INGREDIENTS:
@eatbanza chickpea penne
Cherry tomatoes
Spinach
Onions
Broccoli
@kitehillfoods plant-based ricotta
Olive oil
Minced garlic
S&p

DIRECTIONS:
Steam cherry tomatoes, onion, & spinach in a pan with a splash of water. Once tender, add in olive oil & minced garlic & sauté.
Cook pasta & once done, drain & reserve 1/3- 1/2 cup ish of the pasta water.
Put penne in the pan with the other ingredients, lowering the heat to a simmer.
Add the ricotta & a little bit of the water at a time, until desired consistency. Drizzle with olive oil & add salt & pep.

  • Used the remaining pumpkin to make soup and bread 🧡 🍞 
For the soup I sautéd one purple onion in a bit of coconut oil, then added a teaspoon of turmeric, half of a hokkaido pumpkin cut in pieces and two small potatoes cut in cubes. Boiled it until the potatoes and the pumpkin were soft, added half a can coconut milk and blended all together. Bread is again based on the recipe of @sheloveseating 😍🌱 .

  • Eating raw food has taught me to go with the flow more. Case in point are these little treats. I originally planned to make some icing with cashews but then one ingredient led to another and these activated cookie dough bites were born. Not quite what I planned but that’s the beauty of raw foods, infinite possibilities and the ability to fix almost any mistake and turn it into a happy accident 😜

  • Raw Caramel Chocolate Brownies 
Ingredients⁣
* 400 g dates⁣
* 150 g pumpkin seeds (shelled)*⁣
* 150 g almonds⁣
* ½-¾ tsp fine sea salt⁣
* ½ cup raw cacao⁣
* 4 tbsp / 60 ml espresso (optional)⁣
* 1/8 cup smooth (all natural) almond butter⁣
* 1 tbsp / 15 ml coconut oil, refined is preferred (optional)⁣
* 20 g chopped almonds, to garnish⁣
⁣
Method⁣
Pit the dates. Soak them in a warm water to soften if needed.⁣
Line a tray with baking paper. I used a 20 cm by 15 cm tray.⁣
Process pumpkin seeds and almonds into a coarse meal. Transfer them both into a big mixing bowl.⁣
Put soaked dates (without water) into the food processor with a good pinch of salt and about 2-3 tbsp of coffee (use just enough to get a smooth paste) and process until you get a smooth date paste.⁣
Measure out 150 ml (½ cup + 1/8 cup) of date paste and set aside for the frosting.⁣
Transfer the rest of the date paste into the mixing bowl with ground pumpkin seeds and nuts and combine into a ‘dough’.⁣
Add ½ cup of sifted cacao and work it into the ‘dough’. I found that it is best to use your hands (unless you have a very good food processor), plus it’s also easier to judge if the paste isn’t too dry. If you find it too dry, add another 10 ml of coffee (or water), but do it gradually so that you only add as little moisture as necessary.⁣
Spread the brownie ‘dough’ in the lined tray, pressing it down well and into the corners. Make sure the base layer is even. Pop it into the freezer to set.⁣
Clean your food processor. Put 150 ml of date paste back into the food processor with almond butter and ½ tsp of salt (you can add more to taste). Add 1 tbsp of water to make it more spreadable. You can also add 1 tbsp of coconut oil if you want the top to be a bit less tacky after it has set, but that’s absolutely not necessary. Process until you get a smooth, spreadable salted caramel.⁣
Take the base layer out of the freezer and spread salted caramel on top. Sprinkle with chopped almonds. Put into a freezer for 2 hours before cutting.⁣

  • It's always good to have some homemade pumpkin puree in the house 🧡 We just had the most amazing, melting in your mouth pumpkin pancakes 🥞 If you've never made pumpkin pancakes before you should do so, just the smell in the house is priceless 😍 Made a green smoothie next to it with pineapple, apple, banana, wheatgrass, barley grass, matcha, moringa,spinach, dandelion and nettle 💚🍎🍌🌱🍍 .

  • Apple and Blueberry Porridge 🍏

I don't know about everyone else but Porridge in the morning really sets me off to a great start to my day!

I never normally add fresh fruit (other than bananas) to my porridge, but after this I might start doing it more often 😍. I've also recently been trying to incorporate more fruit and veg into each of meals because after all, Health is Wealth 💫. I hope everyone is staying safe 💚

  • CHAAT - I've been promising to make Chaat for a couple of weeks now but couldn't quite get round to it. I was either out of ingredients or too rushed for time. Certain dishes are quick to make with basic ingredients that are always on hand while others require more prep time.

Tonight's dinner was the promised chaat - vegan! This Chaat is made from boiled potatoes, chickpeas, cucumber, red and yellow bell peppers, radish, red onion, tomatoes,  cilantro,  besan (chickpea flour) sev, tamarind chutney and mint (pudina) chutney. This was made without yogurt (daahi) but you can drizzle some on top if you wish.

The following spices were used: chaat masala, black himalayan salt, ground cumin seeds (jeera) and red chilli powder.

Some of the spices were sprinkled on after the potatoes and chickpeas, and then more after the veggies were added. End result: My son saying "Oh mom, this is really good!!!"

Recipe (serves 4)
Ingredients:
~ 2 -3 cups chopped cabbage, ~ 1 cup chopped green beans, 1/2 cup okra - blanch both veggies
~ 1 small eggplant/aubergine, cut into long rectangles
~ 1 small potato, cubed and boiled
~ 2 small tomatoes, blend until fine
~ 2 tablespoons sambal chili paste ~ 1 tablespoon curry powder, dash of turmeric powder
~ 4 cups of veggie stock
~ 1 cup coconut milk
~ handful of curry leaves
~ oil, salt, maple syrup to taste
~ cooked grain

In a heated pan with 2 teaspoons oil, grill the eggplant until lightly brown, remove and set aside. Then, stir in curry leaves, and cook until fragrant.

Add in tomato paste, sambal (with chili oil), curry powder, and veggie stock, all remaining veggies and potatoes, except okra. Let simmer for 5 minutes or until cabbage is cook but not too soft. I love my veggies crunchy.

Season accordingly, and stir in coconut milk. Finally, add okra right before serving. Serve warm with your favorite grain. You may add tofu or pair with any protein to complete your meal.

    Recipe (serves 4)
    Ingredients:
    ~ 2 -3 cups chopped cabbage, ~ 1 cup chopped green beans, 1/2 cup okra - blanch both veggies
    ~ 1 small eggplant/aubergine, cut into long rectangles
    ~ 1 small potato, cubed and boiled
    ~ 2 small tomatoes, blend until fine
    ~ 2 tablespoons sambal chili paste ~ 1 tablespoon curry powder, dash of turmeric powder
    ~ 4 cups of veggie stock
    ~ 1 cup coconut milk
    ~ handful of curry leaves
    ~ oil, salt, maple syrup to taste
    ~ cooked grain

    In a heated pan with 2 teaspoons oil, grill the eggplant until lightly brown, remove and set aside. Then, stir in curry leaves, and cook until fragrant.

    Add in tomato paste, sambal (with chili oil), curry powder, and veggie stock, all remaining veggies and potatoes, except okra. Let simmer for 5 minutes or until cabbage is cook but not too soft. I love my veggies crunchy.

    Season accordingly, and stir in coconut milk. Finally, add okra right before serving. Serve warm with your favorite grain. You may add tofu or pair with any protein to complete your meal.

  • 🍕 Today was pizza time 🍕 We like our dough super thick, also used a mix of whole wheat flour and spelt flour to make  it healthier 😉 Used my mom's tomato sauce 🍅 from last summer's tomatoes from the garden and added fresh zucchini,  bell pepper, purple onion,  kidney beans and vegan cheese. We enjoyed our pizza with some thick and creamy, freshly made cashew basil pesto 💚  Who wants a piece? 🤤

i’m always looking for new ways to incorporate tempeh into my diet ✨😌 it’s one of my favourite soy products (second only to natto) as it is high in protein, rich in b vitamins and minerals, and a good source of dietary fibre 👀✔️ for dinner tonight I made a tempeh taco bowl with sautéed kale, tomato salsa, black beans, cabbage, corn, and carrot salad, home-made tortilla chips, and avocado 🌮🥑 ⠀⠀⠀⠀⠀⠀⠀
taco seasoned tempeh 
1 block tempeh (225g) 
2 tbsp low sodium soy sauce 
1/2 lime, juiced
2 tsp ground chilli 
2 tsp smoked paprika 
1 tsp ground cumin
⠀⠀⠀⠀⠀⠀⠀
slice tempeh into small squares, combine all other ingredients together and coat tempeh, add to a non-stick fry pan and cook over a medium heat until crispy

  • I don’t know about you, but I have not been able to get a hold of any disinfectant spray or wipes!

So I did some research trying to find a way to make my own using the ingredients I personally had on hand and this is what I came up with.

Do I know for sure that it works...no, I’m not a professional. Here’s what I do know and why I feel safe using this on plastics and metals:
.
Rubbing alcohol in a 70%+ concentration is an effective germicide/disinfectant. Yes, it’s not safe on all surfaces nor should you use it without proper ventilation, but I know the risks and am being careful. I suggest you read up on rubbing alcohol and how to use it before trying this.
.

Hydrogen peroxide kills yeasts, fungi, bacteria, viruses, and mold spores. Again, read up on what it’s safe for before using.
.

Lavender Essential Oil is antiseptic, antiviral, antibacterial, antifungal, and antimicrobial.
.

Orange essential oil is antiseptic, antiviral, and antifungal.
.

Peppermint oil is antiseptic, antiviral, and antibacterial.
.

Of course there are many different essential oils with similar properties such as tea tree oil, geranium oil, lemon oil, eucalyptus oil, rosemary oil, cinnamon oil, clove oil, thyme oil...
.
I chose the oils that I did simply because they were the oils I had on hand.

I’m simply sharing what I did in a pinch because I was at a loss for what to use so maybe this can give you an idea of what you can try with your own research of course.

  • ✨ GYOZA VEGAN FAIT-MAISON ✨

Ingrédients pâte à gyoza:⁣
✨ 420g de farine⁣
✨ 2 pincées de sel⁣
✨ 20 ça d’eau froide⁣

Préparation:⁣
✨ Mélanger les ingrédients et pétrir 10 a 15 min⁣
✨ Laisser la pâte reposer une heure ⁣
✨ Couper des boules de 10g ⁣
✨ Étaler les boules en disques de 10cm de diamètre ⁣
⁣
Ingrédients farce à gyoza:⁣
✨ 1 courgette râpée, salée et égouttée (dans un torchon pour retirer toute l’eau)⁣
✨ 1 grosse carotte râpée (moi je récupère  la chaire de mon extracteur à jus) ⁣
✨ 6-8 échalotes à faire revenir ⁣
⁣
Préparation:⁣
✨ Dans un saladier mélanger les ingrédients, saler, poivrer et ajouter de la sauce soja sucrée ⁣
⁣
Préparation gyoza:⁣
✨ Prendre un disque, y déposer au centre (sur la longueur) de la farce, avec votre doigt passer de l’eau sur le tour du disque, refermer le disque sur lui-même, rabatte les extrémités l’une sur l’autre⁣
✨ Dans une poêle chaude faites revenir les gyoza quelques minutes, verser de l’eau et laisser cuire à la vapeur a couvert ⁣

🍓How to make you own easy berry compote 👇🏻
• 3 cups of frozen or fresh berries in season
• 2 tablespoon of cardamom
• 2 tablespoon of water
Add berries and cardamom in a saucepan with a splash of water. Let it cook at low heat for 20 min. and cool down. Afterwards blend the jam with a mixer until smooth and creamy. - or eat the compote like it is. Store in the fridge.

    🍓How to make you own easy berry compote 👇🏻
    • 3 cups of frozen or fresh berries in season
    • 2 tablespoon of cardamom
    • 2 tablespoon of water
    Add berries and cardamom in a saucepan with a splash of water. Let it cook at low heat for 20 min. and cool down. Afterwards blend the jam with a mixer until smooth and creamy. - or eat the compote like it is. Store in the fridge.

  • GOLDEN TURMERIC LATTE!

INGREDIENTS (2 servings)
1 1/4 cups (300 ml) almond milk, or other plant-based milk of choice
1 cup (240 ml) filtered water
2 tsp ground turmeric
1/2 tsp ground ginger
1/2 tsp coconut oil
2 tsp agave
2 pods cardamom
1 stick cinnamon
3 pepper corns

INSTRUCTIONS
1. In a saucepan add your almond milk and water. Bring to a simmer. Add turmeric, ginger, coconut oil, and agave. Whisk to combine. Add cardamom pods, cinnamon stick and pepper corns. Simmer milk for 10 minutes.
2. Remove cardamom and cinnamon. Pour latte through a mesh sieve/strainer into two cups to catch peppercorns, and ensure latte is smooth in consistency.

When we first arrived in Tulum, we only had pepper and balsamic vinegar in our pantry. We made a huge list of things to buy at the grocery store and now we are all stocked!

Our grocery list included lots of fruits, veggies, and our essentials like maple syrup and soy sauce. Yes, I’m THAT Asian!

I created a FREE vegan grocery list linked in my bio to help you guys eat clean and healthy during these days.

Of course, I know many places are running low on supplies. But the list will give you an overall idea of what to include in your pantry and maybe inspire you to create some new dishes.

Want a sweet treat without gaining the “Quaratine 15”? Give these a try!  Store them in the freezer and pull one out about 20 minutes before eating. 👌

Raw Raspberry Cupcakes (makes 9) 👇🏻
Bottom layer:
3/4 cup almonds
4 medjool dates
1 tsp cacao powder
1 tbsp coconut oil
pinch of salt
Put the almonds in a food processor and blend until broken in rough meal. Add the rest of the ingredients and process until reaching the consistency of wet sand. Divide in 9 even parts and press in the silicone cupcake forms leaving the edges slightly higher. Place in the freezer while preparing the top layer.

Raspberry layer 
1 cup cashews (soaked for 8-12 hours and drained)
200ml full fat coconut milk
1/2 cup frozen raspberries 
juice of half lemon
3 tbsp maple suryp
Place all the ingredients in a food processor and blend until very creamy. Put a teaspoon of peanut butter on each cupcake crust, then pour the raspberry layer on it. Freeze for 4-6 hours or overnight. Take out of the freezer 15-20 minutes before serving.

  • ✨ RISOTTO AU CURRY ✨

Ingrédients:⁣
✨ 1 oignon émincé ⁣
✨ 1 courgette coupées en dés⁣
✨ 120g de champignons émincées ⁣
✨ 150g de brocoli ⁣
✨ 180g de riz risotto (ou riz rond)⁣
⁣
Préparation:⁣
✨ Faire revenir l’oignon émincé dans une poêle chaude quelques minutes, ajouter le riz et faire revenir 2-3 min⁣
✨ Ajouter les champignons et faire revenir quelques minutes puis ajouter les courgettes et laisser revenir quelques minutes. ⁣
✨ Ajouter de l’eau pour recouvrir le tout et laisser mijoter à feu fort et à couvert ⁣
✨ Lorsque l’eau réduit en ajouter au fur et à mesure ⁣
✨ Lorsque la cuisson du riz est proche baisser le feu et ajouter le brocoli (je l’ajoute à la fin pour qu’il soit croquant) et laisser mijoter jusqu’à ce que le riz soit cuit⁣
✨ A la fin de la cuisson ajouter le curry ⁣
✨ C’est prêt! ⁣

 Preparation:⁣ ✨ Sauté the minced onion in a hot pan for a few minutes, add the rice and sauté 2-3 min⁣ ✨ Add the mushrooms and sauté for a few minutes, then add the zucchini and let them fry for a few minutes.⁣ ✨ Add water to cover everything and simmer over high heat and covered⁣ ✨ When the water reduces add more as you go⁣ ✨ When the rice is nearly cooked lower the heat and add the broccoli (I add it at the end so that it is crunchy) and simmer until the rice is cooked⁣ ✨ At the end of cooking add the curry⁣ ✨ It's ready!

    Ingredients:⁣ ✨ 1 onion, minced⁣ ✨ 1 zucchini, diced⁣ ✨ 120g minced mushrooms⁣ ✨ 150g broccoli⁣ ✨ 180g risotto rice (or round rice)⁣

    Preparation:⁣ ✨ Sauté the minced onion in a hot pan for a few minutes, add the rice and sauté 2-3 min⁣ ✨ Add the mushrooms and sauté for a few minutes, then add the zucchini and let them fry for a few minutes.⁣ ✨ Add water to cover everything and simmer over high heat and covered⁣ ✨ When the water reduces add more as you go⁣ ✨ When the rice is nearly cooked lower the heat and add the broccoli (I add it at the end so that it is crunchy) and simmer until the rice is cooked⁣ ✨ At the end of cooking add the curry⁣ ✨ It's ready!

Tangy Satay dressing👇
1/3 C peanut butter -crunchy or smooth, I use crunchy as I prefer the texture 
1 1/2 Tbls rice wine vinegar 
2 Tbls grapeseed oil
1 Tbls Tamari
1 Tbls pure maple syrup
1/2 Lime- squeezed 
1/2 " Fresh Ginger - finely grated 
1 small clove garlic- minced

Place dressing ingredients into a bowl and gently whisk untill combined! If you find it too thick just add a little water! .

🌱Recipe: Cook pasta as per packet directions. Whisk: 2 cups plant milk (I like using oat milk), 1 tsp garlic powder, 1/2 tsp dried thyme, 2 tbsp tapioca starch/flour (or arrowroot). Heat in saucepan while whisking. Once warm, keep whisking and add 4 tbsp nutritional yeast. Continue to cook and whisk until sauce almost reaches desired thickness. Reduce heat to low and whisk in 1 to 2 tsp miso (or to taste) until all dissolved. Add salt and black pepper to taste. Stir in some chopped greens and mix until greens just wilted. Remove from heat. Mix with about 3 to 4 cups cooked pasta and about 3/4 cup cooked white beans, or preferred amount. Top with fresh thyme leaves and red chili flakes...yum!

  • 🌱coconut panacotta with a mango sauce 🌱. The sun is out !! Time for a light and refreshing dessert ❤️. .
If you want to make your dessert making life easy I would definitely add some agar agar powder into your vegan store cupboard. 
I bought mine from my local supermarket and they come in handy packets. . 
Here I used coconut cream to give it a firmer texture. A little bit of maple syrup and some sugar with a tsp of agar agar powder ( vegan 👍) . . 
Add what sauce takes your fancy . I had mango chunks to hand 💕

1 cup gluten-free quick or rolled oats⠀

1/4 cup granulated erythritol (or other granulated sweetener of choice)⠀

Dash salt⠀
.⠀⠀
1 tsp vanilla extract⠀⠀
.⠀⠀
1 cup water⠀
.⠀⠀
Fresh fruit & granola for topping - optional⠀⠀

Method:⠀⠀

1. Combine all dry ingredients in mason jar or bowl, and mix with a fork.⠀⠀

2. Add in water & vanilla, and mix well.⠀
