  • Happy Sunday beautiful people! 😺 What fruit are you loading up on now that the end if summer is fast approaching? I've been loading up on watermelons, blueberries, blackberries and strawberries. πŸ‰πŸ“ Also been having peaches and figs whenever I can find good quality ones, whether at the grocery store of by foraging. Do you forage?

Then there are the PEARS!🍐My in-laws have a neighbor who has a pear tree. He invited them to pick however many they like since the tree produced tons of pears this season. Which is how I ended up with a ridiculous amount of ripe, gigantic and insanely juicy pears this past week. Right away I knew I wanted to make some overnight oats with a caramelized pear compote and man did it turn out good! PEAR-FECTION! πŸ’šβœ¨ *
I also want to give a huge thank you to @performancenutbutter for sending me some of their delicious product to try! 🀀πŸ₯° I love the fact that there are only 4 ingredients, all of them wholesome and nutritious (macadamias, coconut, cashews and sea salt) and that they use my top 2 favorite nuts (seriously what's better than MACADAMIAS and CASHEWS?!?) 🀩 My husband is completely sold and has legit been just squeezing the stuff out of the packets into his mouth. 🀣

Details: in my bowl are overnight oats made from old-fashioned oats (1Β½ cups), soy milk (1 cup), nonfat Greek plain yogurt (1 cup), caramelized pear sauce (1 cup) and chia seeds (2 tbsp). Topped with blackberries, grapenuts and @performancenutbutter. πŸ˜‹

πŸ’  INGREDIENTS FOR THE CARAMELIZED PEAR SAUCE‡️
πŸ”Ή2 cups pear, peeled and diced
πŸ”Ή1 cup water
πŸ”Ήβ…“ cup sweetener of choice (I used cane sugar)
πŸ”Ήβ…“ cup nectarine, diced (optional, I used it for a fruitier flavor)
πŸ”Ή2 tsp cinnamon
πŸ”Ή1 tsp vanilla extract
πŸ”ΉΒ½ tsp sea salt
πŸ’  METHOD‡️
πŸ”ΉIn a pot combine together all the ingredients, cover and bring to a boil.
πŸ”Ή Uncover the pot, lower to medium heat and simmer until the sauce in reduced to a caramel consistency and the pear chunks are golden and tender.
πŸ”ΉEnjoy warm on top of pancakes or waffles or mix into your overnight oats. 😎

    Carl's Jr. was having a 2 for $5 special on the famous star burger so with the beyond burger upgrade it was only $9! I got one with guacamole, and the other I put on vegan mayo, and homegrown smoker BBQ sauce I still had from yesterday! πŸ”πŸŸπŸ˜‹

  • This Vegan Breakfast Sausage is pretty good. 
I wanted to try it out. It's kinda expensive so I won't be getting it again for a while, but it's just something different. 
I had some of these with vegan pancakes. It was a really nice breakfast.

100% recommend @veganwaf - I was so happy I got to experience a Belgian waffle. That chocolate sauce though. 😭😭😭😭😭😭

Come to think of it, this was the only food we had out and about in Brussels because the choices weren’t great (the ones we did find were super expensive) so this was easily the best thing we found! πŸ’•πŸŒ±

  • Seattle, WA-based food technology startup Rebellyous (previously known as Seattle Food Tech) has created innovative production technology that aims to make plant-based chicken nuggets as quickly and affordably as animal-based products from factory farms. According to the company, plant-based meats can be two to five times more expensive than meat produced on a factory farm, which means the people and institutions that would benefit most from having plant-based optionsβ€”such as cafeterias, hospitals, and military kitchensβ€”can’t afford them. Rebellyous is hoping to close the gap with its groundbreaking, production methods to increase volume and lower the price of its vegan chicken nuggets, patties, and tenders to effectively replace animal-based meat on a large scale. The goal is to offer its vegan products to the food-service sector and its proprietary machinery to other plant-based companies to help scale their production. β€œMeatless nuggets used to be half as delicious and twice as expensive as chicken,” Christie Lagally, Rebellyous founder and CEO, said. β€œAt Rebellyous, our mission is to flip the script and make plant-based meat that is better than animal meat in every way, from price and convenience to taste and nutrition.” Earlier this year, Rebellyous debuted its flagship crispy nuggetsβ€”made from textured wheat, chicken-less flavoring, cornstarch, oil, and corn breadingβ€”at Seattle-based hospital Swedish Medical Center.
