  • *Bulgar Wheat Salad*

Lunch today using an #ellaskitchen recipe. Deen tried bulgar wheat for the first time today. I didn't expect him to eat it but I was pleasantly surprised 😊. The salad was accompanied by a slice of the banana bread I made on Monday and some yogurt.

Suitable from 10 months.

You'll need:

25g bulgar wheat
½ courgette, grated 
5cm cucumber, sliced lengthways (deseeded and skin removed if you choose)
3 tomatoes 
20g feta cheese, grated 
2 teaspoons extra virgin olive oil 
1 teaspoon lemon juice 
1-2 tablespoons of snipped chives.

Place the bulgar wheat in a saucepan, cover with water and bring to the boil. Then reduce the heat, cover with a lid and simmer for 15 minutes or until very tender. Drain well and place in a serving bowl.

Meanwhile, steam the courgette and cucumber in a saucepan over medium heat for 5 minutes, adding the tomatoes 2 minutes before the end of the cooking time. Pick out the tomatoes and when cool enough, peel off the skins and finely chop the flesh. You may want to chop the courgette and cucumber too depending on your baby.

Stir in the tomatoes, courgette, cucumbers, feta, olive oil, lemon juice and chives into the cooked bulgar wheat. Mash with the back of a fork if necessary.

In a small glass bowl, whisk your yogurt with oil, mustard, vinegar, sea salt and pepper. Taste test and adjust to your preference.

In a large serving bowl add the chicken, avocado, celery, onion and eggs. Pour your dressing over and gently toss to combine.

Season with sea salt to your taste and crack some fresh black pepper over. Enjoy!

makes 4 servings 
Ingredients:
1.5 lbs. large shrimp, peeled and deveined
1 Tbsp avocado oil
4 boiled eggs cooked and peeled
6 slices of cooked nitrate-free bacon, diced 
1 cup of organic corn kernels, either fresh or frozen - thawed
1 large avocado, diced
1/2 cup crumbed cheese of choice, feta or blue cheese are both great on this
6 packed cups chopped romaine lettuce

Fresh Lemon-Chive Salad Dressing:
1/3 cup plain Greek yogurt
1/2 fresh lemon, juiced
1 fresh garlic clove
4 fresh chives
sea salt and freshly ground pepper, to taste

Instructions:
In a blender or food processor, pulse all Salad Dressing ingredients until creamy. 
Taste, adjust seasonings to your liking.
Cover, and refrigerate until ready to use.

Heat 1 Tbsp of oil in a large skillet over med-high heat; Add in shrimp and cook for about 4-5 minutes or until pink and just cooked through. Season with sea salt and freshly ground black pepper, then set aside.

Arrange all salad ingredients on a platter or a large salad bowl nicely as shown, and when ready to serve, drizzle with dressing and gently toss to combine.

Enjoy!

یه سالاد کامل میتونه نقش غذای اصلی رو تو روزای گرم تابستون داشته باشه و فراتر از پیش غذا یا کنار غذا باشه. 
این سالاد لایه ای و رنگارنگ با مواد اولیه‌ تاکو (نوعی غذای سنتی مکزیکی) آماده میشه و شامل نان ترتیای برشته شده (تو فر یا روی گاز) ، کاهو ، لوبیای پخته شده (اگر لوبیای سیاه باشه اصیل‌تره) ، پنیر چدار یا گودای رنده شده ، گوشت یا مرغ تفت داده‌شده با ادویه تاکو ، گوجه‌فرنگی ، گشنیزتازه خردشده ، برشهای لیموترش.
برای کنار این سالاد، گواکامولی بعنوان سس گرینه خوبیه.
گواکامولی ترکیب آووکادوی له شده، فلفل سبز تند خردشده ، گشنیز تازه ، گوجه خردشده ، کمی پیاز بنفش خردشده ، روغن زیتون ، نمک ، فلفل و آبلیمو.

Carbs are delicious and, personally, I don’t discriminate. 🤣But, for one of my clients who struggled with trying to eat “perfectly”, like I used to, carbs made her anxious. 😬She felt like she could only allow herself to eat things that were “healthy” like sweet potatoes 🍠and Ezekiel bread. Now, I love those two as much as the next gal💁‍♀️, but when you tell yourself that’s ALL you can have your body is going to want to rebel and eat an entire loaf of white bread. 🍞Seriously, it’s happened to me! And it was happening to my client, too. She was frustrated that she was craving all of the “bad” carbs, she felt like something was wrong with her. 😤Why did she have ZERO willpower?

During her time in my 1:1 No Food Rules coaching program we redefined what healthy eating looks like. We actually scheduled in times for her to eat things like white bread and refined, buttery crackers😲. This allowed her to normalize these foods and remove the “bad” label causing her to crave them. Guess what? She found she didn’t even LIKE THEM! It was biology that was causing her to crave them, not a lack of willpower. When she realized this she was able to free herself from the constant thoughts of the carbs she “couldn’t” have and the guilt associated with them. If she wants to have a warm dinner roll when out on date night, she can- and WILL, but she no longer feels the pull to eat the entire basket. 🙌🏻THAT, my dears, is what it’s like to live the No Food Rules lifestyle!
