  • ⁣Baby Shower Parfaits🍓⠀

Made these parfaits for a baby shower…yogurt topped with berries, pomegranate seeds & homemade granola served in a petite au gratin dish.⠀

Since this “granola” doesn’t have any grains, I’ve named it NutNola. I’m actually a fan of whole grains, including oats. But, since I like to top my overnight oats with something crunchy (like granola), it seemed a little redundant to top overnight oats w/oats 🤪.⠀

This actually bangs:
.
- Get some potatoes in a pan of boiling water and cook until soft ~ 20 minutes.
- While the potatoes are cooking, get a pan on the heat with a bit of oil in and add in some chopped onion and diced carrot and swede. Cook until soft ~ 6-8 minutes.
- Once that’s soft, add a clove of garlic (I used @verylazyfooduk), some lentils - I used a mix of lentils, peas and barley, season with salt and pepper and add a small bottle of wine (make sure it’s vegan because a lot aren’t) and a litre of vegetable stock.
- Add in some rosemary and thyme.
- Cover and simmer for 30 minutes. If it needs more liquid, add more water or even another mixed up stock cube.

- Drain the potatoes, season with salt and pepper, add a dollop of vegan butter and mash until smooth.
- Add spring onions into the mashed potato and add some oat milk if you want it a bit more creamy.

- Transfer the lentil mix into a casserole dish.
- Add the potato on top and use a fork to spread it out evenly.
.
- Put it in the oven for 20 minutes on 200.
- Switch the oven to grill setting.
- Sprinkle cheese on top (I used @applewood_cheese, which I picked up in Asda and it was really nice and smoky).
- Finish it off until the cheese melts.

ENJOY!

That’s the first vegan meal I’ve had which is comparable to the meat version and I actually really enjoyed it.

Tried to do a story of making this but our internet is misbehaving 😩😭....so here’s the recipe:

In 100ml glass spray bottle add:
20 drops Tea Tree Essential Oil
20 drops Lavender Essential Oil
A squirt of Witch Hazel
Top up with water

This stuff works....
We’ve had another message round to say the little critters are back at my little ones school...I apply this every morning before leaving to keep the blighters away.

  • Sweet Potato Choco-Chaga Cookie Bites (SUHHH...) ✨🍪🍠🍫😋 More healthy dessert-spo for our Malama Recipe Challenge. Mostly because we’re very, very hungry. All of the timesss. ——————————————————————— ⚡️What you’ll need //
-2-3 small sweet potatoes (we used Okinawan, cuz prittyyy)
-2 TBSP Malama Mushrooms Cacao Chaga mix (or mushroom mix of choice)
-1/2 Cup Coconut butter (we used @artisanaorganics)
-1 TBSP Maple syrup (or sweetener of choice)
-3-4 TBSP Nut butter (we used one @artisanaorganics cashew butter and one almond butter packet)
⚡️Garnish //
-Dash is Sea Salt and handful of crushed Walnuts
—— Directions: 
Slice sweet potatoes into quarter inch cookie rounds (picture two) and bake at 350 for 15 minutes. Let cool for 20 minutes (or put in freezer for a bit). Then dollop nut butter on each cookie. For Malama Choco-Choco topping, mix 1/2 cup of coconut butter with 1-2 tbsp of Malama Chaga Cacao mix (depends on how rich you like it 💰) and 1 tbsp of maple syrup. Mix until color is consistent throughout. Then dollop chocolate spread onto each cookie as generously as you please 🤙 Garnish with sea salt and crushed walnuts (or get creative with your own toppings! Coco flakes, chia, hemp, goji, dates, etc.) and voila!  Enjoy these guilt-free cookies packed with vitamins and minerals, healthy fats, and fung-tional superfoods! 😊

  • HI remember when I went on my story and said I had a VERY LARGE goal for 2020 but needed some time to tell the internet? Because once I do there’s no backing out?

IM GOING TO RUN A MARATHON.

Not anytime soon because i am *very* out of shape cardiovascularly, but I have officially begun running.

The reason I want to run a marathon is because I am bad at running. I’ve never enjoyed running or been good at it. In fact, I have never run a mile without stopping for a break/to walk.

I’m in a place mentally where I need to prove to myself that I can do anything I set my mind to. A marathon is perfect for that because I am literally starting from the beginning. I’m going to turn something that I’m very bad at,  into something that I can do somewhat well.

I’m EXCITED. I’ve never set a goal this large, but IM GONNA DO IT. (I’m screaming @ myself not at you hehe). Bye ily have a great Sunday 🌱

  • Spaghetti Lovers Soup ❤️🥣❤️🥣❤️Noodles in a creamy tomato soupy sauce. I pureed some white beans with cashews for the cream for some extra dairy-free deliciousness. Hope you enjoy... I know my daughter did I caught her licking the bowl 😂💗 What you Need:For The Bean Cream: 1-15 oz can of Cannellini beans drained & rinsed, 1/4 cup cashews (soaked 2 hrs to soften if you do not have a high speed blender), 2 tbl nutritional yeast, 1 cup veggie broth, 1 tbl apple cider vinegar, 2 tsp neutral oil, 1/2 tsp salt For The Soup: 2 tbl olive oil, 2 tbl vegan butter, 1 yellow onion finely chopped, 2 carrots finely diced (1 cup), 3 celery finely diced (1 cup), 2 garlic cloves minced, 2 tsp tomato paste, 1 tbl coconut sugar, 1 tsp crushed red pepper, 2 tbl Italian seasoning, salt/pepper, 28 oz crushed tomatoes, 1 bay leaf, 2 cups veggie broth, 9 oz spaghetti Soup Toppings: 1/4 cup chopped parsley, 1/4 cup chopped basil 
1️⃣In a blender combine cream ingredients, blend in high till smooth. Set aside
2️⃣Heat oil/butter on high, then add onion, carrot, celery, heat on med/med low for, add some salt/pepper, cook until onion is translucent & veggies have shrunk up a bit about 5-7 min. Then add seasoning, cook 2 more min until you smell a nice aroma 
3️⃣Add garlic & tomato paste, mix until veggies are all coated &paste darkens heat 2 min.Then add sugar, crushed tomatoes, veggie broth, bay leaf, & white bean cream. Bring to a boil then simmer on low 20 min with pot covered, stirring occasionally 
4️⃣ While sauce is simmering, cook spaghetti in well salted boiling water till al dente. Reserving 1 cup pasta water before draining 
5️⃣Remove bay leaf from soup, adjust seasonings, you can blend soup with immersion blender for a smoother broth, add reserved pasta water to adjust thickness. Divide pasta into bowls. ladle over soup, add fresh herbs if desired. Enjoy!!

This weeks SBWS is all about veganising the classic Rolo bite with just a few kitchen staples. Rich vegan milk chocolate casing and by using the beautiful soul @emflower.x recipe we have the stickiest caramel center - a Rolo lovers dream if there was such a thing. 🍯⁣
These take around an hour from start to finish and are a perfect little chocolate bite so pop your apron on and let’s get baking. 👩🏼‍🍳🍯🍫⁣

Ingredients -⁣
Chocolate casing:🍫⁣
100g dark chocolate⁣
100g white chocolate⁣
Start by adding 50g of both the white and dark chocolate bar to a bowl and melt in the microwave in 30 second bursts. Combine well and spoon 1-2tbsp of the chocolate mix into the segment mould ensuring you evenly cover the bottom/sides and transfer to the fridge for 10 minutes. ⁣

Caramel center:🍯⁣
180grams butter⁣
200grams golden syrup⁣
100grams caster sugar⁣
180grams brown sugar⁣
150ml plant milk⁣
Add all the ingredients to a saucepan over low heat and heat until the sugar has dissolved and the butter has melted. Once everything has melted, stop stirring the mixture and allow it to come to a boil. Let it boil until it reaches 115’C/240’f and then remove from the heat. You now need to stir the mixture of 15-20 minutes until it thickens significantly, its like stirring for your life but trust me it’s worth it. After the mixture has thickened, remove the chocolate mould from the fridge and drizzle in 1tbsp of the caramel into each segment. Repeat until you’ve filled each mould then place back in the fridge for the caramel to set, roughly 8-10 minutes. ⁣
Once the caramel has set, remove the mould from the fridge and melt the remaining white/dark choc. Once melted, drizzle this over the caramel ensuring you’ve evenly covered each segment and the place back in the fridge for 10 minutes. ⁣
Once the chocolate top is firm to touch, remove from the mould and Ta dah! ⁣
