Recipe:⠀
Sauté 1 small white onion (small dice) in 1 tbsp neutral oil until translucent, about 5 minutes. Add 3 minced garlic cloves and 1 tbsp finely grated ginger.⠀
Sauté until fragrant, about 30 seconds. Add 2 tbsp Thai red curry paste and keep mixing on medium heat, about another minute.⠀
Add 1-15oz can coconut milk and 1/2 cup water and stir. Add bite-size broccoli florets (or other quick-cooking vegetables) and extra-firm tofu (3/4 inch cubes) and simmer until broccoli is fork tender. Remove from heat and stir in 1-2 tbsp tamari/soy sauce, 1 tbsp fresh lime juice (or to taste), 1 tsp sriracha (optional) and salt to taste. (Add a little brown sugar if desired.)⠀
Topped with cashews, red chili flakes, sesame seeds, fresh basil. Served with zoodles and brown rice + millet ramen.⠀

  • Roasted Tomatoes & Pepper CREAMY PASTA! 📷 by @amelietahiti 🚨🚨Recipe: serves 2 :
Sauce:
2 big ripe tomatoes
1 bell pepper
half zucchini
100g (4oz) firm tofu
handful cashews (can be roasted)
salt
shallot powder or onion
olive oil
Topping:
Pine nuts,
Basil
100g (4oz) tofu scrambled

Around 200g (8oz) raw pasta

Method:
1. cut in half tomatoes & pepper (remove seed and white part)
2. sprinkle salt & powder & good dose of olive oil, ensure it’s well coated
3. Roast 25min on the grill or 20min at 200C (375F). Veg should be brown! Meanwhile cook your pasta then drain. Wait a little cool down from the veg.
4. Add all remaining sauce ingredients to the blender (zucchini adds bit of water and your greens ) - BLITZ on high speed - taste and adjust salt
5. Pour over pasta, then serve in a bowl & prinkle more tofu & pine nuts and basil

Ramen bowl with crispy tofu ⁣
Recipe (yields 3-4 servings)⁣ By: @woon.heng⁣

I N G R E D I E N T S / I N S T R U C T I O N S ⁣
⁣
Kombu dashi⁣⁣
~8 caps of shiitake mushrooms⁣⁣
~2oz dried kombu, clean with a slightly damp towel⁣⁣
In a pot with 8-10 cups of water, place both ingredients in & turn on the heat. Right before it comes to a hard boil (a crucial step to prevent the stock from turning slimy), turn off heat & drain stock to a bowl, set aside. Save leftover in a jar, if needed. ⁣
⁣⁣
Ramen broth (may prep ahead of time without milk, inspired by justonecookbook.com)⁣⁣
~ 6-8 stalks chopped scallions, white & green parts separated ⁣⁣
~ 1.5 tablespoons grated ginger⁣⁣
~ 1 tablespoon finely minced garlic⁣⁣
~ 4 tablespoons ground sesame seeds ⁣
~ 1 tablespoon *hot bean sauce/paste 'doubanjiang'⁣ or non spicy for no heat ⁣
~ 1 tablespoon white miso paste⁣⁣
~ 4 cups of ginger miso broth (used trader joes brand or replace with more kombu stock)⁣⁣
~ 4 cups kombu stock⁣⁣
~ 1-2 cups of unsweetened plant based milk (used cashew)⁣⁣
~ toasted sesame oil ⁣
⁣In a heated pan with 3 tablespoons sesame oil, sauté white part of scallions, garlic & ginger until fragrant. Add miso broth, kombu stock, miso paste, hot bean sauce, ground sesame seeds & let simmer for 5-10 mins. Blend mixture (optional). Season accordingly with miso/bean sauce. Then add in milk, stir until well combined & turn the heat off.⁣
—-> Other ingredients⁣⁣
•Noodles of your choice - cooked based on package instructions⁣ • 1 pack firm tofu, drained & cut into cubes. Then, dip tofu cubes in cornstarch & fried, season with salt⁣. Sautéd mushrooms from kombu stock & chopped scallions (green part)⁣ & sesame seeds⁣
Serve warm, enjoy! 🍜⁣

This is a new try for me, but it worked so well (was quick too) and tasted SO GOOD! Stir fry’s of any kind are really fool proof, cos as long as you have fresh ingredients and a good sauce/seasoning - you’re good to go! 🙌🏼

So for this beaut I used:
▫️ Half a block of @tofooco smoked tofu
▫️ Mixed peppers
▫️ Mushrooms
▫️ Courgette
▫️ Then once they were all cooked up I added in a tbsp of garlic black bean paste (from the Chinese supermarket) and a splash of water. Then fried it all off for another 2-3 mins until it looked goooood.

🍚 Then ofc all served up with 3/4 a pack of @tildarice egg fried rice and a bit of sweet chilli sauce too! 🍚

And that’s it 🤓. I also thought I’d mention that apart from bootcamp this morning, I’ve had a pretty sedentary day - but have been huuuuungry (actual hunger not boredom)! When this happens it’s SO IMPORTANT to listen to your body, forget calories and feed it... within reason ofc. It is cleverer than us and I know that my brain has been working HARD 🤟🏼
