Had a very busy sunday already. βœ… house cleaned βœ… Sunday on and smells yummie βœ… kids fighting then not. βœ… makeup done βœ… kids dressed βœ… healthy drink and breakfast .
My day is far from over, but have settled and playing nicely, I'm having 5minutes which is rare moment. 
I havent had my anti depressants for 2days but coping atm, I'm far from ready to come off them but I just forgot to get more #mumbrain 
Me and esme totally rocking our messy hair, as I dont have time and esme hair just gone wild. .

❀️ Roast chicken - seasoned with @frylighthq, salt, white and black pepper, thyme, garlic granules and onion granules. Sometimes I stick some sprigs of Rosemary up it’s bum too πŸ™Š (all of this flavours the chicken for slimmers, and makes AMAZING crispy skin for non slimmers 😩)
🧑 0.5 syn homemade Yorkshire puds - I make a big batch of these once a month and freeze, saves so much time 😍 step by step recipe for these on my highlights!

πŸ’š Mash - potatoes cooked in water with a veg and chicken stock cube. Once soft most of the stock drained - save a few tbsp worth. Blend it up - you can use a hand blender, I use my @magimixuk then season to taste! Just don’t overblend!
πŸ’™ Roasted parsnips - seasoned with white and black pepper, salt and frylight and roasted for 40 minutes, turning halfway through
πŸ’œ Cauliflower cheese - sauce made by heating 140ml milk slowly and adding salt, white pepper and nutmeg and melting 2 extra light dairylea triangles. Add 1 tbsp cornflour (1 syn) and 50g reduced fat cheddar - save a bit of this to put on top when you grill (all of the milk/cheese adds up to 2 hex a, serving 2 of us)
❀️ Broccoli, carrots, green beans and peas
🧑 Gravy made using meat juices (I can’t have it without, I’m a northerner and it would be a crime to ruin gravy!), homemade stock and granules (I count 5 syns - no idea if this is accurate but it’s never done me any harm πŸ™Š do what’s best for you!

  • I know some of you have been eagerly awaiting this one! 
@russellhobbsuk asked me if I’d like to do a collaboration on their new Sous Vide Slow Cooker and I’ll admit it, I nearly bit their hand off, my old slow cooker was so basic that I used it twice, then left it sitting in a deep dark corner of the kitchen for about a decade.
This one is for all of you who’d like a proper home-cooked meal when you get home, but can’t or don’t want to put in a couple of hours in the kitchen to get it...
SLOW COOKER ROTISSERIE CHICKEN
Five minutes prep in the morning, pop it in the slow cooker for the day, and then throw together a quick salad or some roasted veg when you get home and you’re good to go!

SLOW COOKER ROTISSERIE CHICKEN 
Ingredients 
1 Medium Chicken (1.7kg)
2 tbsp olive oil 
1 tsp garlic salt 
2 tsp paprika 
1/2 tsp salt 
1/2 tsp ground black pepper 
Method 
1. You will need a shelf for the chicken to sit on in the slow cooker, use a round cake tin or create one by rolling up some tin rolling into a thick β€˜O’ shape.
2. Pat the chicken dry inside and out with some kitchen towel, then mix the olive oil and seasonings together in a small bowl and paint the chicken all over with the mixture and a pastry brush. 
3. Place the chicken on the shelf in the cooker. Lock on the lid, and set the chicken to low for 8 hours (from chilled) if your chicken isn’t the same size as listed, cook it using the temperature setting and probe and cook to 72 degrees. Pop the chicken in the slow cooker heatproof pot in a hot oven at the end for ten mins if you like extra crispy skin.

The ultimate treat as far as my family is concerned and that includes Hamish the Springer spaniel who has learnt that he gets a jolly nice treat at the end of this meal. I find the best way to cook this is to give in a really good sear in a smoking hot pan and then into the oven for roughly 10 minutes. Resting the meat is really important as it allows the juices to go back into the meat rather than pouring out all over the plate when you slice. It also lets the cooking process continue slightly and produces beautifully tender meat. β €β €β €β €β €β €β €β €β €
Top tip - thanks to one of you! 
When preparing Hasselback potatoes, cut them on a spoon, this will ensure you don’t slice all the way through. β €β €β €β €β €β €β €β €β €
Serves 2
β €β €β €β €β €β €β €β €β €
Cote Du Boeuf (beef Bone in Ribeye) approx 700g 
5 Whole Garlic cloves
300-400g baby potatoes β €β €β €β €β €β €β €β €β €
Preheat the oven to 210 degrees.
Slice the potatoes 1mm apart trying not to go all the way through. You can cut these on a spoon which will help. Drizzle with oil and season. Add smashed whole garlic cloves and roast for 40-50 minutes.

Recipe for rare...
Season the beef with lots of salt and pepper and sear in a very hot pan with a small amount of groundnut oil for approximately 3 minutes each side to get a golden crust.β €
Throw in 4 whole cloves of garlic with the skin on then transfer to an oven for 10 minutes.β €
Rest the meat for 20 minutes and carve.β €
