  • Time to get that bread ๐Ÿฅ– (literally). This bakery sells a variety of baked goods and bread including one of our personal fav, sourdough!! Their grilled cheese which comes with tomato soup makes it the ultimate comfort food (could use more cheese though) while thereโ€™s something especially tasty with their avocado toast. Oh and they also serve pretty good oat milk latte! Did we mention that we love the aesthetic of the place as well? #oafhmy

  • My first loaf ever. I am brand new to this and am not familiar with the terminology yet. Constructive discussion encouraged and appreciated. 
My starter was started Nov 6, 2019. It passed the float test prior to baking.

Methond:
I fed a 1:1:1 ratio to create my levain. 
Autoclayse 45 minutes
Kneaded by hand for 8 ish minutes 
I let it rise for 3 hours, folding every 45 minutes or so
I left it in the fridge overnight because work
When I got home today, I shaped and let it rise for 2 hours.
I did not heat my cast Dutch oven for long enough. Maybe 15 minutes at 450.
I forgot to score the top of my loaf.
I baked with the lid on at 450 for 20 minutes and the without the lid for 45 minutes.
I took the temperature quite a few times because first time paranoia.

  • There is no such thing as too much bread.

Do you know? You can store up fresh bread up until 1 month (or even 2 months) in the freezer. Please store it in a tupperware or a ziplock bag before it goes into the freezer. To serve, simply thaw your frozen bread then preheat using toaster oven or bread toaster or a pan.

  • These were the Sourdoughnuts from my stories today. 2 day cold proofed, with one final proofing before frying, then back to the fridge to firm up again. White and whole wheat flours, Eggs, Vanilla, Soymilk and Coconut oil makes a good light and fluffy donut. 
I will continue to experiment with this and share the Recipe of course. I managed to make 16 pcs of 60g dough balls.. okay 20 if you donโ€™t count the 4 iโ€™ve already eaten. ๐Ÿคฃ ๐Ÿฉ .
