  • been very quiet recently as my meals have not been interesting, however today I tried Wicked Kitchen’s Pink Pesto Pasta. Was not expecting to like this & was pleasantly surprised, the bowl in the second picture proved to be too big a portion but it did not go to waste.   • Spicy chickpeas on toast. 
Whilst beans on toast is an ultimate comfort food....it’s nice to change it up every now and then! 
I tend to have this at breakfast but realistically it could be for any meal throughout the day! Smother the toast with hummus before adding the chickpeas for the ultimate experience 😋

Ingredientes:

4 colheres de sopa de azeite 
1 cebola picada 
3 dentes de alho picados
2 tomates picados
1 sachê de molho de tomate
1/2 xícara de água 
Sal a gosto 
Pimenta do reino, curry, nós moscada e orégano a gosto
1 abobrinha cortada em cubos bem pequenos
1 xícara de palmito cortado em cubos bem pequenos
1 lata de milho
1 lata de ervilha 
Azeitona a gosto
Salsinha , coentro e cebolinha a gosto 
2 xícaras de fubá

Modo de preparo:

Numa panela, refoge a cebola e o alho no azeite. Adicione o tomate picado e deixe refogar mais. Acrescente o sachê de molho, a água e todos os outros ingredientes (exceto o fubá).
Deixe cozinhando por uns 5 minutos, mexendo de vez em quando.
Desligue o fogo e adicione o fubá aos poucos, até estar bem homogêneo. Ligue o fogo novamente e cozinhe por 4 minutos (mexendo sempre). Desligue o fogo e reserve.

Para montagem:

Unte a forma com azeite, e coloque rodelas de tomate no fundo (pode enfeitar com o que tiver em casa) Eu usei abobrinha e milho, mas também pode colocar palmito, azeitona, etc.
Depois é só colocar o cuscuz da panela na forma e deixar na geladeira por uma hora

  • 2 full freezers a full fridge a full pantry (so full they wanted to use our fridge freezer to store their food and after cooking their food has been left on the windowsill because they have no room) yet they went food shopping again friday morning and again this morning. 
WHY ARE PEOPLE DOING THIS????? It is selfish for the people who really need food and beyond wasteful as so much food will go bad! Even with all of this food they brought everyone in the house but me takeout sunday night! Also the only food they have told me and beard they can 'spare' is non vegan (even though they have loads of vegan food) they are making dinners and pudding but making it all non vegan so I cant have any. Does anyone else find this kinda cunty? I'm not looking for hand outs I have some food (have been struggling to get certain things) but I am.out of money and worried I will be out of food before I get paid next month. Meh I dunno I just find their behaviour selfish and juvenile. Or am I alone on this?

4 tbsp coconut oil
2 tbsp Meridian maple syrup
Pinch of sea salt
280g Meridian coconut and peanut butter
1-2 tbsp cacao nibs

Method:
1) In a small saucepan, heat the coconut oil, maple syrup and a pinch of sea salt. Once melted add a jar of Meridian Coconut and Peanut Butter, stirring till smooth.

2) Tip into a lined loaf tin, sprinkle with a handful of cocoa nibs and freeze, flat, for approximately 30 minutes until set.

3) Once set, use the lining paper to lift out of the tin and cut into 18 squares. Store in a lidded container in the fridge.

Or the opposite? Laying on the couch on end? Eating all the snacks and back up food? Binge watching Tiger 🐅 King and playing video games?

Or somewhere in between? Don’t worry.. there’s no wrong answer. I hope you’re doing whatever is best for you right now! 
It’s been a busy time in the public safety scene.. thanks COVID 🙄 so I’ve been on my toes. But when I go home, I’m letting myself fully relax. Through the highs and lows and all the in-betweens I’m staying healthy with @herbalandgummies

  • 'Famous Lasagna Soup' from #livbsveganonabudgetcookbook by @itslivb 
Today's creation is this comforting, easy, and versatile soup that I've been meaning to make for a while. I was so pleased with the results and am certain that many of you can make it with what you have on hand. I was able to stick closely to the original recipe, which calls for onions, peppers, mushrooms, broth, tomato sauce, dry brown lentils, pasta, spinach, seasoning, and tofu ricotta. Although the recipe calls for broken lasagna noodles, I used mini lasagna noodles (lots of other shapes weren't available at the store but these were so I thought they'd be perfect) and by doing so I would not add the lentils and pasta at the same time as the recipe suggests. I would add the lentils first and then a while after add the pasta, just to better balance their required cooking times. Lasagna Soup is a new favourite!

Chinese-style No Beef and Broccoli by @thefoodietakesflight 🥦 Perfect over some steamed rice for a delicious & satisfying meal! Recipe below:

Chinese-Style No Beef and Broccoli
Good for 2-3 servings .
Ingredients
10 dried shiitake mushrooms, soaked in hot water for 12-15 minutes*
2 cups (250g) raw broccoli florets 
1/4 cup water 
1 small (70g) red bell peppers, sliced into strips
1/2 red onion sliced into strips 
4 cloves garlic, minced
1 tbsp canola or other neutral cooking oil
Sesame seeds and chopped spring onions for garnishing
3 cups of steamed white rice or other rice, for serving

Note: *Feel free to use fresh shiitake mushrooms.

Sauce
1/4 cup soy sauce
1/4 cup + 1 tbsp room temp. water
1/4 cup coconut sugar, adjust according to desired sweetness
1 1/2 tbsp Chinese rice wine, optional but highly recommended
1 1/2 tbsp cornstarch 
1 tbsp sesame oil .
Steps 
Rehydrate the dried mushrooms by soaking in hot water. Squeeze out excess liquid from each mushroom and then slice them into 1/2-inch thick strips. If using fresh mushrooms, simply slice them into strips. Set aside.
In a bowl, mix all the sauce ingredients together until the sugar is diluted. Set aside.
Heat a non-stick or cast iron pan. When hot, add in 1 tbsp canola or neutral oil. Sauté the onions and garlic until tender and aromatic, around 2-3 minutes. Add in the broccoli florets. Pour ¼ cup water and leave to cook over medium high heat until half-cooked. Add in the bell peppers and sauté for a few more minutes. 
Add in the mushrooms. Pour in the sauce mixture. Mix everything together and leave to simmer over medium heat until the sauce has thickened from the cornstarch. Turn off heat.
Serve with some steamed rice. Garnish with some sesame seeds and spring onion, if desired. Enjoy while hot!

1 tsp smoked paprika
80 ml / 1/3 cup vegan white wine
1 Romano pepper, sliced

Lentil pasta made with simple pantry ingredients .

1 medium onion, chopped
1 clove garlic, minced
1 medium carrot, chopped
1 cup (76g) mushrooms, chopped
1 red bell pepper, chopped
1 tsp basil
1 tsp turmeric
1 tsp paprika
1 tsp salt
1 cup (100g) red lentils
1 can (400g) chopped tomatoes
2 cups (200g) gluten-free pasta
½ can (120ml) coconut milk
1 cup water
2 tbsp tamari
2 cups (134g) kale

Add the onion and the garlic to a large saucepan or frying pan, and sauté for 2-3 minutes, until softened. Add the carrot, mushrooms and bell pepper. Sauté for a further 2-3 minutes, before stirring in the basil, turmeric, paprika and salt. Stir to coat the vegetables, then add the red lentils, chopped tomatoes, pasta, coconut milk, water and tamari. Simmer for 12-15 minutes, until the pasta and lentils are soft, stirring in the kale half way through the cooking process.

Sauté for a further 2-3 minutes, before stirring in the basil, turmeric, paprika and salt. Stir to coat the vegetables, then add the red lentils, chopped tomatoes, pasta, coconut milk, water and tamari. Simmer for 12-15 minutes, until the pasta and lentils are soft, stirring in the kale half way through the cooking process.

Upside down chocolate brownie + pear cake

Wet Ingredients ⠀
⠀
4 chia “eggs” (4 Tbsp chia seeds (preferably ground, but can use them whole)+ 180mL water, mixed and set aside until thickened)
1/2 cup vegan butter⠀
1 1/2 cup coconut sugar⠀
1 cup plant milk of choice
⠀
Dry ingredients ⠀
⠀
2 cup (250g) white spelt flour⠀
2 tsp baking powder⠀
1 cup cacao powder⠀
2 tsp pure vanilla extract⠀
1/2 tsp good-quality salt 
1 tsp ground cinnamon⠀

Topping ingredients 
3-4 beurré Bosc pears, peeled, halved and cored. ⠀
2 Tbsp vegan butter⠀
2 Tbsp coconut sugar ⠀
⠀
Method⠀
⠀
1. Preheat oven to 170C/340F⠀
2. Add the 2 Tbsp vegan butter and 2 Tbsp coconut sugar to a fry pan and brown over a low heat (be careful not to burn- cook until just fragrant). Pour this caramel into the base of an 8 inch round cake tin, then Place pears cut-down on top. set aside. ⠀
3. Add all the wet ingredients to a saucepan, and melt over a low heat, whisking throughout. Once melted, remove from heat and set aside.⠀
4. Sift dry ingredients into a large mixing bowl. Combine, then add the cooled wet ingredients. Mix to combine, then Pour batter over pear base and smooth with a wet spoon.⠀
5. Bake for 30-35 mins, or until an inserted skewer is removed with only a few crumbs intact. ⠀

Allow cake to cool for 10 mins in the tin, before carefully flipping onto a plate and serving immediately with ice cream or yoghurt. 
Note- this cake is best served warm, after baking. Due to the fruit in the cake, it will not keep well (the fruit juices will cause the cake to become soggy on standing) but, if you do have leftovers, refrigerated to help it keep/stop the fruit juice leaking into the cake.

Roasted Cauliflower & Curry Soup .

What you need: 1 large cauliflower chopped into florets (2 lbs), 3 tbl coconut oil, 1 onion diced, 1 leek diced - using white/light greens parts , 3 tbl tomato paste, 2 cloves of garlic minced , 1 inch peeled & ginger grated, 1 tbl curry powder, 2 tsp cumin, 1/2 tsp turmeric, 6 cups veggie broth, 1 cup cooked yellow split peas (sub golden/red lentils), 1 bay leaf,juice of 1/2 lemon, 1 tsp Garam Masala Toppings: reserved roasted cauliflower, fresh herbs such as basil, chives & zoodles (spiralized zucchini) optional. 
What you do: 
1️⃣ In a large bowl add 1 tbl of melted oil to cauli florets season with salt & pepper, place on parchment lined baking sheet. Roast 425 F 20-25 min until edges get brown & caramelized
2️⃣ In a large pot or dutch oven, heat oil on med and sautée onions & leek till translucent about 5-7 min
3️⃣Mix in tomato paste,garlic, ginger, & the rest of seasonings for 1 min until you can smell spices
4️⃣Add Broth, lentils, cauliflower ( reserving 1 cup for soup topping ) bay leaf and bring to a boil then simmer 15-20 min
5️⃣ Use immersion blender, or blend in blender in batches till smooth. Add lemon juice & garam masala. Adjust seasonings. Top with reserved roasted cauliflower & fresh herbs. Enjoy! .
