  • Celebrated Friday with a pizza on Commercial drive 😋🍕 The style of this pizza is SO THIN and flimsy, it was hard to hold but tasted very good! And because it was so thin I had no problem finishing it all 😂 It was $15.95 plus $1.5 for truffle oil, pricey but I guess it's because of the location. There are so many pizza places on Commercial drive though, so I'd love to visit a different one next time to compare.

  • Late night vegan eats! I'm a true foodie and I don't think I could ever adopt a fully restrictive diet.  HOWEVER, when I'm home I do tend to consume mostly veggies and fish.

Tonight I was craving something light on the stomach but heavy on the palate. I saw a quinoa recipe online and made a few adjustments. My recipe calls for the following:
*Organic Quinoa *Organic Kale
*Organic Carrot Strips *Organic Broccoli Crowns
*Orange Beets
*Sundried Tomatoes *Minced Garlic *Salt, Pepper, & Garlic Powder

I rinsed 1 cup of quinoa then boiled it with 1 cup of water with salt and then simmered for 15 minutes until done.

While the quinoa why was cooking I put the kale, carrots, broccoli, and beets in a double boiler and steamed them for about 15 minutes. .
.
Once the veggies were done, I put them in a large glass bowl and tossed them with the quinoa and seasoned to taste. I then sauteed some fresh minced garlic and sundried tomatoes with olive oil for about 3 minutes and added them to the glass bowl mixture. And there you have it! A light yet flavorful vegan meal!
