Change. It's a fickle thing. Most of us try to resist it, but that only causes us stress, anxiety, grief. Change is constant. It's always there, whether we notice it or not. Our body is constantly changing, our minds. The world around us constantly changing, the sky above us, the earth beneath our feet. Bigger things too, like other people, and our relationships with them, our places of work, our policies, our finances... Everything. It is constant. So if we cannot change change, and trying only causes us negativity, why resist it? Learn to go with the ebb and flow of it all. Learn to accept what's coming, and know that you can't always control it. And hey, if you're anything like me, that's not the easiest thing to do! But at least try. Things won't always go according to plan, but they will get you to where you need to go, and that's truly what matters.
This is a big one for me. I'm going through a lot of transitions and changes in my life, and it's not quite going how I envisioned, and it's caused a nervousness that only time can heal. But I'm practicing what I preach, and learning to trust. I accepted these changes for a reason, I followed my gut, now I just need to follow where it leads. And that's my form of self-care today. Well, that, and four of the best cupcakes in town (looking at you, @pippas.pantry ๐Ÿ™Š), and two hours of soul-soothing yoga with my gorgeous, inspirational friend @ellyshakarenbeard ๐Ÿ™

  • Dinner๐Ÿค—โฃ๐Ÿ’š Very simple and very delicious. Steamed veg (corn, broccoli, cauliflower), smashed potato (with nuttelex, salt+pepper) and a homemade sweet potato black bean patty. Ive really been loving eating the corn whole, I feel like its a greater experience and it just looks so cool partly eaten. Made a batch of sweet potato black bean patties about 3 days ago when we had burgers for dinner and froze the remaining. Now I can just pull one out whenever I want something quick to add to a meal, so convenient. Didn't  add any sauce to this meal, because it really didn't need any. Simple, wholesome, tasty dinner for my soul. โคโคโค

250 g Dinkelmehl Typ 630
250 g Buchweizenmehl 
3 gehรคufte TL Weinsteinbackpulver 
2 TL Natron
250 g StreusรผรŸe nach Wunsch
200 ml neutrales Pflanzenรถl
Saft einer Bio-Limette
300 ml Tonic Water (Das von T.Henry ist ๐ŸŒฑ vegan)
Zum Mehl: Alternativ 500 g Dinkelmehl statt je 250 g

Jeweils die feuchten und trockenen Zutaten miteinander vermengen und anschlieรŸend gemeinsam verrรผhren. Auf ein gefettetes oder mit Backpapier (oder Silikonmatte) ausgelegtes Backblech geben.
Den Teig mit Mรผsli bestreuen. Ich habe das vegane ๐Ÿฅ•Karotte-Ingwer-Mรผsli genommen.
Den Kuchen bei 170 Grad Umluft ca. 30-35 Minuten backen. Wenn kein Teig am Zahnstocher kleben bleibt, ist der Kuchen fertig.

Chia pudding
1/4 cup chia seeds
1 cup oat milk
1 tsp maple syrup
1 tsp vanilla extract
Place all the ingredients in a jar and mix well. Mix few more times in the first 10 minutes to avoid lumps. Place in the fridge and let soak for one hour.
Matcha lime nice cream
3 frozen bananas
1 tsp matcha powder
juice of one lime
Place all the ingredients in a food processor and blend until smooth and creamy.
Enjoy!

๐ŸŒฑRecipe smashed potatoes: Boil yellow baby potatoes until just fork tender, about 15 minutes. Transfer to lined baking sheet. Use bottom of a glass to gently smash (push down) on potatoes until flattened to about 1/2 inch thick, without falling apart. Brush to coat with olive oil and sprinkle salt and black pepper to taste. Bake at 450F about 15 minutes with seasoned garbanzos (see below). Remove and flip potatoes, brushing other side with olive oil and salt. Continue to bake until golden brown  and crispy. ๐ŸŒฑRecipe BBQ chickpeas: Rinse and drain 1-15oz can garbanzos. Make spice mix: 1.5 tsp paprika, 1/2 tsp black pepper, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp chili powder, pinch cayenne, 1.5 tsp nutritional yeast and salt to taste. (Optional: coat garbanzos lightly with olive oil.) Toss garbanzos in spice mix and rub until coated. Spread onto parchment-lined baking sheet. Bake at 450F with potatoes until starts to get crispy. Remove and toss in desired amount of low-sugar BBQ sauce (like Annieโ€™s). Return to oven and bake another 5-10 minutes. (You can skip the spice mix part and just do BBQ sauce but I do both to add more depth in flavor. Or you can skip the BBQ sauce.)

* 1 cup chickpea flour
* 3/4 cup summer peas
* 2 cups finely grated zucchini
* 1/2 cup water
* 1 tsp baking powder
* 1/2 tsp salt & pepper
* 1/4 tsp garlic & onion powder
* 1 tbs olive oil + more for frying

1. Add everything to a deep bowl and whisk really really well! Allow to sit for 5 minutes. The batter shouldnโ€™t be too runny, if so add a tbs more flour.
2. Heat up a skillet on low-medium, add 1/4 cup of batter a time and cook for a few minutes each side until browned.
3. So so yummy on its own or with a dipping sauce.
