  • If you could only taste this  𝙢𝙤𝙞𝙨𝙩 𝙖𝙡𝙢𝙤𝙣𝙙 𝙥𝙤𝙪𝙣𝙙 𝙘𝙖𝙠𝙚 🍰 .  This was a special request from a friend. It's a shame she didn't get to try it because of quarantine 🙈.

It was my first time making this cake so I played with ingredients but I can say these are (roughly) the quantities I used
.
📝Dry ingredients
1 cup almond flour 
¾ cup all purpose flour
¾ sugar
1 ½ teaspoons cornstarch 
1 teaspoon baking soda
Pinch of salt
.
📝Wet Ingredients 
1 cup almond milk 
2 teaspoons almond extract
1 teaspoon vanilla extract
2 tablespoons melted vegan butter or oil
1 teaspoon vinegar
.
Sliced almonds for topping (optional)
.
I used homemade milk (1:3 ratio) because the flavor is stronger and used the okara as almond flour
.
Mix all dry ingredients and  then add all wet ingredients. Transfer batter to a greased baking pan and top with sliced almonds
.
Bake for about 20 minutes at 350F
.
Enjoy!

  • Soup is one of my favorite meals to make. I usually make a big batch so then we will have leftovers for the week. 
This here is a white bean soup. 2 cups of dried cannellini beans, 1 cup vegetable broth, 1 yellow onion, 3 garlic cloves, 4 gold potatoes, 1 tbsp Italian seasoning, 1 tsp salt, 1 tsp ground pepper, 2 cups coconut milk, 1 tsp cumin, 1/2 tsp chili flakes, 1 tsp chives.

  • As promised here is my super simple take on vegan nachos for you to try at home. 
You will need -
For the mince:
1 White onion, diced
1 clove is garlic, diced
150g vegan mince
1 can of chopped tomatoes
1 can of water
1 veg stock
Pinch of salt
Pinch of pepper
1/2tsp chilli flakes
1/2tsp mild chilli powder
For the guacamole:
2 baby avocados
Squeeze of lemon
Pinch of salt
Pinch of pepper
1 tomato, diced
1 spring onion, diced

100g vegan grated cheese (I used violife)

  • Hi everyone! I figured you might be forgetting what we looked like, so here I am showcasing the brownies I just made for my Mam’s birthday today 🥳
•
I was following [and I mean loosely following] a recipe from @bosh.tv to make these, here’s how I did it;
•
300g plain flour
150g sugar
150g cocoa powder
1tsp baking powder
0.5tsp salt
2tbsp vanilla extract
30g smooth peanut butter [i’d recommend adding more though]
250ml water
130g butter
Mix all dry ingredients then add wet and mix. Optional but I also cracked up a dark choc brownie chocolate bar and added this in and mixed a little more before transferring into the tray

Then add teaspoons of peanut butter and raspberry jam on the top and mix together 😋
•
The recipe advised to cook for 45 mins but mine ended up being in for over an hour 🤭 my baking tray was too deep and not wide enough, which I think also caused them to be less gooey [I also replaced veg oil with butter because I forgot to shop for it, great job!!!]
•
Overall a pretty easy recipe to follow AND still tasted delightful. Mam gave them a solid 10. I’d have liked more peanut butter flavour so next time I’ll be adding more into my mixture!
•
Don’t worry - I also dropped a few off at D’s doorstep while on my one walk of the day. Couldn’t let my partner go without!

  • Y lo prometido es deuda, aquí va la receta de pan de chocolate y naranja, ahora que tenéis tiempo es una receta perfecta, que necesita trabajo y mimo, pero bien merece la pena, untado con mantequilla de cacahuete queda perfecto ( la de la foto la hacemos en casa) 
Pan de chocolate y naranja
Ingredientes:
150 grs. Harina integral 
150 grs. Harina de fuerza 
300 grs. Harina de centeno 
1 1/2 de agua caliente
Zumo y ralladura de una naranja 
50 grs de chocolate negro ( yo use 90% cacao, pero con 70 % cacao también vale)
20 grs de cacao en polvo 
4 cucharadas de AOVE 
4 cucharadas de sirope de Dátil 
15 grs de levadura de panadería seca 
Más AOVE para amasar 
Preparación: 
En un bol mezclo las harinas, la levadura, la ralladura y el cacao el polvo y hago un volcán 
Por otra parte mezclo el agua , el zumo, sirope, aceite y chocolate, hasta que se funda el chocolate.
Apando esta mezcla al volcán y voy uniendo todo con los dedos y manos hasta formar una bola. La masa es bastante compacta. Dejamos reposar 1/2 hora.  Cogemos la masa y empezamos a amasar untando la de aceite , hay que amasar con fuerza ya q es una masa compacta. Amasamos 20 min untando la de aceite de vez en cuando , formamos un rollo para mete en uno molde de plumcake. Dejamos reposar una hora. Cuando le quede 15 min de reposo precalentamos el horno a 180 grados, calor arriba y abajo. Metemos nuestro pan al horno poniendo un bol con agua debajo para dar humedad. Cocinamos 40 a 45 min. Dura de tres a cuatro días, si no os lo comeis antes

  • Today I made some gluten free, vegan focaccia 😍😄
Its nice to eat some actual decent bread for a change! Shop bought gluten free bread is a bit crap tbh, unless you use it for toasties, toast or garlic bread. Its not good for sandwhiches or having with mezze etc though.
First time making this and it actually came out really decent! Nice crisp top, fluffy in the middle 👌
I used fresh rosemary picked from our rosemary bush on our terrace that mum grows 🌿

I love to make vegan pizza. With bought pizza dough it's so easy and quick to prepare and it's just great to put everything you love on it. Here I put some onions, red pepper, mushrooms, grilled eggplants, vegan sausage and vegan cheese 🍆🧀🍄
I prepared a cabbage salad to go with it and add a fresh touch 👌❄

  • homemade vegan banana bread, with a little extra love ❤️, I made it 30 days without going into town but had to go down yesterday and brave the ER, (truly like my worst nightmare being in a hospital with this virus stuff going on, I begged not to go but,) Taylor thought I may have an appendicitis because of some excruciating right side pain I’ve had for days now, we live an hour and a half away from town so not really something to mess with, went in had a CT done my appendix is fine but have kidney stones. Ouch! so I’m just gonna sit here with my fresh baked loaf of bread, chillax and pray I didn’t catch this virus while in a hospital!!! 😆 ~

1 1/4 tsp sea salt or less/more to taste
1 tsp onion powder
3-4 garlic cloves
Other Ingredients:
3 lb potatoes (about 7-8 medium)
1 medium onion
Fresh herbs to garnish
US Customary - Metric

📍INSTRUCTION:
Check the video below for easy visual instructions.
Soak cashews in boiling water for about 15 minutes, then drain.
Meanwhile, peel potatoes and slice them thinly (about 1/8 inch thick). You will need 3 pounds (1.4 kg) of peeled potatoes for this recipe. Also, peel the onion and slice it thinly.
Preheat oven to 400 degrees Fahrenheit (ca. 204 °C) and grease a 9×13 inch (23x33 cm) baking dish. Set aside.
To make the cashew sauce, add all sauce ingredients to a blender. Blend on high for about one to two minutes or until completely smooth. The sauce will be very thin at first but don't worry as it will thicken up while baking. Taste the sauce and add more salt/pepper/spices if needed.
Transfer half of the potatoes to the prepared baking dish and pour half of the sauce on top.
Spread the sliced onion on top and layer the remaining potatoes over the onion. Pour the remaining sauce in the baking dish.
Bake for about 60-70 minutes. The baking time depends on the thickness of the sliced potatoes. The potatoes should be fork-tender and golden brown.
Let cool for about 5-10 minutes, then garnish with fresh parsley or chives. Enjoy!

  • Lunch today! Mushroom Matar Masala! Can’t go out for Indian food? Make it at home🤪 without onion or garlic😉 You will find the complete recipe for the curry in an older post with lots of veggies instead! For the mushrooms, I let them sear or grill on both sides in a hot pan. Tip: hold back on the salt until the very end while cooking mushrooms since salt will draw out all the water from the mushrooms and they will lose their lovely texture and volume. 
For the naan, I used a mixture of chapati flour and all purpose flour and baking powder😂to make it rise instantly! Worked out alright😅 Sprinkled a few sesame seeds before rolling them out too! Add fresh coriander if you have them too☺️

  • Endlich Spargelzeit 🍽️ Und hey, man glaubt es kaum! Eine Sauce Hollandaise gelingt auch ohne Tierleid!!! Einfach Margarine bzw Alsan im Zopf zergehen lassen, etwas Mehl dazu und gut verrühren zum andicken, dann etwas Gemüsebrühe, veganer Weißwein,  etwas Zitronensaft sowie Salz und Pfeffer dazu und andicken lassen so wie ihr es gerne mögt. Fertig.

  • This recipe is for the crispiest and tastiest Vegan Eggplant Parmesan you've ever tried! 😋 Seriously, this dish turned out better than any eggplant I've ever had in any restaurant. The flax seed "egg" gives the eggplant an extra crispiness and nutty flavor that just can't be beat! 💚🌱

Vegan Eggplant Parmesan

1 medium eggplant, sliced 3/4” thick

1/2 cup all-purpose flour

1 cup panko break crumbs

2 tsp garlic powder

1 1/2 Tbs oregano

1/4 cup flax seeds, ground

1/4 cup nutritional yeast

3/4 cup hot water

salt

black pepper

1.) Place sliced eggplant into a colander and cover liberally on both sides with salt. Allow to rest 15-20 minutes. Rinse away salt and press for 10 minutes between paper towels with something heavy like a baking sheet with a cast iron skillet sitting on top.
.
2.) Prepare dredging station with three bowls. In the first bowl, combine flour, garlic powder, a big pinch of salt, and generous grind of black pepper. In the second bowl, combine ground flax seed and hot water. Finally, in the third bowl, combine panko bread crumbs, nutritional yeast, oregano, another big pinch of salt, and another generous grind of black pepper.

3.) Take your pressed eggplant slices and cover with flour mix, dip in flax water until all sides are coated, and finally dredge in panko mix until well covered.

4.) Place prepared eggplant slices on a lightly greased baking sheet or a baking sheet lined with a silicon mat (our preferred method). Bake at 400°F for 25-30 minutes.

5.) For an extra golden color, lightly fry (1-2 minutes for each side) the eggplant in oil in a skillet after baking.

6.) Serve on pasta with marinara and top with a little vegan parmesan or nutritional yeast.

Here’s what’s in my bowl today:
▶️ Quinoa. Made a batch of this using veggie broth earlier in the week. Tips for cooking quinoa. 1 cup quinoa and 2 cups water and a pinch of salt. Bring to a boil, reduce heat and cover with lid that can vent. Let quinoa simmer for 15 minutes on a low heat then remove from stove top with lid still on and let it sit in the pot for like 10 minutes. Go ahead and fluff with a spoon or fork then serve or allow to completely cool and stove away.

▶️ Cucumbers. Just sliced. Feel free to leave the seeds in if you want.

▶️ Olives and Hummus. Yummy condiments that I just purchased as is, no prep here unless you want to dice the olives into smaller bits.

▶️Broccoli. I like broccoli a lot and am always willing to cook a fresh batch. My go to is to cut the broccoli into bite size pieces, place in a pan with 3 tbsp water and cover with a lid then cook on low-medium heat for 5 minutes. Uncover, then toss with a splash of soy sauce and a tsp chili garlic sauce. Stir to coat and cook off remaining liquid before serving. When I need to save time, I will microwave frozen broccoli and at the end toss with a little garlic powder and soy sauce. Side note, you can throw frozen broccoli on a baking tray at 400F for 15 minutes and it’s awesome (air fryer too is awesome).

▶️ Tempeh. I just tossed it with soy sauce and garlic chili sauce and popped into the oven while I waited for the quinoa (400F, about 10 minutes). If you are not a fan of tempeh you can sub for preflavored tofu, canned beans or edamame. Edamame is the fastest because you can pop in the microwave or rinse under hot water to thaw out. Edamame and olives are really yummy together.

  • Spring is almost here. And that means it’s finally time for breakfast smoothie bowls. I honestly have these all year round tho.
Stay save everyone 🌍✨🌱🌈
Ingredients:
1 frozen banana 
1/2 cup almond milk 
1/2 cup frozen mango
1 peach
2 cups spinach
1 tsp spirulina

Method:
1. Blend all the ingredients. 
2. Top with coconut shreds, kiwi and blueberries, granola 🥝🍑🍓🍇 3. Enjoy
