  • 🏮Delicious dumplings soup 🥟- ⁣
Recipe (makes about 30 dumplings)⁣
🌱Ingredients:⁣
~ wonton wrappers, thawed to room temperate⁣
~ 1/2 lb bok choy + 1/2 lb Napa cabbage, cleaned & separated by leaves⁣
~ 1 King oyster mushrooms, finely chopped⁣
~ 1 small carrot, finely chopped⁣
~ 1 teaspoon grated ginger⁣
~ 2 cups veggie stock⁣
~ oil, toasted sesame oil, salt, white pepper⁣
⁣
✅Bring a pot of water to boil, add a drizzle of oil & pinch of salt. Blanch bok choy & cabbage for 5 minutes & transfer them to an ice bath, then drain well. When it's cooled to handle, squeeze out all liquid & finely chop the veggies (be sure they are not too wet so it won't break the wrapper when assembling).⁣
✅Meanwhile, sauté chopped mushrooms with a little oil until fully cooked & fragrant (if other mushrooms are used, please be sure to drain out the liquid).⁣
✅Place chopped veggies, mushrooms, carrots & grated ginger in a bowl. Season with salt, toasted sesame oil & white pepper.⁣
✅To make the dumplings, place 1 teaspoon of filling in the middle of the wrapper & press to seal . Bring a pot of water to boil & using a slotted spoon, slowly drop the dumplings in. Cook dumplings over med-high heat until they float up & let them stay afloat for another 1 min. Spoon dumplings out into a bowl. Season veggie stock with salt, white pepper & mushrooms seasoning. To serve, ladle warm stock over dumplings, top with more veggies, scallions & drizzle of toasted sesame oil😋

This easy to prepare wholesome dinner is one of my favourite go-to recipes after a long day where all I’m craving is something flavoursome and filling that won’t take me hours to prepare. Despite calling for only a handful of ingredients, it is one of the most flavoursome dishes you can have, and is a nutritionally complete meal, bursting with protein, fibre, phytonutrients, and healthy carbohydrates. 👌⁠⠀

Miso paste is an Asian seasoning made by fermenting a mixture of soybeans, barley, brown rice and/or several other grains with a fungus, Aspergillus oryzae.🇯🇵 This process produces a smooth-textured paste with a strong, salty flavor. Despite its relatively high sodium content, research has shown that miso does not affect our cardiovascular system in the way that other high-sodium foods sometimes can, and is actually one of the healthiest fermented foods you can eat. ⁠⠀

Makes: 4-6 servings ⁠⠀
Time taken: 40 mins ⁠⠀
⁠⠀
Nourishing Ingredients 👇⁠⠀
• 4 eggplants (about 1.5 kg)⁠⠀
• 6 tbsp garlic infused extra virgin olive oil ⁠⠀
• Green tips from 8 spring onions, thinly sliced ⁠⠀
• 2 tbsp crushed fresh ginger⁠⠀
• 3 tbsp mild brown rice miso paste⁠⠀
• 200 ml low-sodium (preferably homemade to avoid onion & garlic powders) vegetable stock⁠⠀
• 1 tbsp rice wine vinegar⁠⠀
• 2 tbsp tamari (wheat free soy sauce)⁠⠀
• 10 drops of natural stevia⁠⠀
• 400 g organic Soba noodles⁠⠀
• 1 cup walnuts, lightly toasted & roughly chopped⁠⠀
• 1 organic Bok Choy (or any Asian green of your choosing), washed and roughly chopped⁠⠀

  • Been home alone today😁 so a super quick lunch was in order. This super simple  Mushroom pasta was a quick fix but oh so delicious. Literally done in time the spaghetti was cooked. So I’d say, 15 minutes job. I put in the story the quick method so you can see how easy it is. And grab the recipe on the blog. Click Link in Profile, then the photo. Will take you directly to blog post. 
Now I’m gonna settle down on the couch with a blanket and my laptop to write up a few more recipes that have been making in last days for my cookbook.

E danas mi je baš trebao ovako brzi i fini ručak: Super jednostavna pasta s gljivama. Gotova za 15 minuta, taman dok se špageti skuhaju. Recept je na blogu zajedno s mojim savjetima o tome koju pastu koristiti ako izbjegavate pšeničnu, a u storije sam stavila postupak da vidite koliko je jednostavna za napraviti. A sad ću se fino smjestiti na mom novom kauča s dekicom i kompom i idem napisati (prepisati iz bilježnice😁) još par recepata za kuharicu koje sam radila zadnjih par dana.

1 small avocado
1/2 cup frozen blackberries 
1/2 cup frozen mixed berries
1 frozen banana
1/4 cup frozen scoop able açaí 
3 tbsp blueberry almond yoghurt
3 un-sulphured dried apricots 
Blend until pink/purple
Spoon into bowl, top with granola, yog, berries, a drizzle of almond butter, dark choc chunks & a chocolate drizzle too. Have a great day ❤️

My latest experiment is a freshly baked treat that packs in a fruity🍊punch!

What’s inside this terrific tart?
.
Each slice merges the sweetness of strawberries 🍓with the tartness of grapefruits🍊, that’s nestled inside the plant-based 🌱crust.
.
You’ll also taste hibiscus powder🌺that enhances the whole experience.
.
Ingredients:
Crust:
• 1 cup GF oat flour
• 3/4 cup almond meal
• 4 tbsp organic coconut oil
• 1 tbsp pure maple syrup
• Pinch of cacao powder
• Pinch of salt
Filling:
• 1 cup fresh strawberries
• 1 cup grapefruit juice
• 1 ¼  cup full fat coconut cream
• 1/3 cup pure maple syrup
• 1 tsp hibiscus flower powder @cakeup24
• 2 tsp agar-agar powder
Method
1. Preheat oven to 180ºC .
2. Grease your tart tin.
3. Combine the dry ingredients in a food processor to make the crust.
4. Add the wet ingredients and pulse until you get a moist moldable mixture.
5. Assemble the crust by firmly pressing the mixture into the bottom and on the sides of your tart tin.
6. Bake till it turns golden brown. (15 mins)
7. Let it cool on a wire rack while you make the filling.
8. Chuck the strawberries in the blender to make a puree. Add the grapefruit juice and blend.
9. Strain the juice through a mesh sieve and pour it into a saucepan.
10. Boil the juice and coconut cream before adding the rest of the ingredients.
11. Keep stirring till the agar powder dissolves.
12. Let the mixture boil (approx 30 secs).
13. Then strain it through a mesh sieve.
14. Cool it for 10 mins before adding it to the tart.
15. Refrigerate for a few hours.
