Millet Loaf // mushrooms / walnut / kombu / green peas / red beans

Root Mash // yam / golden potato / carrot

Hemp Crema // garlic / onion / hemp / miso 
5 Spice Gravy // fennel / sage / tamari / mushroom / arrowroot starch / coconut milk

Zucchini // smoked paprika / mustard powder / olive oil / onion 
Putting together a complete meal involves intention and preparation. Here we have repurposed the cooking water from the root mash to make our gravy.

Root Mash is easy and delicious and can help curb sweet cravings...
1. Cut equal parts carrot, potato, and sweet potato and cover + 1” with filtered salted water. Bring to boil and let simmer until pieces fork tender 15-20 minutes (but check every 5)
2. Strain roots over bowl to save cooking liquid (great for stocks, sauces, soups, or gravies)
3. Return roots to pot over low heat and begin mashing (this allows the excess water to cook away).
4. Add in coconut milk, curry powder (to taste), pepper, salt and coconut oil.
5. Mash mash mash over low heat until desired consistency.

In Yunnan, every part of the pig can be the ingredients of a dish. Usually, we marinate the meat in various ways so that we can eat it for the whole year. Today, I am cooking the big head with picked daikon, a type of carrots. This dish is really delicious with rice! 
Ingredients:
Dried daikon
Rice
Roasted rice flour
Lanxangia tsaoko powder
Sichuan pepper powder
Salt
Rice wine
Chili oil
Sugar, star anise powder, salt 
Steps:
Clean the pig head and hair. Marinate the meat for three days and then cut them to slices with all the spice. Finally, put the meat into the jar and seal it. Take it out whenever you want to.

以前爸妈常年在德宏打工,每次回来看我们都会带上很多火烧牛肉干巴,这味道记忆深刻。
刚好村子里有人家杀牛,买了些回来烤成牛干巴,顺便做了妈妈也爱吃的两道菜:火烧干巴,柠檬牛干巴丝。 
材料:
牛肉
盐
辣椒粉
青花椒粉
茴香籽粉
白酒
艾草 
步骤:
将新鲜牛肉与盐、辣椒粉、青花椒粉、茴香籽粉等与白酒一起腌制。腌制后,将牛肉烘烤一个半小时左右即可。

My parents used to work at Dehong, so whenever they came back they would bring a lot of burned cured beef. That taste was really impressive even now. Today, I bought some beef and prepare to cook some burned cured beef and it is also one of my mother’s favorite dishes! 
Ingredients:

Chili powder
Green pepper powder
Fennel seed powder
Liquor
Wormwoods(sagabrush)
Steps:
Put the beef with salt, chili powder, green pepper powder, liquor, and fennel seed powder and marinate the meat with all the spices for a while. Bake the beef for 1 and a half hour and then finish!
