  • Eine leckere indonesische  Bihun - Suppe 🍜

Zutaten:
🔸1 Stange Staudensellerie
🔸1 Stange Frühlingszwiebe
🔸1 Stange Lauch
🔸1 Paprika
🔸200 g Champignons, frisch
🔸1 Glas Hühnerbrühe (Fond)
🔸Sambal Oelek
🔸100 g Glasnudeln (Soeoen Laksa)
🔸500 g Putenschnitzel
🔸Sojasauce, Salz u. Pfeffer

👉 Putenfleisch in kleine Stücke schneiden. In einer Schüssel mit 3 EL Sojasauce mischen & in den Kühlschrank stellen.
👉 In der Zwischenzeit den Lauch, die Frühlingszwiebel & den Staudensellerie in dünne Scheiben schneiden. Paprikaschote in kleine Würfel/Streifen schneiden (eher dünn), die Champignons in dünne Scheiben schneiden.
👉 Einen großen Topf verwenden, etwas Öl in den Topf geben & das marinierte Fleisch anbraten. Gemüse zugeben & dünsten. Mit dem Fond ablöschen, noch etwas Wasser zugeben & mit Salz, Sojasoße und Pfeffer abschmecken. 1 -2 TL Sambal Oelek zugeben (vorsichtig, denn es wird durch das kochen noch intensiver & scharf) & ca. 25 Minuten kochen lassen.
👉 Glasnudeln in eine extra Schüssel geben & mit kaltem Wasser ca. 10 Minuten einweichen. Anschließend in die kochende Brühe geben (vorher gut abtropfen) und noch einmal ca. 2-3 Minuten mitkochen.

Wenn es draußen so kalt ist, steigt die Lust auf Suppen. Sie sind richtig lecker, machen satt und wärmen auch ganz schön.

Ich habe heute eine Augenbohnensuppe.
Zutaten für 2 Personen:
150g Augenbohnen (einweichen lassen), 2 Karotten, 4 Stangensellerie , 1 Zwiebel, 3 Knoblauchzehen, 1 Dose gehackte Tomaten, 40g Fadennudeln, 1/2 TL Oregano, Thymian und Chili, Salz, Pfeffer, 4 EL Olivenöl, Petersilie
1⃣Zwiebel und Karotten schälen, würfeln, Sellerie waschen und klein schneiden 
2⃣Zwiebeln kurz anbraten, Karotten und Sellerie dazugeben und alles weiter anbraten 
3⃣Tomaten, 2 Gläser Wasser, Salz, Pfeffer, Chili, Oregano,Thymian hinzufügen
4⃣vorgekochte Augenbohnen, Fadennudeln und Petersilie hinzufügen und 20 Minuten köcheln lassen 
5⃣mit Brot und Joghurt (vegan) servieren

  • ▪️MISO RAMEN▪️I literally squealed with joy when I saw that my Costco had brought back @lotusfoods organic millet & brown rice ramen noodles 🥳 All you ramen and noodle lovers out there, this is seriously the ramen hack of the century 🙌 Not only can you make a steaming pot of homemade ramen in under 30 minutes, it's got a ton less sodium and fat than the typical ramen you might order from a restaurant. The miso paste and soy sauce combine with the chicken broth to create that beautiful umami flavor we've all come to love and expect from the beloved dish. I used @betterthanbouillon roasted chicken base for my chicken broth. Feel free to use vegetable broth to make it vegetarian! 😋✌🏼

MISO RAMEN [Serves 2] 🍜🥬🥚🥢
.
-2 squares @lotusfoods ramen noodles, cooked according to package instructions -2 tbsp soy sauce
-2 tbsp miso paste
-4 cups chicken broth -2 stems of baby bok choy (cut in half or quartered)
-2 soft boiled eggs
-1 tsp Kirkland minced California garlic
-1/2 tsp @spiceworldinc squeeze ginger -*1 stalk sliced green onion for topping (optional)

FOR THE GROUND TURKEY
-1/2 lb @farmtofamily organic ground turkey (about 1/2 packet) -1 tbsp soy sauce
-2 tsp sesame oil
-2 tsp honey
-1 tsp rice wine vinegar -1/2 tsp garlic powder .
-In a bowl, combine all the ingredients for your ground turkey and mix.
-Heat oil to a pot under medium heat and add in your ground turkey mixture. Cook until no longer pink and use the side of a wooden spoon to break up the meat into small bits. Spoon out the cooked meat and set aside.
-Add some more oil to the pot and saute the garlic and ginger for just a minute until garlic is golden brown.
-Add miso paste and soy sauce and using a whisk, mix until miso paste is dissolved into the soy sauce mixture and there are no lumps -Pour in your chicken broth and once it comes to a low simmer, add in your bok choy and allow to cook for a minute.
-Divide cooked noodles to individual bowls then add in your toppings (eggs, bok choy, ground turkey). Ladle in the broth and top with green onion before serving.

  • I love having a leftover rotisserie chicken.
I always make broth out of it and make soup. Usually it’s simple chicken soup or chicken tortilla soup. However, sometimes I think outside the box and I create something new. And that’s how it was just the other day when I decided to make spinach and artichoke soup with chicken. 
I simply sautéed a yellow onion with some garlic, added some frozen artichokes, as well as frozen spinach. Strained the broth made out of rotisserie chicken into the soup and brought it into a boil. 
In the meantime, I shredded the chicken I got out of the cooked broth and added the chicken back to the soup. 
I added a whole block of cream cheese and cooked it on low until cream cheese has melted. 
I seasoned my soup with salt, pepper, some seasoned salt and a dash of nutmeg. 
It turned out absolutely delicious!

Für das Foodstyling unserer Suppe haben wir einen alten Klassiker verwendet: den „Schüssel in der Schüssel“ Trick. Dabei wird eine kleinere Schüssel, umgedreht in die eigentliche Schale gestellt. Die Suppeneinlagen lassen sich dann wunderbar auf der umgedrehten Schale platzieren und bleiben so an Ort und Stelle. ⠀
Insbesondere bei klaren Suppen, bei denen die Flüssigkeit sonst keinerlei Widerstand bietet, benutzen wir diesen Trick immer wieder gerne. 😊👍⁠⠀

  • Butternut Squash Carrot Soup
🧡🥕🍲
Nothing better than hot soup to warm you up this January
.
This creamy soup uses no cream, but sweet roasted vegetables
.
After roasting you can finish it in the blender or on the stovetop

INGREDIENTS:
• 4 cups butternut squash cubes
• 1 lb carrots
• 1 small onion
• 3 cloves garlic
• 2 tablespoons avocado or olive oil
• salt & pepper
• 4 cup vegetable broth
• 2 tablespoons maple syrup
• 1 teaspoon paprika powder
• 1/2 teaspoon cumin
• 1/8-1/2 teaspoon cayenne powder
• 2 cups cooked quinoa
• roasted pumpkin seeds
• cilantro

Instructions

Place the butternut squash cubes on one baking sheet. On the other one arrange the carrot pieces, quartered onion (leave the root part intact), and garlic cloves in skin

Drizzle everything with the oil and generously season with salt and pepper. 
Roast veggies at 400°F for 25-30 minutes until tender. Flip once after 15 minutes.

High Speed Blender Instructions:

Add broth, maple syrup, paprika, cumin and cayenne to the blender jar. Add the roasted vegetables (remove root end of onion and garlic peel)

Blend on high speed until super smooth and steamy (~ 5 minutes). Stovetop instructions:

Add the broth to a large pot. Add paprika, cumin, cayenne and the roasted vegetables and bring everything to a boil

Using an immersion blender puree the soup until completely smooth

Serve each bowl of soup with about 1/2 cup cooked quinoa for added protein. Top with roasted pumpkin seeds and cilantro leaves

Optionally, drizzle with a little coconut milk or olive oil.

    Blend on high speed until super smooth and steamy (~ 5 minutes). Stovetop instructions:

    Add the broth to a large pot. Add paprika, cumin, cayenne and the roasted vegetables and bring everything to a boil

    Using an immersion blender puree the soup until completely smooth

    Serve each bowl of soup with about 1/2 cup cooked quinoa for added protein. Top with roasted pumpkin seeds and cilantro leaves

    Optionally, drizzle with a little coconut milk or olive oil.
