  • No better way to start the morning than a big stack of American diner style pancakes 🥞

To whip these up you’ll need:
• 1 cup plain flour • 2 tbsp sugar of your choice
• 1 tbsp baking powder
• Pinch of salt • 1 cup plant milk • 1 tsp vanilla extract • 1 tsp apple cider vinegar

1. Mix dry and wet ingredients in separate bowls
2. Pour the dry into the wet, stir and let the batter sit for 5 minutes 
3. Heat up a non-stick pan, put 3 heaped tablespoons of batter, cook until the pancake bubbles then flip!
4. Cook the other side for another 3-4 minutes 
Top it up with your favourite toppings, I had banana, blueberries, raspberries, vanilla yoghurt, plant based ‘honey’ and a sprinkle of cinnamon! 🍌🍯 What are your favourite pancake toppings? .

  • Sweet potato taco bowl featuring @lotusfoods Organic Red Rice. Recipe below. I’ve teamed up with @lotusfoods to bring you this easy meal, loaded with colourful veggies and beans. This recipe would be perfect for meal-prep! Served with vegan ranch dressing, this bowl is currently my go-to weeknight meal.

Red Rice Taco Bowl
Ingredients: 
1 cup Lotus Foods Organic Red Rice 
2 cups sweet potato, peeled and chopped 
1/2 tbsp vegetable oil 
1/2 tbsp taco seasoning or to taste 
salt and pepper to taste

Toppings of your choice,
black beans
corn
lettuce
pico de gallo
jalapeno 
vegan ranch 
cilantro

Instructions:
Cook Lotus Foods Organic Red Rice according to package directions. Set aside.
To make the roasted taco sweet potato, preheat oven to 400F. Line a small baking pan with parchment paper.
In a medium bowl toss sweet potato pieces with vegetable oil and taco seasoning. Spread out on baking pan and bake for 20-25 mins or until tender. Then sprinkle with salt and pepper to taste while sweet potato is still hot and toss to combine.
To make your taco bowl, add cooked @lotusfoods Organic Red Rice and top with black beans, corn, shredded lettuce, pico de gallo, roasted sweet potato, jalapeño, vegan ranch & chopped cilantro.

  • my amazing meal this afternoon. cooking is something I’ve used as a therapeutic escape ever since I learned how to cook. It takes my attention away from anything that causes stress. It might be one of the reasons I’m so passionate about food and natural remedies. creating them, is like a remedy in itself. however cooking doesn’t necessarily bring the calmness, if I’m already stressed or angry, my cooking always ALWAYS end up trash. I have to be aware of what’s causing me stress before I can surrender into the calmness of cooking. then I’ll be fine. what are some ways you are dealing with stress and anxiety these days?

I tried something new w my oatmeal today and it was amaaazing!!
persimmon blueberry oatmeal w coconut milk 2 people:

2 persimmon fruit 
1 tsp vegan butter
splash of agave syrup
1 cup rolled oats
1/2 a cup plant milk
1/2 cup coconut milk
1 tsp cinnamon
1/2 cup frozen blueberries
toppings
toasted coconut
dark chocolate
almond butter
2 burro bananas
chia seeds

cut the persimmon fruit in pieces and save half.
place cut fruit in your pan w butter and agave syrup and sauté
add cinnamon, stir, then add oats and almond milk. stir often for 2-4 min then add coconut milk
cook for another 3 min then gently fold in frozen blueberries.
top w dark chocolate first so it melts, mm then add almond butter and everything including the other half of the persimmon, enjoy!❣️give thanks

  • EATING MORE SNACKS THESE DAYS? (English below ⬇️) Normalt deler jeg ikke opskrifter på mine madbilleder herinde, men jeg er blevet spurgt, om jeg har ideer til snacks – nemme nok til at lave sammen med børnene. Så her kommer en ide:

Rice crispy snacks. Laves på 3 ingredienser: Marshmallows, smør og… rice crispies (masser af opskrifter på nettet). Og her også toppet med chokolade, men det kan springes over.

Kan du få fat i de brune, veganske glutenfri ricepuffs, kan du også gøre denne snack vegansk ved at bruge mandelsmør, ahornsirup og disse vegansk rice puffs.

Tid til at være ærlige: Spiser du flere snack i disse dage? Det gør jeg vist. Men hvis vi alle bliver enige om at gøre det, starter vi jo samme sted, når vi mødes ude i verden igen. Aftale😉? ---------------

Rice Crispy snacks. Made with 3 ingredients: Marshmallows, butter and… Rice Crispies (lots of recipes on the internet). Here they are  topped with chocolate but you don’t have to.

You can even make these vegan if you use almond butter, maple syrup and vegan gluten free brown rice crisp cereal.

Time to be honest: Do you snack more these days? I think I do.

But if we all agree to do so then we will be in the same boat when we return back to the world. Deal😉? .

You need:

4 cups de-seeded watermelon

1 cup sugar

1/2 cup water .
1/4 cup lemon juice .

Directions:

Melt the sugar, lemon juice and water together in a pan. One melted let it chill in the fridge. .

Blend up the melon then stir into the sugar water. .
Freeze it but stir every couple hours so it doesn’t go frosty. .

Superberry parfaits
Makes: 3 parfaits
350g silken tofu 
2 tbsp blueberry indigo powder @suncorefoods 
1 tbsp black goji berry powder @suncorefoods 
3 tbsp coconut cream
2 tbsp lemon juice 
3 tbsp agave syrup 
Place the silken tofu in a food processor and blend until completely smooth. Add the rest of the ingredients and blend until well combined. Pour the mixture into jars or glasses. Place in the refrigerator to set.

Blueberry & thyme chia jam 
200g fresh or frozen blueberries 
2 tablespoons black chia seeds @suncorefoods
2 tbsp pure maple syrup
1/2 lemon zest and juice
2 sprigs fresh thyme
Add blueberries to a small saucepan, stir occasionally and cook until tender, about 5 minutes.
Stir in remaining ingredients, bring to a boil, and then simmer for an additional 15 minutes.
Remove from heat and remove rosemary sprigs. Transfer to jars and allow jam to continue to thicken as it cools.

Roasted Cauliflower Steak Nourish Bowl

Served with Brown rice, Red kidney beans, Cucumber, Avocado, Caramelised onion hummus & lots of spinach! Get the cauliflower recipe:

Roasted Cauliflower Steaks:⁣
- 1 head of cauliflower (about 600g roughly) ⁣
- 1tsp onion granules ⁣
- 1tsp garlic granules ⁣
- 1/2tsp smoked paprika ⁣
- 2tsp nutritional yeast⁣
- olive oil ⁣
- pumpkin seeds/sunflower seeds or both (optional) ⁣
- crushed sea salt & black pepper⁣
- 1 tbsp fresh chopped parsley for garnish. ⁣
⁣
Method:⁣
1. Preheat the oven to 200C/180C fan/400F/gas mark 6. Line a high sided baking tray with nonstick baking parchment. ⁣
⁣
2. Slice the cauliflower lengthways into thick slices using a large knife, then place them onto the baking tray.⁣
⁣
3. Drizzle the cauliflower steaks with a little olive oil until all sides of the cauliflower steaks are saturated. ⁣
⁣
4. Add all the dry seasonings into a small bowl including the salt and pepper, then mix well until fully combined. ⁣
⁣
5. Sprinkle the seasoning all over the cauliflower steaks on all sides until evenly coated.⁣
⁣
6. Cover the baking tray with tin foil and bake in the oven for 6mins, then take off the foil. Sprinkle the cauliflower steaks with seeds, then place back into the oven for a further 10-15 mins. ⁣
⁣
7. Turn them over halfway through cooking time so both sides are crisp. Garnish with the chopped parsley and enjoy!

Stay safe everyone!🌍🌱🌈💚🕊🌻⭐️ Ingredients(12 pieces):
1/2 cup vegan butter
1 bar dark chocolate (usually vegan)
1 1/2 cups raw cane sugar
1/2 cup raw cacao powder 
Pinch of salt
1 1/2 cups all purpose flour
2 flax eggs (2x 3 tbsp water + 1 tbsp ground flax seeds and leave in the fridge for 10 minutes)
Splash of oat milk (optional)
1 tsp vanilla
10 biscoff cookies(chopped)
3 tbsp biscoff cookie spread 
Method:
1.  Preheat oven (180c/350f)
2. Melt vegan butter and chocolate. (I did it over boiling water but feel free to use a microwave)
3. In another bowl mix cacao powder, sugar, flour and salt. 
4. Then add the flax eggs and vanilla and pour in the melted chocolate butter mixture. Maybe add more milk if needed. 
5. When you have a nice batter slowly fold in the cookies. 
6. Line a baking pan with parchment paper and pour in the batter. 
7. Spread the cookie spread on top and swirl around with a fork. Then add more cookies on top. (Can’t ever have enough of those😋)
8. Bake for about 30 minutes. 
9. Let the brownies cool (I know it’s hard) and enjoy✨🌻

  • Easy apple pear galette!! I whipped up this on a whim using just 5-6 ingredients. If you don't have fresh fruit, any canned, jarred or frozen fruit will do! I often bake when I'm bored, stressed, anxious or need a distraction. Baking helps me practice mindfulness as I try to focus on how the texture, taste and smell changes at every step of the way. Plus, if you haven't noticed, I love feeding people!Here you go:

EASY APPLE PEAR GALETTE
300g plain flour plus more for dusting
200g vegan butter or chilled coconut oil
15g organic cane sugar or coconut sugar
15g water, chilled
150g jam of choice, such as raspberry
2 apples or pears or a mix of both, thinly sliced
.
1. Combine the flour, butter, sugar and water in a food processor. Process until combined. Scoop into a container, cover and chill for 20 minutes.
2. Preheat the oven to 180°C (350°F).Line a baking tray and dust it with flour. Roll out the pastry on the baking tray so it’s about ½ cm thick.
3. Spread the jam on the pastry, leaving a 3cm border. Arrange the sliced apples or pears on top of the jam. Fold the edges of the pastry over to form a crust.
4. Bake the galette in the oven for 30 minutes or until it is golden brown.
5. Enjoy with ice cream or yoghurt! Store the leftovers in an airtight container in the fridge for up to 3 days.

  • Baked Sweet Potatoes loaded with tandoori spiced chickpeas @cookingforpeanuts 💛 Recipe⠀
Ingredients⠀
Chickpeas⠀
Drain and rinse 1-1.5oz can chickpeas. Rub chickpeas with generous amount of tandoori masala seasoning, or substitute with other spices/herbs like smoked paprika, ancho chili, chipotle, cayenne, garlic powder, cumin, chili powder, turmeric and make your own combo. Add salt to taste. Roast at 400F until crispy (about 20 minutes). Use fork to remove a little of the center of 3 baked sweet potatoes (sliced open) and load with chickpeas. .⠀
Easy guacamole⠀
Mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Add dollop of guacamole to top of chickpeas and add a drizzle of tahini and red chili flakes. Enjoy! #veganfoodspace

  • Basil alfredo zoodles 😍, perfect if you need a veggie hit or just comfort food 🙇‍♀️. If you don't have zuchinni, the basil alfredo goes splendidly with any type of pasta. Much of Australia is going into 'lockdown' soon and it'll be interesting to see how everything unfolds🤔. I'm gonna treat my self-isolation as a STAYCATION so I can continue to entertain myself 😅. I hope all of the small businesses hang in there (and make sure you check out the govt's stimulus packages if you need financial assistance). Here's the brief recipe or a more detailed one is on my blog:

BASIL ALFREDO ZOODLES
2 serves zoodles or pasta 
1 cup cherry tomatoes, halved
1/2 cup butter beans
1/2 cup raw cashews, soaked overnight 1/2 cup fresh basil leaves, packed
1/4 cup plant-based milk
1 lemon, zest and juice, optional
1/4 cup nutritional yeast
1 clove garlic
1 tsp onion powder, optional
Pinch any good-quality salt
.
1. Combine zoodles/pasta and tomatoes in a large bowl.
2. Add the remaining ingredients, to a high-powered blender and blend until extremely smooth. If the ingredients are not blending, gradually add water until it blends into a thick sauce.
3. Pour sauce over zoodles/pasta and mix thoroughly. Enjoy!

  • Beetroot brownies with choc avo frosting cos I'd never complain about being stuck at home with these! You can even use vinegared canned/jarred beetroot for these - I may've done it once in attempt to minimise my leftovers from making burgers 😅. The recipe with gram measurements is on my blog xo

BEET BROWNIES WITH A CHOC AVO FROSTING
Brownie Dry ingredients
1 1/4 cup plain or all-purpose flour
1 cup coconut sugar, or to taste
1/4 cup cocoa or raw cacao powder
1 tbsp ground chia or flax seeds
1/4 tsp baking powder
1/4 tsp baking soda
.
Brownie Wet ingredients
~1 cup beetroot puree
3/4 cup melted vegan chocolate
1/4 cup light-tasting vegetable oil
3 tbsp plant-based milk
.
Chocolate Avocado frosting
1 medium-size avocado, skin and seed removed
1/4 cup cocoa or raw cacao powder
4 medjool dates, pitted
1-4 tbsp maple syrup, to taste
.
1. Preheat the oven to 180°C (350°F). Line a 20cm (8-inch) square baking pan with baking paper.
2. Add all the dry ingredients to a medium-size bowl and mix until there are no lumps. Add all the wet ingredients to the bowl and mix until combined. Pour the batter into your baking pan and smooth the top.
3. Bake the brownies in the oven for 15-20 minutes (shorter if you like them fudgy, longer if you like them more crispy). The brownies are ready when the surface is dry. They will set more over time. Allow the brownies to cool in the baking pan.
4. To make the frosting: Add all ingredients to a food processor and puree until it is as smooth as possible.
5. When the brownies are cool, spread the surface with the avocado frosting.
6. The brownies can be stored in an airtight container in the fridge for 5 days or in the freezer for up to 1 month.

  • Dreamy pastel smoothie bowls by my friend @anettvelsberg. Anett has the prettiest and most magical IG feed and I am so glad I got to hang out with her in person a few weeks ago. She's even cooler in person!
