  • We were looking for Soy Milk available in the supermarket and decided to try this one from @vitasoyph

We looked them up if it's all vegan. Turns out Vitasoy used to be a not vegan-friendly soy milk. They did a great move and reformulated their formula for all the soy drink flavours to be vegan-friendly!

It is sweeter compared to other soy milk and best for Filipino families with kids transitioning to nondairy milk  or anyone who prefers their milk sweet.

  • Salad bliss in our home. This one is fresh, tangy and sweet. A bed of mixed baby greens topped with sugar snap peas, grapefruit, beets, pomegranate, 🥑, honey crisp 🍎, and dill. I drizzled it with @motherraw caesar dressing (so delish). And... I sadly forgot the pistachios... next time! #saladbliss #rawfood #saladqueen

  • Sundays are my favorite because I get to experience the presence of God and community at church, and then have my afternoons with my beautiful friends. 🖤 I am learning to create balance with working and being a full time pre med student. It’s a challenge, but it has become a priority to me. Mixing in some fun moments into the hustle and grind, truly cultivates more peace and joy. 💛✨

  • 🍫🥥 Coconut Almond Blondies 🥥🍫
1 cup coconut flour
1 cup whole wheat flour
A pinch of salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup chunky almond butter
1 tbsp coconut sugar
1/4 cup maple syrup or agave
3 tsp vanilla extract
1/4 cup almond or coconut milk
Optional: 1/2 cup chocolate chips (I chopped up a whole bar of Baker’s German’s Sweet Chocolate)
Instructions:
• Preheat your oven for 350ºF and grease your pan with coconut oil or use parchment paper.
• Combine all the ingredients in a bowl and mix until well combined. Your mixture should look like cookie dough, it shouldn’t be too crumbly or runny. You can fold in some chocolate chips if you want.
• Spread the batter evenly in the pan and bake for 25-30 min. 
Let it cool and serve 👩‍🍳

  • My meal prep looks so different this Sunday! I will be following the vegan nutrition plan. I followed the lacto-ovo-vegetarian this past week to make a slow transition to the vegan plan & I've felt AMAZING!! Totally going to be a challenge but WTH... bring it on 🍃🙌 Just doing this for fun and to proof that I CAN do it 💪

  • butternut squash chickpea pasta🌿 
Im not a vegan but I love a good plant based dinner.

1 cup chickpea pasta 
sauce- boil and simmer 1/2 bn squash, 1 potato, 2-3 carrots and celery sticks, handful of cilantro and 2 garlic cloves 
blend and pour over pasta w/ salt pepper and pumpkin seeds, enjoy😊

  • HI remember when I went on my story and said I had a VERY LARGE goal for 2020 but needed some time to tell the internet? Because once I do there’s no backing out?

IM GOING TO RUN A MARATHON.

Not anytime soon because i am *very* out of shape cardiovascularly, but I have officially begun running.

The reason I want to run a marathon is because I am bad at running. I’ve never enjoyed running or been good at it. In fact, I have never run a mile without stopping for a break/to walk.

I’m in a place mentally where I need to prove to myself that I can do anything I set my mind to. A marathon is perfect for that because I am literally starting from the beginning. I’m going to turn something that I’m very bad at,  into something that I can do somewhat well.

I’m EXCITED. I’ve never set a goal this large, but IM GONNA DO IT. (I’m screaming @ myself not at you hehe). Bye ily have a great Sunday 🌱

  • veggies on veggies on veggies aaaaand superfood burgers 😍 my babe and i have been upping our veggie game even more since he started reading “how not to die.” it’s been super informative & i’m definitely reading it next!! so for these delicious savory superfood burgers, here’s what you need.
in a bowl, mix:
2 and 1/3 cup cooked quinoa
1/3 cup oat flour
1/2 tsp ground turmeric
1 tbsp chili powder
1/2 tsp sea salt
4 tbsp buffalo sauce- i used @tessemaes 
1/4 cup flax meal
fold in 1 cup of grated sweet potatoes and 1 cup of finely chopped bell pepper
form into thick patties and slightly flatten.
bake at 375 for 30 min!
