Lass uns heute hasselbacken 😁🙌. Hasselback- Kartoffeln sind in Nu zubereitet 👌, dazu selbstgemachter Kräuterquark und frischer Salat. Herrlich. Du wirst es lieben 💛, versprochen. Nun zum schnellen Rezept -> geling immer 🙌.
👉Ein paar Tipps vorab: die Kartoffeln sollen festkochend und mittelgroß sein, die Kartoffeln müssen vorher unbedingt gründlich gewaschen werden, bitte nur zu 2/3 einschneiden (es sollen ca.15 Einschnitte pro Kartoffel sein ), am besten gelingt das Einschneiden wenn man zum Beispiel einen Holzkochlöffel neben der Kartoffel legt. 
Die Zubereitung:
Den Backofen auf 200 Grad vorheizen, das Backblech mit Backpapier auslegen. In einem Schälchen ca. 1/2 Tassen Milch mit 1-2 Esslöffel zerlaufener Butter und 1-2 Esslöffel Olivenöl vermischen. Nach und nach eingeschnitte Kartoffeln eintauchen und das Backblech legen. Ich empfehle die Kartoffeln erst nach dem garen zu salzen, damit sie keine Flüssigkeit verlieren und knusprig werden können. Damit sie dennoch aromatisch werden, lege ich zum Beispiel Knoblauch und Rosmarinzweige dazu. Die Zubereitungszeit im Backofen beträgt gute 45 Minuten bis zu 1 Stunde. Nach ca. 20 Minuten die Kartoffeln erneut mit dem Milch- Butter- Öl Gemisch einpinseln.   • Revisiting these salt and vinegar hasselback potatoes in the lead up to Christmas 🥔

Ingredients:
1.5kg potatoes, peeled
¼ tsp salt
2 cups white vinegar
2 cups water
50g butter
¼ cup roasted onion or garlic flavoured olive oil
5 sprigs of thyme
1-2 tsp stock powder (you can use salt if you wish, just use a bit less)
Pepper to taste

Method:
1. Slice the potatoes into even sized rounds about 1-2cm thick. Try to keep the width similar to prevent any burning whilst they are baking.
2. Place the potatoes in a pot and add the ¼ tsp salt, vinegar and water. Let the potatoes sit in the vinegared water for 1 hour. After an hour, place the pot on the stove and cook the potatoes in the vinegared water for 10-12 minutes until the potatoes have just started to soften and are cooked.
3. Once the potatoes are cooked, drain the water and allow the potatoes to cool slightly until they’re able to be handled and hasselbacked.
4. Preheat the oven to 200◦C while you prepare the potatoes.
5. To hasselback the potatoes, place the potato with the flat side down on a board and make even cuts along the potato. I like to make about 10-15 cuts per potato. Ensure each cut goes at least halfway through the potato so you get lots of crispy edged exposure. However, don’t cut all the way through as you want the slices to all stay together on the potato.
6. Place the butter and roasted onion olive oil on a large baking tray and place in the oven until the butter has melted. Rub the hasselbacked side of the potato into the oil so the oil gets into all the cuts. Flip over so that cuts are facing up and each potato is touching the tray but with enough space in between so they are not sitting on top of each other.
7. Cook for 25-30 minutes. After this time, the bottoms should be golden, if not cook further until golden brown. Flip and cook for a further 30-55 minutes so that all sides are golden brown.
8. Enjoy!

  • R O A S T  P O T A T O E S / For me, the linchpin of a good Christmas dinner is the roast potato: golden and crunchy on the outside, soft and cloudy inside. I am not normally a ‘rule’ kind of person – unless we are talking roast potatoes. So here are mine. .
〰️Start with good, floury potatoes: maris piper or king edward are both good. I cook about three large potatoes per person, peeled and cut into roughly golf-ball-sized pieces at random angles, giving more edges to crisp up. .
〰️Blanch the potatoes in very well-salted, boiling water for 10-12 minutes, until almost fully cooked and soft on the outside. .
〰️Drain the potatoes, then shake vigorously in a colander until the potatoes have a ragged, fluffy edge, which will mean golden crisp bits; leave to steam-dry for five minutes in the colander. 〰️Put five tablespoons of olive oil or butter in a large roasting tray, then put in the oven to get really hot before you add the potatoes. Be careful when you do, as hot fat can splash. Toss them in the oil and season well with salt and pepper.

〰️Now is the time to add any flavourings. My favourite combinations are:
a whole, halved bulb of garlic with rosemary sprigs and strips of lemon zest;
lots of flaky salt and two tablespoons of white-wine vinegar, A few bay leaves, sprigs of thyme and strips of orange zest;
or two lemons, zested, halved and added to the tray with a tablespoon of coriander seeds.

〰️Halfway through cooking, lightly squash the potatoes with a potato masher, to give more surface area in contact with the tray, which means more brown bits.

〰️Once the potatoes are crisp, golden and perfect, you can keep them in the roasting tray at room temperature, warming for 10 minutes in a hot oven just before you serve.

〰️If you want to be really ahead of the game, tonight, you can blanch, season and tray up your spuds, tossed in a little oil to stop them discolouring. Keep in the fridge until 30 minutes before you want to cook.
