  • I ate this last night while watching the GoT finale, a slow cooked filling seemed appropriate for a show that’s been carrying viewers along for a decade. I was satisfied with the ending... but way more then satisfied with this incredible heart warming pie. It’s not a health food but you asked me to share it... so here it is! You can make the pastry way healthier or make it as a potato topped pot pie if you want to lighten it up. It’s all about that rich tomato based filling warming your soul... so tell me who watched it? I often get asked about if gluten free breads🍞 are "good". To be honest- most aren't. So many have a million ingredients or bad oils, etc.
My rule of thumb is:
- Simple ingredients that you can pronounce!

Otherwise, you'd actually be better off eating regular organic sourdough. If of course you're not celiac 🙋‍♀️ Being celiac, I personally think we are SO lucky with all the options we have. But if you aren't celiac, and avoiding gluten, its important to still look for quality ingredients.

Gluten free does NOT = Healthy

Healthy = REAL food that we can pronounce and our bodies recognize🌱

  • She gets the skins 🥰. Making this salad was a huge accomplishment today. My son was home today with a fever, and needing me way more than usual, but I was determined to make a really good home cooked meal. So between holding him and managing a very eager home bound puppy, I was very proud that this came together. It’s the wild salmon taco bowls from the brilliant Sara of @sproutedkitchen. 
For those who are wondering, I do eat wild salmon (not farm raised) from time to time. Through genetic testing I have found out that I have a higher risk for developing dementia and Alzheimer’s and therefore need to be very diligent about eating lots of omega 3 fatty acids. While I do take a supplement, I have decided that it was important to incorporate wild salmon into my diet. For those who have similar genetic risks, I also started taking a curcumin supplement and pomegranate supplement. People always seem to fear getting genetic testing for the reason of finding out something is “wrong”, but for me it has been empowering. I’m glad to have the knowledge so I can start working on prevention now. Although the one thing I just can’t seem to try yet is cold showers... so good for brain health but, so, very, cold!!! 🥶

One of my favorite tips to share with clients around how to eat healthier is all about adding more color on your plate.⠀

Fun reason: It makes meals more fun and enticing to eat.⠀
More science-y reason: What gives produce their specific colors are different vitamins and minerals that give your body a bigger variety of the vitamins and minerals your body needs.⠀

For the next few days, check out the colors in your meals. How many colors do you have in your meals? Do you only have shades of one color or are you mixing up with lots of different colors?⠀

See if you can work up to at least 3-5 different colors in your meals after you get an idea of what your plate looks like now. Summer produce is also starting to trickle in, which means even more opportunity for amazing color.⠀

  • Perfectly seared sea scallops with homemade basil pesto. 
When it comes to cooking scallops, we are always looking for that famous crust on the outside and that tenderness on the inside. I am sharing step by step recipe to how to get that restaurant style seared scallops.

For the scallops:

INGREDIENTS:

1/2 Lb. scallops
1 tablespoon olive oil
2 tablespoon unsalted butter
Salt and freshly ground pepper to taste

STEPS:

Heat non-stick skillet over medium high heat.
Pat dry the scallops with paper towel, season with salt and pepper and drizzle with olive oil; sear for about 3 minutes or until golden brown, then turn and sear for another 2 minutes. Add the butter and start spooning over the scallops until cooked for about 1 more minute.
Remove from heat and top with fresh thyme.

For the homemade basil pesto:

½ cup grated parmesan cheese 
3 handful fresh basil
2 tablespoons  pine nuts
½ cup olive oil more if needed
4 large garlic cloves
Sea salt to taste

STEPS:

Combine all the ingredients in food processor and purée until a smooth paste is formed.

I don’t think others would really argue that....{i do try to be mindful how i express my thoughts and while i love animals this is not meant to be an activist post — just food for thought and maybe a little insight 💭}

  • today I wasn’t hungry until 1:30 pm. so, I did something crazy and I didn’t eat. i checked emails, drove to boulder, went to an intense HIIT workout, showered, and then finally, i ate. some would tag this “unhealthy”. some would also say the same thing about when I wake up starving at 5 am and eat. my opinion? who cares what others think. you know your body better than anybody else and listening to your own signals is more important that the societal norm. (aka. you do you boo) 
when I did get around to eating i came in hot with this breakfast bowl. one @blueskyfamilyfarms scrambled egg sprinkled with dill+ 1 @sietefoods cassava tortilla + kale sautéed in avocado oil & coconut aminos + @wildbrine mild turmeric kimchi + an avocado filled with @falafelkingbouldercolorado hummus. again, some would say a crazy flavor mash up, but I say a harmonious blend of deliciousness 🤭

  • broiled salmon for dinner 👌🏼 I finally figured out an easy way to make salmon taste guuuudd. Here is how I did it:

Heat a cast iron skillet to medium high heat. drizzle on some avocado oil or evoo. Heat the oven to broil. Place a fillet of salmon skin side down on the skillet. Squeeze the juice of 1/2 a lemon + season with plenty of salt and pepper. Cook for a few minutes until it is cooked halfway (you’ll see this on the side of the salmon). Place the skillet in the oven and broil for 4 minutes. Ta-daa👏🏼

I paired it with mixed greens + sliced cucumber + cherry tomatoes + avocado + maple tahini sauce (2 TBS tahini + 1 tsp maple syrup + 1 tsp apple cider vinegar + 2 tbs water-mix all together). I’ll be making this one all summer long 🌞
