I picked this up for days in the office where I bring in leftovers or a frozen vegan meal. The slow heating at my desk is better than getting on the microwave conga line.  I can also take this on the road and heat up my next meal while I drive. (A couple of road trips in my near future.) works with glass, metal, cardboard, and plastic containers.

  • Vegan coffee cake ☕️🍰 I have the most sensitive stomach in the world I swear, and usually can expect a stomach ache after eating a dessert like this. BUT GUESS WHAT? NO STOMACH ACHE. I didn’t feel heavy or sick full at all. This is actually a really healthy coffee cake recipe! I’d definitely eat a slice for breakfast, or dessert...just whenever because i feel good and it’s what I want. 💁🏼‍♀️ Ingredients:

Cake:
1 3/4 cup oat flour
1/2 cup sugar
1/2 cup non dairy milk
1/2 cup unsweetened apple sauce 
2 tsp baking powder
1 tsp baking soda 
2 tsp lemon juice
1 tsp vanilla extract
Pinch of salt 
Streusel:
1 cup almond flour (I used all purpose and it was still good)
3 tbsp maple syrup
1 tsp cinnamon

Glaze:
1/4 cup cashew butter
2 tbsp maple syrup
3 tbsp non dairy milk

Instructions:
In a blender/food processor, mix all cake ingredients.
In a bowl, combine the streusel ingredients and mix with your hands or fork until crumbly.
Line a 8”x5” glass dish (or standard loaf dish) with parchment paper or lightly oil.
Spread half of the cake batter into the pan (it will be a very thin layer).
Cover with half the streusel mixture. 
Top with the remaining cake batter and then the rest of the streusel. 
Bake for 40-45 minutes at 350 F.
For the glaze, whisk together ingredients until it has a smooth, glaze like texture that you can pour. 
Let cake cook for 30 minutes before you glaze and slice. But then, DIG IN!!! I got this recipe from @feastingonfruit

  • Garlicky burst cherry tomatoes, sautéed soy mushrooms and roasted spiced chickpeas with pasta by @cookingforpeanuts 🌱

Recipe: 
Toss 1-15oz can chickpeas (rinsed and drained) with a little olive oil (to coat) + 1-1/2 tsp paprika + 1-1/2 tsp chili powder + 3/4 tsp garlic powder and salt to taste. Rub chickpeas in spices and olive oil so evenly coated. Roast at 400F until just crispy. Meanwhile, sauté 8oz thickly sliced cremini or white mushrooms in a little olive oil in non-stick skillet. Let mushrooms brown on one side before moving them. Sauté until both sides are browned. Reduce heat and add a generous splash of soy sauce. Cook another 15 seconds before removing mushrooms from skillet. Wipe skillet clean. Add a little more olive oil and sauté 1 lb cherry tomatoes until they release their juices, stirring regularly. Once they have started to burst, add 5 sliced garlic cloves and sauté another minute while mixing and gently pressing down on the tomatoes. Add the roasted chickpeas and sautéed mushrooms and cook on medium-low until juice released by tomatoes has thickened (about 5 minutes), adding more olive oil as needed. Once sauce has thicker consistency, stir in 2 tsp apple cider vinegar, 1 tsp hot sauce, 1-2 tsp maple syrup. Mix and cook another few minutes. Adjust vinegar, maple syrup and hot sauce as desired. Salt to taste.

  • New recipe on the blog: easy, nutrient-packed granola! I’ve been keeping a bag of it around at all times because things are too hectic to cook on the fly these days 🙈 it’s great as a snack, or for yogurt and smoothie bowls (as featured in my last food post)! I also included an oat-free version in case there’s anyone else out there whose stomach can’t handle oats 🙋🏼‍♀️ link in bio! #vegan

  • Overnight peanut butter oats with a banana

1 cup plant milk of choice, stir in 2 tblsps of peanut butter (I like meridian - no added salt, sugar, or palm oil - just peanuts). Stir well. Add one cup of oats, sprinkle generously with cinnamon, stir again, scrape down the sides and leave in the fridge over night. Add sliced banana pon the morn.

Still tastes great after 2 nights in the fridge.

This is quite high calorie, but trust you won't be hungry till lunch.

Alternatively halve the measurements (half cup plant based milk, 1tblsp peanut butter, half cut oats) but still have a whole banana on top. When I was less active in an office job I would do the half sized version.

Happy days- banana, peanut butter and cinnamon in one dish!! Nom!

  • Welcome back to the chronicles of a test driving plant based eater😋 lol

So this granola recipe may have legit saved me and kept me from cheating lol. I was having a hard time finding breakfasts I liked (I'm just not an oatmeal person no matter how I try) and getting INCREASINGLY HANGRY (ya'll I'm hungry ALL THE TIME NOW).... I found this cinnamon toast crunch granola recipe by @veggiekins on pinterest this morning and was able to throw it together and cook it so quickly!

I think I mentioned with the challenge I'm doing you can't have any added sugars or oils (but moderate maple syrup in a recipe is ok) so this oil free granola recipe was perfect, just enough sweet, and went wonderfully with strawberries, bananas, raisins, coconut flakes, and almond milk
.
Technically it was a semi cheat (because I'm only supposed to keep nuts and nut butters to a tablespoon min a day with this challenge..unless it's in a sauce recipe), but honestlyyyyyyyy what I'm not gonna do is starve for this challenge so I call this compromise 🤗

  • High protein dosa for a healthy weekend breakfast

I feel you can make dosa with anything and everything. It can be a meal in itself. Now a days , people are reducing rice quotient and increasing other components. We can consume these types of dosas without much guilt. Always remember, eat in moderation.

Ingredients:
1/2 cup Horsegram
1/4 cup Tur dal
1/4 cup Bengal gram
1/4 cup Green gram
1/4 cup Masoor dal
1/4 cup yellow moong deal
1/4 cup red organic rice
1/4 cup Idli rice 
1/4 cup black gram
5-6 red chillies
1/2 teaspoon pepper corns

Soak overnight. Grind them into coarse paste and add thinly chopped onions, grated carrot, coriander leaves.

Enjoy the protein rush.. #proteinrecipes

here’s the recipe...
1 dragon fruit
1 dragon fruit superfruit pack
1 mango (cored and cubed)
1 cup pineapple
2 tbsp chia seeds
2 tbsp flax seeds
1 scoop vega vanilla protein powder
1 cup cold pressed orange juice

Ingredients
Broccoli Pasta
9 oz macaroni elbows or (gluten-free) pasta of your choice (250g)
1 head of broccoli cut into 2 cups small florets
Vegan Cheese Sauce
1 medium russet potato 4 oz, peeled and cubed
1 small carrot peeled and halved
⅔ cup raw cashews 100g
1 cup water or more as needed
1 tbsp olive oil or canola oil
1 onion chopped, or sub 2 tsp onion powder
3 cloves garlic minced, or sub 1 tsp garlic powder
4 tbsp nutritional yeast
1 tsp mustard or 2 tsp white miso paste
1 tsp sea salt or to taste
2 tsp lemon juice or white vinegar
To Serve
½ cup dairy-free cheese shredded
vegan parmesan cheese
fresh herbs
.
Instructions
Cook Pasta & Broccoli
In a large pot of salted water cook the pasta according to package instructions until al dente, adding the broccoli florets to the pot in the last 2-3 minutes.
Preheat oven to 355°F (180°C).
Vegan Cheese Sauce
Add the potatoes, carrots, cashews and 1 cups of water in a pot. Cook for about 10 minutes, or until soft enough to blend.
Meanwhile, heat the oil in a skillet over medium heat. Add the onion and a pinch of salt. Cook until tender and translucent, about 3 minutes. Then add the garlic and cook for another minute until fragrant.
Once the potatoes are done, carefully pour the whole mixture (+ carrots, cashews and cooking water) into a blender along with the sautéed onion, garlic, nutritional yeast, mustard, salt, and lemon juice. Blend until the mixture is completely smooth, about 2 minutes, stopping to scrape down the sides. (Add more water to desired consistency as needed. Taste and adjust seasonings.)
Pasta Bake
Once the pasta is al dente, drain the cooking water. Add cooked pasta and broccoli to the skillet (which you used to cook the onion so you don't need to rinse it). Pour the vegan cheese sauce over the pasta and toss to combine. Sprinkle with dairy-free cheese or crumb topping as desired and bake for 10-15 minutes or until the cheese has melted. 
Remove from the oven, sprinkle with vegan parmesan and fresh herbs
