The basis is a sourdough, a little piece of yeast and a lot of time and LOVE are also a big part of baking a bread.
Altogether I needed more than 8 hours for this bread, but it was worth it. 
Very simple and really tasty.

  • Same loaf from the last post. 
This was 350g bakers flour and
50g stone ground whole wheat spelt, 280g water, 40g starter and 7g salt.
1 hr autolyse 
Bulk fermented overnight (12hrs)
Shaped in the morning then refrigerated for 3 hrs. 
I've been experimenting with autolysis at the moment. Autolysis or autolyse is when you mix only the flour and water together and let it rest for a certain amount of time before you add the salt and leavening agent. It develops the gluten before fermentation, therefore it helps with a lovely open crumb and many other benefits to the overall loaf.
In my opinion I don't think it absolutely necessary, it adds an extra step to the bread making process and you can still get a beautiful springy open crumb loaf without the extra step. But it's always nice to experiment though 😄

  • I might be a little obsessed with bread making now. My kitchen looks like I partied a little too hard. 🤷‍♀️ It's the most rewarding thing to have your own sourdough bread and all you used is water, flour and salt. Definitely would recommend it to anyone who is feeling a bit bored!

This the crumb from my last loaf, reckon this is my best loaf so far... Sourdough, with white, little rye and a little spelt.
.
300g flour - strong white with maybe 3% rye and 2% spelt.
76% hydration. 3 hour autolyse
25% levain. Hand mixed
2 x stretch/folds. 1 x lamination. 3 x coil folds
4.5 hours bulk fermentation 
Overnight cold proof
Baked from cold. 2 x ice cubes in the Dutch oven.

Elinizde mevcut olan mayanızı beslerken mayanız az ise eşit ya da iki katı un ile besleyebilirsiniz bu şekilde çoğalır.  Mayanız çoksa yarısı kadar un ile de besleyebilirsiniz. Yarısından az un ile beslemeyin aç kalır ölebilir.  Mayayı katı ya da sıvı oranda besleyebilirsiniz. Sıvı demek unla aynı miktarda su ilave etmektir. Katı beslemek ise %60 %50 gibi bir oranda su ilave etmektir. Sıvı beslerseniz daha sık beslemeniz gerekir maya daha çabuk acıkır. Katı beslerseniz haftada bir gün bile besleseniz bir şey olmaz. 
Katı ya da sıvı beslemek ekmeğin ekşilik oranınıda etkiler. 
Mesela 50 gr mayanız var 100 gr un 60  70 gr su ile besliyorsunuz bu katı kıvamda olur .
50 gr mayayı 100 gr un 100 gr su ile beslerseniz sıvı besleme olur .

  • Il lunedi è iniziato all’insegna di scartoffie e cose noiose 😑! Solo il pane ha reso il tutto meno pesante🙄😁! In questo periodo di solito panifico due volte a settimana, ho trovato la quadra per avere un pane buono e fatto in casa! La mia metodica prevede minimo sforzo per un risultato egregio; so bene che se coccolassi di più l’impasto potrei ambire ad alveoli mooolto più grandi....e magari certe volte lo faccio anche...ma diciamo che per il tempo che pretende, questo pane si difende bene☺️! Adesso più che mai (e per ovvie ragioni) utilizzo un lievito madre  liquido (li.co.li.) ma ho comunque eseguito test per un pane fatto con lievito di birra strepitoso.
Come dico sempre, per il pane NON SONO LE RICETTE a fare la differenza ma piuttosto METODICHE e REGOLARI ABITUDINI! Avere la padronanza sulla gestione dei lieviti (di ogni natura), in relazione alle farine scelte, è LA SVOLTA....questo tenetelo a mente! Comunque sto scrivendo un post che spero di pubblicare domani....va bene ❤️😜? E comunque tutto quello che faccio, lo faccio solo per uno scopo....capire le dinamiche su citate e condividerle per il piacere di farlo☺️🙏 .
