  • Part of my weekend meal prep yesterday involved steaming spaghetti squash. This is what else happened as part of Sunday meal prep day:

1. Peeled a carrot to have ready to shred for salad
2. Defrosted layers of a Paleo carob cake and made peanut butter frosting for it. Containerized slices.
3. Washed one bunch of kale, tore stems off and removed/ripped up leaves. I steamed some of it with diced red cabbage. 2/3 of the bunch I stored uncooked in a plastic container to have ready for quick meals this week.
4. Cooked a batch of brown Jasmine rice mixed with some white sushi rice (makes it fluffy and soft)
5. Cooked a beet that was about to spoil along with some kabocha squash and carrots with a little piece of kombu for minerals

  • I almost never get cherries because there so darn expensive, but when I had my wisdom teeth pulled, I figured it was a good excuse to get them since I couldn’t have strawberries or any other berries with small seeds. I can confidently say that kiwis and cherries complement each other really well. The banana adds the perfect amount of sweetness to the whole thing. If you’ve ever had a Japanese sweet potato, you know how creamy and dense it is, so it added great texture this. For the sparse amount of effort this dish took to make, I can give this meal a 10/10! Do you like stuffed sweet potatoes?

I really like the JUST Egg, but tofu scramble is a classic for me.🥰 I liked the chickpea omelettes I made a while ago but it’s been way too long so I picked up a bag of the flour to make them again. They were gooood.🤩

So the ones in my picture are for eating straight up - like forkfuls of egg with breakfast.. but for baking: ✨ My go-to vegan egg is a flax meal + water mixture 🧁 which is 1 TBSP flax meal + 2-3 TBSP water: just mix together with a fork and let sit for a few minutes before incorporating into your baking recipe. It works perfectly because of the bouncy texture and the fat and protein content of flax seeds. (Flax meal is just ground up flax seeds. You can buy the seeds whole and grind them yourself, but I buy them already in powdery form, aka flax meal!) I hope this helps if you’re new to plant-based eating.💛

  • Budín de Limón. Sin derivados animales 🤗 
INGREDIENTES: • 450 GR de harina de trigo (o integral)

1/3 taza aceite

120 ml leche vegetal

120 GR panela

1 sobre de levadura en polvo

Ralladura y jugo de 1 limón o 1 1/2

1 cdta esencia de vainilla (opcional) • 1 pizca de sal

Yo también le puse trocitos de frutos secos. Es opcional y a gusto 😁

PROCEDIMIENTO:
1. Poner en un bowl la harina, la cáscara de limón y la panela. Mezclar bien
2. En otro bowl poner el aceite, la leche, y el jugo del limón. Mezclarlos
3. Hacer un hueco en la harina y poner la levadura y la pizca de sal. Volver a mezclar.
4. Mezclar todos los ingredientes hasta formar la masa.
5. Poner la masa en una budinera previamente aceitada y enharinada. Y llevar a un horno precalentado a 180° aprox. 
El tiempo de duración dependerá de cada horno. Cuando metas un palito en el budín y salga limpio es que ya está 😁👍

INGREDIENTS:
2 avocados
3-4 seaweed sheets
1 teaspoon sesame seeds
2 cups sticky rice
1/2 tablespoon rice wine vinegar
1/2 tablespoon salt

for the sweet potatoes
3 tablespoons miso paste
2 tablespoons @califiafarms almondmilk (unsweetened)
3 tablespoons soy sauce/tamari
2 tablespoons sesame oil
3 sweet potatoes

DIRECTIONS:
Preheat your oven to 400 degrees. Peel and cut your sweet potatoes like fries. Mix with miso paste, almondmilk, soy sauce and sesame oil. Place in the oven until cooked through - about 35-45 minutes.

In the meantime, assemble your sushi roll by thinly slicing your avocado and making your sushi rice according to the package instructions. Once cooked, add rice wine vinegar and salt, stir well and let cool.

Once your rice has cooled and your sweet potatoes are ready. Assemble by spreading out your rice on the seaweed and adding your sweet potatoes and avocados in the bottom part of the roll. Top with sesame seeds and roll tightly. Thinly slice and serve.

INGREDIENTS
1 medium eggplant
marinara sauce (for serving)

vegan mayo:
1/2 cup raw cashew pieces
1/2 brick extra firm tofu
1 1/2 tbsp lemon juice
6 tbsp water
3/4 tsp salt
1/2 tsp granulated sugar

breading:
1 cup panko bread crumbs see note below
1 tbsp Italian seasoning
1 tbsp nutritional yeast flakes
1/2 tsp alt or to taste
1/2 tsp onion powder
1/2 tsp garlic powder

filling:
1/2 cup remaining mayo from recipe above
1/2 brick extra firm tofu
1 tsp lemon juice
1 tsp nutritional yeast flakes
1 tsp dried basil
salt to taste

INSTRUCTIONS
prepare eggplant by washing, peeling (optional), and slicing it into 1/4 inch thick rounds.

prepare mayo by blending all mayo ingredients in a high-speed blender until smooth. if you don't have a high-speed blender, soak your cashews for a few hours beforehand, and use only 3-4 tbsp of water.

preheat oven to 375 degrees F. mix all breading ingredients together and set aside in a bowl.

paint each eggplant piece with generous amounts of mayo on both sides. spoon the breading mixture over both sides of each eggplant round, tapping off the excess.
place eggplant rounds on two lined baking sheets.

bake at 375 degrees F for about 15 minutes, then flip each eggplant round over, and bake for another 12-15 minutes, or until eggplant is tender and crumbs are a light golden color.

serve eggplant alone, with pasta and marinara, or in stacks with vegan ricotta made out of your leftover ingredients. to make the tofu ricotta, use a fork to mash together oil-free mayo, tofu, lemon juice, yeast flakes, basil, and salt in a bowl.

layer eggplant rounds with marinara and tofu ricotta to desired height. top with fresh basil if desired.

  • Chickpea salad is so delicious! On toast, in a wrap, in a sandwich, or just eaten out of the bowl with a spoon!

Combine:
1 can chickpeas
1 soft avocado
2 scallions
1/4 cup fresh parsley
1/4 cup fresh cilantro
1/2 cup (plant-based) yogurt
1 tsp lemon juice
Dash of salt salt

And mash everything together with a fork!

Also, did you know that 2,500 gallons of water are needed to produce 1 pound of beef.
Animal agriculture is responsible for up to 91% of Amazon destruction and 1-2 acres of rainforest are cleared every second. The leading causes of rainforest destruction are livestock and feedcrops. Animal agriculture is also the leading cause of species extinction, ocean dead zones, water pollution, and habitat destruction. Livestock operations on land have created more than 500 nitrogen flooded deadzones around the world in our oceans. For you to understand how inefficient animal agriculture is 1.5 acres can produce 37,000 pounds of plant-based food, 1.5 acres can produce 375 pounds of beef....
70 billion farmed animals are reared annually worldwide. No wonder we need to kill the rainforest grow crops fertilize and destroy our soil and oceans. More than 6 million animals are killed for food every hour.
A person who follows a vegan diet produces the equivalent of 50% less carbon dioxide, uses 1/11th oil, 1/13th water, and 1/18th land compared to a meat-lover for their food.

  • Coconut Lentil Red Curry with Brown Rice and Avocado from @plantbasedrd .

- 1 cup green lentils rinsed and drained - 2 tbs Thai red curry paste (vegan)
- 1 can coconut milk
- 1 can diced tomato
- 1 tbs soy sauce
- 1 tbs maple syrup - 1 red onion diced - 5 button mushrooms slice
- 1 medium carrot chopped - 1 red capsicum diced - 2 cloves garlic
- 1 inch fresh ginger minced - 2 cups water .

Sauté onions, mushrooms, until onions are softened. Add carrots, capsicum, garlic, ginger and curry paste until fragrant. Add remaining ingredients and bring to boil. Reduce to simmer until thickened. Serve with brown rice and avocado 🥑🍚

Curry Twice Baked Potatoes (Oil Free Option)🥔🥔🥔I was originally going to make this dish using sweet potatoes, but my kids just loathe them 😒so here they are in all their russet glory. I’ll save the sweet potato version for my packed lunches I guess. Anyway, a whole lot of goodness inside these spuds, with a chickpea & spinach curry folded into a potato mash, topped with peanuts, fresh cilantro, sour cream, & a squeeze of lime.What you need: 3 medium russet potatoes or 3 medium sweet potatoes, 2 tsp mustard seeds, 2 tsp cumin seeds, 1/2 medium onion finely chopped, 1 clove garlic minced, 1/2 in peeled & grated ginger, 1/2 tsp turmeric powder, 1 tsp chili powder, 1 can chickpeas drained & rinsed, 2 handfuls of baby spinach, 1/4- 1/3 cup coconut milk, sea salt/ pepper to taste, juice of 1/2 lime 
1️⃣ Bake russet potatoes 375 F 45-55min or sweet potatoes 400 F 60min ( pierce with fork on top and bottom prior to baking) Let cool
2️⃣ In a large non stick pan add 1 tbl olive oil or 1 tbl water (for oil free version: keep adding 1 tbl at a time throughout sautéing, to cook/ brown ingredients, stirring often to prevent burning) medium heat, add mustard & cumin seeds. Cook until seeds begin to brown and pop about 1 min. Stir in onion, add a pinch of salt, cook 3-4 min until translucent 
3️⃣ Add ginger, turmeric, chili powder, stir, cook 1 min
4️⃣Add chickpeas & spinach, cook until spinach wilts
5️⃣ After potatoes have cooled, cut potatoes in half, scoop out insides of potatoes (leaving skin & 1/4 in filling intact) place in large mixing bowl, mash with back of fork/potato masher, add coconut milk, season with salt/pepper, then fold in chickpea mixture,mix well 
6️⃣ Add mixture back to potatoes halves, mold halves back together to form whole potatoes, place on parchment lined baking sheet, bake 10-15 min at 375 F 
7️⃣ Enjoy! I topped my potatoes with peanuts, a squeeze of lime, cilantro, & sour cream. Happy Thursday friends 💚💚💚
