Quick healthy and easy, but oh so tasty! I cooked these in a really hot oven, but with BBQ season around the corner (I hope!) these tasty kebabs would be brilliant cooked outside. I served these with sticky rice and a cucumber ribbon salad which was delicious.

Serves 4

INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 chicken breasts - cut into cubes 
8 Wooden skewers ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Paste/marinade ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cloves garlic 
1 blade lemongrass tough outer leaves removed and chopped 
2 teaspoons chopped ginger
2 kaffir lime leaves
1 tablespoon fish sauce 
Juice of 1 lime 
1 teaspoon palm sugar or honey
2 green Thai chillies 
2 tablespoons chopped coriander 
2-3 tablespoons coconut milk
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 220 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Blitz the paste ingredients together until smooth. Loosen with more coconut milk if too thick. Marinate the chicken in the sauce for 30 minutes or overnight. Thread the chicken into the skewers. Drizzle with a little oil and season. Cook in the oven for 15-20 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve with jasmine rice and green beans.

  • Spiced Vegetable & Chickpea Curry ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
A mild but flavoursome vegan meat free Monday meal that is hearty and full of gorgeous goodness. This could all be cooked in a large pot on top of the cooker, but I want to roast the onions and peppers to ensure a sweet and slightly charred flavour, so I thought why not do the whole process in the oven.  It worked really well and was so simple as I let the oven do all the hard work. Delicious cold the next day so make extra. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 3-4 as a main 4-6 as a side
⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 red romain Peppers - cut into chunks 
2 sweet potatoes - peeled and cubed
1 tin can chick peas - drained and rinsed
2 small red onions - each cut into 8 wedges 
5 cloves crushed garlic 
1 teaspoon grated ginger
1 tin tomatoes 
2 large handfuls of fresh spinach 
Water to loosen 
Optional nigella seeds to finish ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Spices
1 teaspoon ground cumin
1 teaspoon medium curry powder 
1 teaspoon ground coriander 
1 teaspoon mustard seeds
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 210 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Throw everything except the tinned chickpeas spinach and tomatoes into a large roasting pan. Coat with a generous amount of oil and mix thoroughly. Season and roast for 30-45 minutes or until the Potato is soft. Remove from the oven, stir in the chickpeas and tomatoes, check for seasoning and back into the oven for 10-12 minutes. Loosen with a little hot water if necessary. Remove from the oven and stir in the spinach. Sprinkle with nigella seeds. Serve in bowls

  • Coq Au Vin Blanc

As there is still a chill in the air I thought I would repost this popular recipe.
As much as I love the classic coq au vin made using red wine, this whole pot-roasted chicken made using white wine made a lovely change and was ridiculously easy to make. Inspired after seeing @nigellalawson coq au Riesling, which uses pieces rather than a whole chicken. I thought it looked delicious so thought I’d make my version. You can use any white wine for this, but if you can use a medium dry white, then do as it will create the most fantastic gravy.

Serves 4 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 medium Chicken 
70g diced pancetta 
2 onions roughly chopped 
2 cloves garlic crushed 
2 teaspoons flour 
1/2 bottle White Wine
6 mushrooms sliced 
2 tablespoons chopped parsley ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pre heat the oven to 200 degrees. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by sautéing the onions and pancetta in a large casserole pot until soft. Add the garlic, stir and place the whole chicken on top, season and put into the oven without a lid for 20 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Remove from the oven and lift the chicken onto a plate. Add the flour to the onions and garlic, stir then add the wine and bring to a simmer. Add the mushrooms and return the chicken to the pan. Roast without a lid for another 20 minutes. Now put the lid on or cover with foil and cook for 50 more minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve with a creamy mashed potato and green veg. If you want to make things easier then add mangetout to the casserole 2 minutes before the end of cooking time.

  • I’m slowly working my way through @simplyfoodbymandy’s recipes on her Instafeed - being married to a chef doesn’t actually mean that he cooks! This is my tweaked version of her very beautiful Seared Tuna Sashimi 🐟 with pak choi 🌱which is far less elegantly displayed, being crammed onto a plate for a weeknight supper. Damn good it was too, especially the fabulous dressing 🌶. Mr G thought it was great (and believe me, he tells me when my food isn’t ...) but wanted to know why I was serving a summer dish when it’s still cold and not rosé weather? “I’ll make it again in July” I snapped, a tad peeved. A thumbs up supper from me (summer or not). 🤷🏻‍♀️ #simplyfoodbymandy #tuna #thursdaysupper

  • Moroccan Saffron Chicken

This is a delicately spiced Tagine with warm hum but not overly hot. I didn’t want to overpower the Saffron with too much spice or heat. A great introduction to North African cuisine for children. Happy Friday!
Serves 4-6⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
800g Chicken thighs (skinless and boneless)
2 onions - sliced 
4 cloves garlic - crushed 
1 tablespoon ginger - finely chopped 
2 teaspoons ground cumin
1 teaspoon cinnamon 
2 teaspoons ras el hanout 
3 tablespoons sultanas
500ml Chicken stock
1 pinch Saffron 
80g spinach 
1 tablespoon flour 
1 red chilli (optional)
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by sautéing the onions until caramelised and sweet. Add the ginger and garlic for 2 minutes. Add all of the spices followed by the chicken. Coat the chicken in the spices and season generously. Cook on a low heat for 4 minutes. Sprinkle in the flour and stir to combine. Add the stock and stir well. Bring to a simmer, lid on and cook for 1 hour. Or into an oven of 140 for 1-1.5 hours. Remove from the oven and stir in the spinach. Sprinkle with the optional chilli.

  • [AD] Prawn, Pea & Leek Risotto ⠀⠀⠀⠀⠀⠀⠀⠀⠀
As you know I love a meal that can be cooked using just one pan. Risotto ticks that box and although a little amount of effort is required to stir the risotto while the rice absorbs the stock, its a straight forward process that will deliver excellent results. I have used the beautiful leeks from @blas_y_tir which gave the risotto a wonderful sweetness and ensured it was full of flavour. I know Risotto purists would probably say no cheese with seafood but I love the combination of cheese and leeks, so the Parmesan was a must for me. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 4
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1.5 litres fish or chicken stock - hot
200g raw prawns 
3 large leeks - finely chopped 
190g peas
1 onion - finely chopped 
3 cloves garlic - crushed 
300g risotto rice 
125ml white wine
50g grated parmesan 
2 teaspoons butter
1 tablespoon olive oil

    As you know I love a meal that can be cooked using just one pan. Risotto ticks that box and although a little amount of effort is required to stir the risotto while the rice absorbs the stock, its a straight forward process that will deliver excellent results. I have used the beautiful leeks from @blas_y_tir which gave the risotto a wonderful sweetness and ensured it was full of flavour. I know Risotto purists would probably say no cheese with seafood but I love the combination of cheese and leeks, so the Parmesan was a must for me. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Serves 4

    INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1.5 litres fish or chicken stock - hot
    200g raw prawns
    3 large leeks - finely chopped
    190g peas
    1 onion - finely chopped

    125ml white wine
    50g grated parmesan

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 sea bass fillets
⠀⠀⠀⠀⠀⠀⠀⠀⠀
250g Orzo 
200g marinated artichokes - sliced @odysea_ltd
600ml hot stock - Chicken/fish/veg
2 onions - finely chopped 
4 cloves garlic - crushed 
80g fresh spinach 
1/2 a lemon ⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD 
Start by sautéing the onions until soft and sweet. Add the garlic and artichokes for 2 minutes. Pour in the Orzo and stir into the mixture. Season.
Start by adding a ladle full of stock at a time, as you would a risotto. When the stock has been absorbed then repeat the process until stock has gone and the Orzo is cooked. It’s much quicker than rice to cook. Add more hot water if it’s not cooked. Remove from the heat, squeeze in the lemon and stir in the spinach the residual heat will cook the spinach. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a large frying pan add a little oil. Season the fish. When very hot, add the bass, skin side down until golden, for about 2 minutes. Turn over and cook for 1 minute. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Plate up placing the fish on top of the Orzo.

Ready in 15 minutes these tasty tacos are sure to be a hit. If prawns aren’t for you then why not try small pieces of chicken breast fillets (making sure they are cooked through) or for a vegan option try roasting florets of cauliflower (in the marinade) for 10-15 minutes at 210 degrees. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Jackfruit Rice Paper Rolls

Inspired after an event I attended in London last week, here are some incredibly delicious vegan rice paper rolls. My friend and @masterchefuk semi finalist Nisha from @nishascookingagain told me that I had to try Jackfruit. Knowing what a superb palate she has and me being keen to try new things I started to think how I could use this trendy ingredient. Jackfruit (for anyone that hasn’t tried it) is being talked about as the vegan alternative to meat. Naturally low in calories, and virtually fat free, but weirdly it has a meaty kind of texture. I used the tinned variety which can be bought in some supermarkets and online. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS 
25g rice vermicelli noodles - cooked⠀
16 x 22cm rice papers⠀
1 tin jackfruit, drained and sliced 
5 radishes - sliced
1 red pepper - sliced 
fresh mint leaves⠀
Small bunch of fresh coriander sprigs, leaves picked⠀
1 chilli sliced
1 papaya - finely sliced 
¼ cucumber, deseeded and cut into short, fine matchsticks⠀
2 spring onions - sliced into matchsticks 
Optional edible flowers ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dipping sauce ⠀(mix together in a bowl)
2 tablespoons soy sauce 
garlic clove, very finely chopped⠀
1-2 long thin red chillies, deseeded and finely chopped⠀
Squeeze of honey ⠀
tbsp Thai fish sauce⠀
2 tbsp freshly squeezed lime juice⠀
1 tbsp rice vinegar⠀
METHOD 
Make sure all your ingredients prepared and to hand, with a large shallow dish of warm water and a clean, wet tea towel. Submerge a paper in the water for 1 minute ( 30 seconds for extra-thin papers) to soften. Remove and lay on the towel. Arrange the jackfruit down the centre with some herbs, noodles, vegetables and papaya. Don’t put too much on, or it will be too fat to roll.⠀
Fold the edge of the paper closest to you over the filling, fold in the sides, then roll up tightly to make a neat parcel. Set aside on a serving plate and repeat with the remaining papers. Cover with a damp tea towel while you make the dipping sauce.⠀

  • 6 hour Slow Cooked Cypriot Lamb

Inspired by the amazing @melizcooks this slow cooked lamb shoulder is to die for. She cooks the most amazing Cypriot family food and is a must follow. This is my take on her fabulous lamb dish and I can honestly say it’s one of the nicest things I’ve eaten. The green sauce really takes the dish to the next level and cuts the richness of the lamb beautifully so please do try. It will be so tender that all you will need is two forks to pull it apart. I did post this about 9 months ago but not with a full recipe, so here it is. Serve with rice, bulgar or couscous.

Marinade 
2 tablespoons pomegranate molasses @belazu_co 
1 tablespoon white wine vinegar 
Juice 1/2 lemon
1 tablespoon honey 
1 teaspoon dried oregano 
2 teaspoons chopped mint
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sauce 
1 bunch coriander 
2 tablespoons chopped mint leaves 
2 cloves garlic 
Juice 1/2 lemon 
1 tablespoon pomegranate molasses ⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD 
Preheat the oven to 140 degrees.
Chip the onions and place in a roasting tin. Coat the lamb in the marinade and season. Place on top of the onions and cover with foil. Place in the o en and forget about it for at least 6 hours, but anything up to 8. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Blitz the sauce together and loosen with more lemon juice if needed. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Remove the foil from the lamb for the last 45-60 minutes and leave to rest for 30 minutes before serving. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Why not try my Saturday night “Fakeaway” this weekend. This tasty treat can be cooked in one pan (yay!) and is most certainly a healthier choice than your average takeaway. 
I added green beans in the last stages of cooking, but sugar snaps or fine asparagus would also work well. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 medium Chicken 
200g green beans
Optional chilli to serve ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Marinade 
1 tablespoon Chinese five spice
2 teaspoons ginger - grated 
1 clove garlic - crushed 
2 tablespoons maple syrup or 1 tablespoon honey 
2 tablespoons soy sauce
1 star anise
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 200 degrees. 
Place the chicken in a large casserole pot.
Mix the marinade together and pour over the chicken. Season and cover with a lid, roast for 1 hour 10 minutes. Remove the lid and cook for another 15 minutes. Throw in the green beans, lid on and back in the oven for 5 minutes. Leave to rest for 15 minutes. Serve with jasmine rice.

It’s nearly the weekend and you know what that means? Yes, it’s time for one of my healthy curries. I have pretty much covered most of the Nations favourites, but I realised I have not created my husbands favourite! So here it is Chicken Jalfrezi, with extra veg. I really went to town with chillies as I think that Jalfrezi needs to have a good kick, but feel free to adjust to your liking. 2 teaspoons Medium curry powder 
1 teaspoon Mustard seeds
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by sautéing the onions until caramelised and sweet (it adds an authentic gorgeous richness to the end dish) then add the peppers, garlic chilli and ginger for 2 minutes. Add all of the spices and mix. Now add the chicken and coat in the lovely spice mix. Cook on a medium heat stirring for 5 minutes. Pour in the tomatoes, honey and 1/2 a can of water. Bring up to a simmer. Cover and simmer on the lowest heat for 1.5 hours or transfer to an oven of 140 for 1.5 hours. Add the green beans for the last 15 minutes of cooking. Serve with basmati rice or Indian bread.

    It’s nearly the weekend and you know what that means? Yes, it’s time for one of my healthy curries. I have pretty much covered most of the Nations favourites, but I realised I have not created my husbands favourite! So here it is Chicken Jalfrezi, with extra veg. I really went to town with chillies as I think that Jalfrezi needs to have a good kick, but feel free to adjust to your liking. Like all curries, they improve with a little time, so perfect for making the day before. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Serves 4-6
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀

    1 tin of tomatoes
    A little water to loosen
    100g green beans - trimmed and washed

Time to repost this classic combination of Chicken, Tarragon, Mushrooms all cooked in a healthy creamy sauce. Serves 3-4

INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
8 Chicken Thighs - skin & bone attached 
1 bunch fresh tarragon 
2 onions - chopped 
2 garlic cloves - crushed 
200ml creme fraiche
150g mixed mushrooms - sliced
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 lemon cut into wedges ⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD 
Place the onions and garlic in a large roasting tin. Drizzle with olive oil, season and mix until the garlic is evenly distributed. Place the chicken on top and season. Nestle 3 sprigs of tarragon into the tray and roast at 200 degrees for 25 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Finely chop the remaining tarragon, discarding any woody bits. Mix into the tub of creme fraiche.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Remove the chicken from the oven and place the chicken on a plate leaving the onion mixture in the pan. Pour in the creme fraiche mushrooms and tarragon and stir until combined. Return the chicken to the pan and cook for another 10-15 minutes. Serve with a lemon wedge.

Salmon Fennel & Blood Orange Salad
⠀⠀⠀⠀⠀⠀⠀⠀⠀
The sun was shining during that mini heatwave that we were experiencing when I made this lovely warm salad.  Ready in under 15 minutes it was a joy to eat. The salmon was just cooked through and incredibly moist and went so well with those amazing blood oranges. Definitely one I’ll be replicating for a girly lunch. This was one of the recipes I developed for @hunterandgather website, take a look for some lovely healthy recipe inspiration.

Serves 2
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 Salmon fillets
1 bag salad leaves
3 cooked beetroot - each cut into 8 wedges 
1/2 bulb fennel - finely sliced 
2 blood oranges - I peeled and sliced the other halved
2 tablespoons MCT oil
1 clove crushed garlic ⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 200 degrees.
Mix together the juice of 1/2 orange, Coconut oil, and garlic in a jar, season and set aside. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Squeeze the juice of half an orange on to the salmon fillets, season and roast for 10 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Arrange the salad ingredients in a large bowl, flake over the salmon and drizzle with the delicious dressing.

This indulgent starter or lunch can be ready in just 15 minutes. If you like you can play around with different cheeses, some of my favourites are Vacherin or Epoisse, but good old Camembert is excellent value and perfect served this way.  Enjoy!⠀⠀⠀⠀⠀⠀⠀⠀⠀

400g baby new potatoes ⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by boiling the potatoes in salted water until cooked, this takes approximately 15 minutes depending on the size. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Remove any plastic or fabric packaging and return the cheese to the wooden box. 
Score a cross on the top of the Camembert making sure not to go all the way through. 
Pierce the garlic cloves and small pieces of rosemary into the cheese. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place on a tin plate and bake at 200 degrees for 15 minutes. Remove from the oven and drizzle with truffle oil.

  • Prawn, Squid & Courgette Tempura ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Over the weekend I like to try out recipes that I know my whole family will enjoy. I thought this would be a successful one and I sold it to Charlie as “Posh fish & Chips”. Hooray it was a huge success all round! This recipe creates such a light a crispy batter which works so well with the above ingredients, but would work equally well with firm white fish such as Pollock, Haddock or Cod. It also works really well, with broccoli, aubergine, peppers or onion. I served it on newspaper not only for food styling purposes, but it actually absorbs any excess fat and makes clearing up very simple. We were taught something very similar at the @asda Fishtastic event in London and Asda kindly gifted me the seafood. Here’s my version. One top tip that the chefs suggested to me was that if you need it to be #glutenfree then just use cornflour - Genius!

INGREDIENTS ⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
200g Raw prawns 
150g Raw squid - cleaned and inner bone removed, cut into 3 or 4
2 Courgettes - cut into 5cm x 1cm rectangles 
Cornflour for dusting
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Tempura Batter⠀
100g self raising flour
35g cornflour⠀
½ tsp fine salt⠀
225ml cold sparkling/soda water⠀
flaked salt, to serve⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dipping sauce ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 clove garlic crushed 
1 teaspoon grated ginger 
Juice of 1 lime 
2 tablespoons soy sauce 
Chopped chilli (optional)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Optional garnish

Sauté in oil until just golden, remove from the pan onto kitchen paper.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Heat the oil to 170/175. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix the batter ingredients together in a large bowl. 
Prepare the seafood and lay on kitchen towel to remove any moisture. Dust the prawns, squid and Courgettes in the cornflour, then add to the batter. You will need to do this in batches. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Fry all of the ingredients until they are just golden in batches making sure you don’t over crowd the pan. Drain on kitchen towel and season with salt. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

This is a fantastic stress free way of feeding a crowd. We enjoyed this last weekend with sweet potato wedges and corn on the cob. INGREDIENTS - serves 6
1.5-2kg Pork shoulder - boneless and rindless
2 red onions - chopped 
3 cloves garlic - finely chopped 
200ml stock
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Marinade 
2 tablespoons ketchup 
2 tablespoons Worcester sauce 
2 tablespoons soy sauce 
2 tablespoons honey
1 teaspoon ground cumin
1 teaspoon chilli powder (optional)
1 tablespoon smoked paprika ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 200 degrees. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix the marinade together and coat the pork. Place in a large casserole pot on top of the onions and garlic. Season add the stock and put the lid on. Place in the oven and immediately turn the heat down to 140. Leave for 5 hours. Remove from the oven take the lid off and back in for another 45 minutes. Remove once more and pull apart with two forks.

  • Roast Chicken

It’s been ages since I have posted a great British roast mainly because when I normally cook such meals it’s dark and I find that you can’t beat natural light for food photography. 
Here we have a simple roast chicken with lots of delicious veg. More and more I’m roasting my side vegetables in the oven. Not only does it deliver intense, sweet and caramelised flavour, I find it reduces the stress at the last minute with all those pots and pans. Have a great Sunday 😊
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 medium chicken 
1/2 lemon 
3 cloves garlic ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Veg 
3 leeks - washed and chopped into large chunks
12 heritage carrots - washed
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Gravy ingredients 
1 small onion - finely chopped 
2 cloves garlic - crushed 
2 teaspoons flour 
1 glass white wine
Water
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pre heat the oven to 200 degrees. 
Slice the lemon in half. Squeeze 1/2 into the cavity and put what’s left in there too. Now add 3 cloves of roughly chopped garlic to the cavity. Season the chicken generously and cover with foil, making sure the foil is lose and not touching the chicken. Roast for 45 minutes, remove the foil and roast for another 45 minutes. Leave to rest somewhere warm for 20 minutes before carving.

Vegetables
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Season and drizzle in olive oil. Roast for 20-25 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Gravy
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sauté the onion on a low heat until they are caramelised and golden. Add the garlic for 2 minutes. Stir in the flour and add the wine until thick. Now add 400ml water and bubble away for 30 minutes. Pour in the juices from the chicken (making sure you scrape all the sticky tasty bits off and into the gravy) and simmer until the desired taste and consistency.

  • 15 Minute Beef & Broccoli Stir-fry 
It’s Friday and rather than pop out to your local takeaway, why not throw this quick, Chinese inspired, healthy stir fry together ? Flavoured with Chinese Five Spice, ginger and garlic the smell wafting from the kitchen was gorgeous. If you have a wok then use it, if not you will need a large frying pan. I used bavette steak as it’s reasonably priced, but if you want to splash out a bit then sirloin or fillet would be lovely. Enjoy!

INGREDIENTS 
800g bavette steak - sliced into strips across the grain 
200g tenderstem broccoli - halved
1/2 cauliflower - cut into small florets 
1 onion - finely sliced 
1 chilli - sliced 
3 cloves garlic - crushed 
1 thumb sized piece of ginger - cut into matchsticks
2 spring onions - cut into matchsticks 
1 teaspoon Chinese five spice
2 handfuls of cashew nuts
100ml water

Sauce
1 teaspoon Chinese five spice
2 tablespoons soy sauce 
1 tablespoon maple syrup 
Coat the beef in 1 teaspoon of Chinese five spice and season. Add some oil to a wok or large frying pan on a high heat and add the beef. Stir until coloured but still nice and rare. Remove from the pan and set aside onto a plate. 
Add the onion for 2 minutes to the wok adding a little more oil if needed. Keep stirring the whole time. Now add the chilli, garlic, ginger, broccoli and cauliflower and continue to stir for 2 minutes. Add water if it looks too dry. Return the beef to the pan along with any juices. Pour in the sauce and cook for another 2-3 minutes. Sprinkle with cashews and spring onion. 
Serve with rice or noodles.

  • Chicken Mushroom & Tarragon Filo Pie

Filo pastry contains no fat making it a  healthier pie topping. Ok, so I did had a little oil to help it crisp nicely but overall it’s a lighter option. Tarragon and chicken are a perfect partnership and together with the filo  pastry, it made a really delicious combination. A delicious fuss free pie. See my stories for the how-to videos.

INGREDIENTS 
150g shop bought filo pastry 
650g skinless boneless Chicken thighs cut into 3 pieces 
10 Chestnut mushrooms - sliced
2 tablespoons chopped Tarragon 
1 onion - chopped 
2 cloves garlic - crushed 
1 teaspoon flour 
150 ml water
Butter or oil for brushing ⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD 
Preheat the oven to 180 degrees. 
Season the chicken and colour in a really large frying pan until golden but not cooked through. Remove onto a plate. Now add the onion and sauté until soft then add the garlic. Add the mushrooms and return the chicken to the pan. Stir in the flour until combined and then add the water, cover with foil and simmer on a very low heat for 20-25 minutes until the chicken is cooked. Remove the foil and cook a little more if it’s too runny. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Tear each filo sheet into 2, brush with melted butter or oil, scrunch and place on top of the chicken. Continue until the pie is covered. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cook in the oven for 15-20 minutes or until golden, checking on occasion as the filo pastry can easily burn.

You know how I love a tray bake, well here is my newest recipe which I hope you will all enjoy. If miso paste isn’t something you have in your store cupboard then i would really suggest you give it a go. I find it really useful in adding flavour to so many things. It’s excellent in many Asian marinades that can be used on fish, chicken and beef. I often add  it to soups instead of stock (mixed with hot water) or even in salad dressings. As miso is made from  is fermented soya bean, it is a natural probiotic so good for gut health. My favourite brand is @misotasty as its natural mild and sweet and not too salty. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 tablespoons miso paste
2 cloves garlic - crushed 
2 tablespoons soy sauce 
1 tablespoon honey
Juice of 1 lime
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 200 degrees.
Slash the skin of the chicken 3-4 times to help the marinade penetrate the chicken. 
Coat the chicken and the aubergine separately in the marinade. Add the chicken to a large roasting pan, cover with foil and cook for 25 minutes. Now add the aubergine and the chilli, place it back in the oven (without foil) for 20 minutes. Remove from the oven and finish with spring onions and coriander. Serve with rice or noodles.

  • Brisket & Guinness Pie

I normally use red wine or Port when slow cooking beef in this way, but have never used Stout. Why had I not tried this before?! I wanted to keep this old fashioned and traditional, so didn’t use any garlic. My mum always adds a spoon full of bovril or marmite to a steak and kidney pie mixture, for colour and a beefiness so I did the same . Sounds weird, but it works. This is a must try, please let me know what you think?

Serves 4
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 packet of ready rolled puff pastry 
1 kg beef brisket 
2 onions - chopped 
1 punnet Chestnut mushrooms - sliced 
1 bottle/can Guinness 
1 teaspoon bovril 
2 teaspoons plain flour 
1 egg - beaten
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven 140 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sear the seasoned brisket on both sides until golden. Remove from the pan and set aside. Add the onion to the pan and cook until soft. Add the flour, stir then add the Guinness. Bring to a simmer and add the mushrooms bovril and return the beef to the pan. Cover and slow cook for 4-5 hours. Remove from the oven and pull apart with 2 forks. Taste and season. Allow to cool. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place in a pie dish and cover with the puff pastry. Brush with the egg wash and cook in the oven of 180 degrees for 20-30 minutes. 
Serve with simple green veg.

    I normally use red wine or Port when slow cooking beef in this way, but have never used Stout. Why had I not tried this before?! I wanted to keep this old fashioned and traditional, so didn’t use any garlic. My mum always adds a spoon full of bovril or marmite to a steak and kidney pie mixture, for colour and a beefiness so I did the same . Sounds weird, but it works. This is a must try, please let me know what you think?

    Serves 4
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1 packet of ready rolled puff pastry
    1 kg beef brisket
    2 onions - chopped
    1 punnet Chestnut mushrooms - sliced
    1 bottle/can Guinness
    1 teaspoon bovril
    2 teaspoons plain flour
    1 egg - beaten
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Preheat the oven 140 degrees.
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Sear the seasoned brisket on both sides until golden. Remove from the pan and set aside. Add the onion to the pan and cook until soft. Add the flour, stir then add the Guinness. Bring to a simmer and add the mushrooms bovril and return the beef to the pan. Cover and slow cook for 4-5 hours. Remove from the oven and pull apart with 2 forks. Taste and season. Allow to cool. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Place in a pie dish and cover with the puff pastry. Brush with the egg wash and cook in the oven of 180 degrees for 20-30 minutes.
    Serve with simple green veg.

With Half term break around the corner I thought I share this delicious chicken recipe which will go down a storm with your children. You could use thighs or chicken breasts but drumsticks are budget friendly and children enjoy using their hands and getting stuck in and sticky! Delicious hot or cold so make extra for the fridge. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 4
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1kg Chicken drumsticks 
350g Butternut squash - peeled and cubed
1 orange - sliced
Coriander to serve (optional)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Marinade 
2 cloves garlic - crushed 
1 teaspoon cornflour
Juice of 1 orange 
2 tablespoons soy sauce 
1 tablespoon maple syrup or 1 teaspoon honey @buckwud_maple_syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 210 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix the marinade in a large bowl and coat the chicken thoroughly. Leave for 30 minutes if possible. Add the chicken (including the marinade) squash and orange slices to a large roasting dish. Season generously. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Roast for 30-45 minutes turning once during the cooking time. (For breasts roast the squash for 20 minutes before adding the chicken, then roast for a further 25 minutes.)

INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 medium chicken 
1 tin cannellini beans - drained
3/4 of a Savoy cabbage - shredded
145g pancetta - diced
2 small onions - roughly chopped 
4 cloves garlic - crushed 
1 glass of white wine 
2 glasses of water 
Optional parsley to finish 
1 large heavy based casserole pot
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD 
Preheat the oven to 200 degrees ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by sautéing the pancetta in a dry pan (no oil needed) 
Add the onions and garlic and fry for 2-3 minutes. Add the wine and bring to a simmer for a few minutes. Now add the water followed by the chicken. Season and roast for 1 hour 15 minutes. Remove the chicken onto a plate. Now add the Savoy cabbage and beans. Stir, place the chicken on top and into the oven for another 15-20 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sprinkle with parsley and serve.

  • Thai Green Chicken Curry ⠀

It’s Friday and time for a delicious curry!⠀
This is Thai green curry with a little twist. Normally it’s made using chicken breast, here I’ve used whole chicken thighs for added flavour and a succulent texture. Not only do I think it tastes better but thighs are cheaper to buy than breasts and there is no chopping involved. This homemade curry paste is absolutely divine and well worth making, however I do understand this can be slightly daunting for some. Two tablespoons of shop bought paste, along with 2 garlic cloves and 2 teaspoons of grated ginger would do the trick instead. ⠀

Serves 4⠀
⠀
8-10 Chicken thighs⠀
200g green beans⠀
2 small cans coconut cream or 1 can of coconut milk⠀
Coriander and lime to serve ⠀
⠀
Green curry paste⠀
4 green thai Chillies ⠀
2 thumb sized pieces of ginger peeled ⠀
2 blades lemongrass (keep one whole)⠀
5 cloves garlic ⠀
3 shallots ⠀
3 tablespoons fish sauce ⠀
1 tablespoon palm sugar (honey would work too)⠀
1 tablespoon soy sauce ⠀
5 kaffir lime leaves ⠀
Juice of 2 limes⠀
⠀
Blitz the curry paste ingredients in a bullet or processor reserving one of the lemongrass blades. ⠀
⠀
Pan fry the chicken skin side down, until golden approximately 5 minutes. Turn over and seal the other side for roughly 2 minutes. ⠀
Remove the chicken from the pan and set aside. Pour away any excess oil from the pan.⠀
⠀
Now add the paste to the pan and sizzle for 2-3 minutes. Add the coconut cream and bring to a gentle simmer. Cut the lemongrass lengthways in half and add to the sauce. ⠀
Place the chicken back in the pan skin side up and into an oven of 180 degrees for 30 minutes. Remove from the oven, add the green beans, tucking them under the chicken. Return to the oven for 10-15 minutes. ⠀
⠀
Remove from the oven, scatter with coriander and a squeeze of lime.⠀
⠀
Serve with Steamed jasmine rice.⠀

The marinade is a heady mixture of delicious Thai flavours and works so well with the chicken thighs.   • Xacuti Lamb & Chickpea Curry

This is one of my favourite Goan Curries which is packed full of flavour and spice but balanced beautifully buy the sweet cooling coconut. I’ve added chickpeas which isn’t strictly authentic but as you know I always like to add extra goodness wherever possible. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 4-6
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1kg lamb neck fillets - cut into cubes 
2-3 red chillies - finely chopped 
1 dried chilli - left whole
2 tablespoons grated ginger 
4 onions finely chopped 
5-6 cloves garlic - crushed 
2 teaspoons ground cumin 
1 teaspoon ground coriander 
1 teaspoon Fenugreek Seeds 
1 teaspoon Turmeric 
4 Green Cardamoms pods
1/2 teaspoon cinnamon 
Juice of 1/2 Lemon
2 tablespoons Desiccated Coconut
1 teaspoon honey
1 can coconut milk 
1 can chickpeas - drained 
2 tablespoons chopped Coriander

⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by slowly caramelising the onions until really golden but not burnt. This will add so much flavour to the end dish. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix all of the spices with the lemon juice and a tablespoon of oil and season generously. Add the lamb to the spice mixture and leave for 20 minutes while the onions are cooking. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

    This is one of my favourite Goan Curries which is packed full of flavour and spice but balanced beautifully buy the sweet cooling coconut. I’ve added chickpeas which isn’t strictly authentic but as you know I always like to add extra goodness wherever possible. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Serves 4-6
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    1kg lamb neck fillets - cut into cubes
    2-3 red chillies - finely chopped
    1 dried chilli - left whole
    2 tablespoons grated ginger
    4 onions finely chopped
    5-6 cloves garlic - crushed
    2 teaspoons ground cumin
    1 teaspoon ground coriander
    1 teaspoon Fenugreek Seeds
    1 teaspoon Turmeric
    4 Green Cardamoms pods
    1/2 teaspoon cinnamon
    Juice of 1/2 Lemon
    2 tablespoons Desiccated Coconut
    1 teaspoon honey
    1 can coconut milk
    1 can chickpeas - drained
    2 tablespoons chopped Coriander

    METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Start by slowly caramelising the onions until really golden but not burnt. This will add so much flavour to the end dish. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
    Mix all of the spices with the lemon juice and a tablespoon of oil and season generously. Add the lamb to the spice mixture and leave for 20 minutes while the onions are cooking. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

A timeless French classic that is rich and packed with flavour. This beef in red wine went down a storm with everyone in my house and fortunately I’d made extra so we had plenty for another meal. I served it with new potatoes, but it would work beautifully with creamed potatoes or dauphinois for a Sunday treat. I often make this with beef cheeks for and even richer version which is amazing, but for that you will need to increase the cooking time. ⠀

⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 4-6
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀
1 kg shin of beef chopped into large chunks ⠀
200g lardons or chopped bacon ⠀
2 onions chopped ⠀
8 very small onions or shallots peeled but left whole⠀
5 cloves garlic crushed ⠀
1/2 bottle red wine⠀
1 tablespoon Belazu’s balsamic vinegar ⠀
3 teaspoons plain flour ⠀
Optional sprig of thyme leaves⠀
1 pack chestnut mushrooms chopped ⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by seasoning the beef and browning it in batches, then set aside on a plate. Add the onions to the pan and sauté until soft. Now add bacon and the garlic and stir. Cook until the bacon is opaque. Add the chopped mushrooms.
Spoon in the flour and stir thoroughly. Pour in the wine and the balsamic vinegar, bubble off the alcohol. Return the beef (and juices) to the pan, along with the thyme leaves. Bring back to a gentle simmer, cover and transfer to an oven of 150 degrees for 2-3 hours until the meat is tender. You could also cook on the hob on the lowest heat for 2-3 hours with a lid on. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Thai Chicken & Baby Aubergine Curry ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I like to add as many extra vegetables as possible to a curry, on this occasion and as it’s January, I’ve added aubergine, Butternut squash and green beans. This homemade paste was delicious and in my opinion so much better than shop bought pastes, but I totally understand that some of you would rather use use shop bought, 2 tablespoons should do the trick. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 4-6 INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1kg boneless Chicken Thighs 
1 can coconut milk
1 small onion - finely chopped 
2 cloves garlic- crushed 
5 baby aubergine halved or 1 large cut into chunks 
1 bunch green beans
300g Butternut squash peeled and chopped 
4 Kaffir lime leaves - finely shredded ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Red Curry Paste⠀⠀
10cm piece of ginger peeled chopped into chunks⠀⠀
2 large shallot peeled ⠀
2 red chillies⠀
5 garlic cloves peeled⠀⠀
2 piece lemon grass roughly chopped⠀⠀
1 teaspoon ground cumin⠀⠀
1 teaspoon ground coriander⠀⠀
1 tablespoon tomato purée⠀⠀
Small bunch fresh coriander⠀⠀
4 tbsp fish sauce⠀⠀
2 tsp palm sugar or honey ⠀
Juice of one fresh lime⠀⠀
2 tablespoons coconut milk⠀⠀
1 tablespoon groundnut oil⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by blitzing the paste ingredients in a processor. 
Chop each piece of chicken into 3 and add half of the paste. Stir and leave for 30 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sauté the onion until soft then add the garlic and kaffir lime leaves. Add the chicken season and cook on a medium to high heat until opaque. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Meanwhile, add 1/2 teaspoon of the paste to each aubergine half. Drizzle with oil, season and roast for 20 minutes at 210 degrees. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add the squash and the remaining past to the chicken. Bring to a simmer and cook for 1 hour 15-30 minutes. Add the aubergine and beans 10 minutes before the end of cooking time.

This lovely family pleaser never fails to deliver, the gorgeous dressing transforms every day ingredients into something tasty and exciting. My youngest son isn’t a big chilli fan so I often add the chilli 🌶 at the end to avoid contaminating his serving 😳 
You can play around with the Vegetables, mangetous or sugar snap peas would make a fantastic option. This would be a great recipe for any leftover Turkey, but works equally well with prawns and chicken. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 4

350g cooked noodles
4 Chicken Breasts
150g Asparagus tips - blanched for 2 minutes and cut into 5 cm pieces
3 tablespoons cooked edamame beans
4 spring onions - finely chopped 
2 teaspoons sesame seeds - optional 
3 tablespoons chopped coriander 
1 red chilli finely chopped 
2 tablespoons cashews ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dressing ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 clove garlic crushed 
2 teaspoons grated ginger 
Juice of 2 limes 
2 tablespoons soy sauce 
3 tablespoons sesame oil
2 teaspoons honey 
Salt and pepper

METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Season the chicken breasts and roast for 20 minutes at 210 degrees.

Shake the dressing ingredients in a jar.

Cook the noodles according to pack instructions.

As much as I love the classic coq au vin made using red wine, this whole pot roasted chicken made using white wine made a lovely change and was ridiculously easy to make. Inspired after seeing @nigellalawson coq au Riesling, which uses pieces rather than a whole chicken. I thought looked delicious so thought I’d make my version. You can use any white wine for this, but if you can use a medium dry white then do as it will create the most fantastic gravy.

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 medium Chicken 
70g diced pancetta 
2 onions roughly chopped 
2 cloves garlic crushed 
2 teaspoons flour 
1/2 bottle White Wine
6 mushrooms sliced 
2 tablespoons chopped parsley ⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pre heat the oven to 200 degrees. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by sautéing the onions and pancetta in a large casserole pot until soft. Add the garlic, stir and place the whole chicken on top, season and put into the oven without a lid for 20 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Remove from the oven and lift the chicken onto a plate. Add the flour to the onions and garlic, stir then add the wine and bring to a simmer. Add the mushrooms and return the chicken to the pan. Roast without a lid for another 20 minutes. Now put the lid on or cover with foil and cook for 50 more minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve with a creamy mashed potato and green veg. If you want to make things easier then add mangetout to the casserole 2 minutes before the end of cooking time.

This is my idea of a Friday night treat! I love seafood and as you may have guessed I enjoy a bit of spice 🌶 ⠀
However if spice isn’t your thing don’t be put off as you can adjust the chilli content and the coconut cream really helps to mellow the heat. ⠀
Monkfish works brilliantly in this recipe as it holds its form and can take flavour well. Ask your Fishmongers for Monkfish cheeks as they are cheaper and delicious 😋 ⠀
This took just over 30 minutes to make, so perfect after a busy day. Happy Friday!⠀

500g monkfish fillets or cheeks 
8-10 large raw prawns (I chose to have skin on for extra flavour)⠀
1 large squid - cleaned and cut into thin rings⠀
⠀
⠀
2 small cans coconut cream or 1 can coconut milk⠀
2 onions chopped ⠀
5 cloves garlic crushed ⠀
10cm piece of ginger grated ⠀
2 red chillies finely chopped ⠀
1 lime ⠀
1 teaspoon palm sugar or honey ⠀
12 sugar snaps ⠀
Black Sesame seeds optional ⠀
⠀
Spices⠀
⠀
1 tablespoon turmeric ⠀
2 teaspoons ground cumin ⠀
2 teaspoons ground coriander ⠀
1 teaspoon fenugreek seeds⠀
1 star anise⠀
1 teaspoon tamarind Paste ⠀
1 lemongrass spear cut length ways⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sauté the onions in oil until soft and slightly golden. Add the ginger chilli and garlic, stir and cook for 2 minutes. ⠀
Now add all of the spices and cook for another minute. Pour in the coconut cream or milk. If you are using the cream now add water to the empty can and add to the pot. Season generously, add the palm sugar and tamarind paste, stir and simmer on a low heat for 20 minutes allowing the flavours to infuse. ⠀

Slice the monkfish into 10x2cm rough rectangles. If you are using cheeks then leave them whole. ⠀
Add the monkfish, prawns, squid and sugar snaps to the pot, stir and bring to a gentle simmer and cook for 12 minutes. ⠀
Squeeze in the juice of a lime sprinkle with coriander and sesame seeds and serve. ⠀
