2 large onions , I use the cannon ball ones ( blitz to a pulp )
1 heaped tbsp tomato puree
Tin of chopped tomatoes ( blitz smooth )
1 rounded tsp coriander powder
1 rounded tsp cumin powder

1 lge bunch fresh coriander ...
Method
Spray a pan with low calorie cooking spray and place over a low / medium heat.
Blitz the onions to a pulp in a food processor . In a deep non stick sauté pan gently cook off the onions, this will take a little bit of time but is the base flavour of the curry . Stir frequently so they don’t catch and burn as this will make the curry bitter .Add a splash of water if the onion is sticking . Once the onion starts to deepen a little in colour add the garlic and ginger . Cook for a further 5 min or so if need be adding a tiny amount of water when needed to stop burning .
Next add tomato puree stir through and then add coriander powder, cumin, garam masala, salt, chilli and stir well , cooking spices through for a few minutes. Blitz the tin of chopped tomatoes in food processor and add to the pot. Also add the coconut milk ,ketchup, and Walden Farm pancake syrup. Next add fresh coriander and mint sauce . If too thick add a splash of water from the kettle and simmer over a medium heat for about 15 minutes.
Transfer the sauce to a food processor and blend until smooth again adding another splash of water if too thick .Set aside
