  • Can I just put taco seasoning on everything? I got through it so much, I find it easier to just make my own....which I think is 1000% better anyway!!

  • Looks like a hot mess, tastes like super delicious. Curried chicken shepherd's pie topped with creamy, spiced mashed sweet potatoes. Start by sautéeing chopped onions, celery, carrots, cubed butternut squash, and fresh minced ginger and garlic in coconut oil over medium heat. Add the dried spices, (approximately) 2 Tbs. ground cumin and hot curry powder, 2 tsp. turmeric, powdered ginger, garlic, coriander, paprika, cumin seeds, and a few dashes of cayenne, plus sea salt and freshly ground pepper to taste. (I season this highly because the spices are delicious and good for you.) Add about 1.5 cups cooked chicken, 2/3 can of full fat coconut milk, and 1/2 C. water, stir to deglaze pan and then toss in some chopped greens and stems. I used Tubby Creek Farm Red Russian kale. Lower heat and cover to simmer until tender. Meanwhile, boil or steam two large sweet potatoes in salted water. When fork tender, drain and mash with remaining coconut milk, a few pats of butter or ghee, a tsp. cumin seeds, and S+P to taste. Top the veg and chicken mix with mashed sweet potatoes and broil under high for a few minutes to brown the top. Let cool only enough to keep your top layer of taste buds and then enjoy gratuitously.😁
