfuls of spinach 
1 Tsp of flaxseed 
1 Tsp of chai seeds 
Top with: 
Raspberries 
Blueberries 
1/2 banana 
Muesli 
Pumpkin seeds 
Cranberries 
Dried chopped dates

  • Delicious vegan TAHINI COOKIES!!! Via @aforagersfeast

Giddiness and calm. Feelings I have when I pull up to Mimi’s house. 😌Grandma’s house to me means fresh baked chocolate chip cookies, home made bread, and a Christmas tree that stays up year round. I enjoy my slow days here. Picking peppers in the garden and arranging flowers. Thumbing through 1950s Betty Crocker cookbooks and discussing dinner. Conversations revolve around food. I surprised Mimi with tahini cookies. A delightful alternative to using butter, I explain. They’re vegan, Mimi! What does that mean, no eggs? That’s right. And they taste as good as your cookies! Well, ok, Mimi’s have extra love and a pinch of nostalgia that warms my heart
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup tahini - 10 oz jar from trader joes works
1/2 cup maple syrup
2 t. Vanilla extract
1 cup flour @bobs
1 bar Lily’s blood orange dark chocolate
1 t. Baking soda
1/2 t salt
Pinch cardamon
1/4 cup water ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Blend the tahini and maple syrup with electric hand mixer. Add the vanilla. Hand stir in the dry ingredients. Thinly shave the chocolate into chunky shards as desired. Add water as necessary so you can form into a ball. Bake 12 minutes at 350 degrees

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬⁣
⁣
𝘍𝘪𝘭𝘭𝘪𝘯𝘨⁣
- 6 medium-large potatoes⁣
- 1 medium sized onion, 𝘥𝘪𝘤𝘦𝘥⁣
- 4 cups shiitake mushrooms, 𝘴𝘭𝘪𝘤𝘦𝘥⁣
- 3 tbs olive oil⁣
- 1 tbs dried oregano⁣
- 1 tsp garlic powder⁣
- 1 tsp turmeric⁣
- 1 tbs white vinegar⁣
- 1/4 cup nutritional yeast⁣

- 3 tbs tomato paste⁣
- 3 1/2 cups crushed tomatoes – save 1 cup to pour in for texture⁣
- 3 tbs olive oil⁣
- Juice of 1 lemon⁣
- 1 tsp red pepper flakes⁣
- 1 cup water⁣
- 1 1/2 tbs brown sugar⁣
- Salt to taste⁣
⁣
𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬⁣
⁣
𝘍𝘪𝘭𝘭𝘪𝘯𝘨⁣
1. Boil your potatoes until fully cooked. Mash when cooked/ready and set aside.⁣
2. Using a knife, removed the core on the bottom of the cabbage by making a cone-like incision. Toss the core when it is removed.⁣
3. Boil the cabbage for about 10 minutes. Make sure you do not over cook the cabbage.⁣
4. In a medium-sized pan, fry the onions with olive oil.⁣
5. Add dried oregano, garlic powder, turmeric, white vinegar, nutritional yeast and shiitake mushroom.⁣
6. Cook for about 5-8 minutes.⁣
7. Add the spiced onions and mushrooms to the mashed potatoes. Mix until well combined.⁣
8. Peel your cabbage and set leaves aside.⁣
9. Place some of your filling in each cabbage leaf. Fold and roll neatly – place in an oven safe baking dish.⁣
10. Sauce time!⁣

1. Pre-heat the oven to 330 F.⁣
2. In a blender, add all sauce ingredients except the 1 cup of crushed tomatoes.⁣
3. Once blended, add your 1 cup of crushed tomatoes.⁣
4. Pour your tomato sauce over your stuffed rolled cabbage.⁣
5. Bake in the over for 30-35 mins.⁣
6. Enjoy 🙂

    - 3 tbs tomato paste⁣
    - 3 1/2 cups crushed tomatoes – save 1 cup to pour in for texture⁣
    - 3 tbs olive oil⁣
    - Juice of 1 lemon⁣
    - 1 tsp red pepper flakes⁣
    - 1 cup water⁣
    - 1 1/2 tbs brown sugar⁣
    - Salt to taste⁣

    𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬⁣

    𝘍𝘪𝘭𝘭𝘪𝘯𝘨⁣
    1. Boil your potatoes until fully cooked. Mash when cooked/ready and set aside.⁣
    2. Using a knife, removed the core on the bottom of the cabbage by making a cone-like incision. Toss the core when it is removed.⁣
    3. Boil the cabbage for about 10 minutes. Make sure you do not over cook the cabbage.⁣
    4. In a medium-sized pan, fry the onions with olive oil.⁣
    5. Add dried oregano, garlic powder, turmeric, white vinegar, nutritional yeast and shiitake mushroom.⁣
    6. Cook for about 5-8 minutes.⁣
    7. Add the spiced onions and mushrooms to the mashed potatoes. Mix until well combined.⁣
    8. Peel your cabbage and set leaves aside.⁣
    9. Place some of your filling in each cabbage leaf. Fold and roll neatly – place in an oven safe baking dish.⁣
    10. Sauce time!⁣

    𝘚𝘢𝘶𝘤𝘦⁣
    1. Pre-heat the oven to 330 F.⁣
    2. In a blender, add all sauce ingredients except the 1 cup of crushed tomatoes.⁣
    3. Once blended, add your 1 cup of crushed tomatoes.⁣
    4. Pour your tomato sauce over your stuffed rolled cabbage.⁣
    5. Bake in the over for 30-35 mins.⁣

  • Black bean and Corn Burgers 🥑😍🍔

Smokey black bean + corn burger: In a food processor, pulse 1-1/2 cups black beans until partly mashed with some whole beans remaining. Boil 1 large corn on stovetop and remove kernels with sharp knife once cooked. (Even better if you can roast the corn over a gas burner.) Combine in a large bowl: mashed beans, corn kernels, 1 finely diced large red onion, 2 large handfuls baby spinach leaves (roughly chopped), 1/2 cup cilantro (chopped), 2 tbsp tahini, 2 tbsp coconut aminos or low-sodium tamari/soy sauce, juice 1 lime, 2 tsp smoked paprika, 1 tsp garlic powder, 2 tsp ground cumin, 1-2 tsp chili powder, salt+pepper to taste. Mix with hands (or spoon) and gradually add oat flour until sticky enough to form patties (no more than 1 cup). Use hands to make roughly 7 burger patties. They shouldn’t be too thick or they won’t cook as well. (Optional: brush surface of the patties with a little olive oil.) Bake on lined baking sheet at 375F about 25 minutes, flipping half way. (Or you can even air fry these at 400F about 15-20 minutes).

Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Add sprinkle red chili flakes. Serve with sweet potato fries and enjoy!

Serves 4

INGREDIENTS

½ cup vegan butter
1 medium yellow onion, chopped
2 cloves garlic, minced
2 ¾ cups vegan “chick’n” broth or veggie broth
½ cup all-purpose flour
2 large carrots, peeled & diced
2 tbs vegan cream cheese
2/3 cup frozen peas
3 celery stalks, chopped
3 tbs fresh parsley, chopped
1 package store-bought vegan biscuits (I used Immaculate brand but Pillsbury’s Southern Homestyle Biscuits are actually accidentally vegan too if you can’t find the Immaculate ones!)
2 cups unbreaded vegan “chick’n”

DIRECTIONS

1.Preheat the oven to 350 degrees F

2.Cook your vegan chick’n according to package directions and set aside. Shred or chop it into bite-sized pieces if necessary.

3.Heat a large oven-proof skillet over medium heat, and melt vegan butter in it. Then add onion, carrot, celery, and a pinch of salt. Saute for 30-45 minutes until the veggies are all nice and tender.

4.While the veggies are cooking, heat up the broth in the microwave.

5.Make a little space in the middle of the pan and add garlic, saute for 30 seconds until fragrant. Stir to combine. Lower the heat to low and add flour, stirring constantly for 2 minutes. Add hot chick’n broth and cream cheese. Stir until the cream cheese is completely dissolved.

6.Add ½ tsp salt, some cracks of fresh pepper, peas, parsley, and chick’n, stir to combine. Lay the biscuits on top, lay a piece of aluminum foil on top (do not cover the dish tightly, this is just so the top of the biscuits don’t burn before they cook all the way through) bake for 15 minutes then remove the foil, bake for another 10-20 minutes until the biscuits are golden brown on top and cooked in the middle. Dip avocado halves in sesame seeds and fill with: diced yellow pepper, cucumber, purple daikon and edamame mixed with sesame oil and tamari. Add some sliced radish and microgreens. Sprinkle with crumbled nori (even better if you can find the wasabi flavored kind!) and even more sesame seeds. Serve with a splash of tamari.
