  • GOLDEN POTATOES. Potatoes are such a grounding food, literally coming from beneath the earth- there’s something so ancient about that. So soulful. And when paired with turmeric and garlic, fellow underground stems and bulbs, respectively, it’s like a sunshine hug in your tummy. This dish is sure to tick all the comfort food boxes as the onions caramalize and give it a delicious sweetness. I like to make this recipe with baby potatoes, but the big guys are also great. Feel free to mix up your varieties and add some sweet potatoes, big, small, purple and red ones too for a delicious array of colours and flavours! -

About 15 baby potatoes
1/2 red or white onion 
1,5 big cloves garlic 
1 rosemary stem, fresh 
1/2-1 tsp turmeric
1/2-1 tsp Malden salt 
About 2 TBS olive oil -

1. Preheat oven to 180. 
2. Wash and pat potatoes dry, leaving skin on. Par boil in lightly salted water on the stove, or simply place in microwaveable dish with lid (with holes for steam to escape) and cook in micro until potatoes are par cooked, about 4 mins. 
3. Using your hands, not a knife, roughly break the potatoes in halves if baby, or chunks if using big ones. The reason for this is that the rough edges scoop up all the tasty bits of olive oil and spices and crisp up beautifully as opposed to a smoother surface when cut with a knife. 
4. In a bowl, drizzle generously with olive oil, Malden salt flakes, finely sliced garlic slivers, chopped onion (slivers or diced) fresh rosemary and turmeric. Using a spoon (not your hands- turmeric stains like anything!), toss well so all potatoes turn yellow from the turmeric. 
5. Transfer to roasting tray and lay potatoes out well so they’re not piled on top of each other. Roast at 180 for about 10-15 mins or until potatoes start to crisp and turn golden. 
6. Turn oven onto grill mode and for last 5-10 mins grill potatoes so they get nice and crispy! 
7. YUM. Enjoy as a side with your favorite protein, or as a snack with hummus or guacamole! -

  • Why is it that the tastiest foods are always brown? Oven roasted pork belly... crispy, fatty and of course, brown.

I seasoned the 3lb pork belly with salt, chili, garlic, pepper, onion, cumin, cayenne pepper and then roasted it in the oven at 450 for 30 minutes. I then turned the oven down to 325 and let it cook another hour. Just at the end, I fired up the broiler to crisp the skin and make it golden brown.

  • EASY SKIN ON ROASTIES 🥔
I love traditional roast potatoes, beef dripping and all... er...who doesn’t?! But sometimes I just fancy a change, especially if I’m not doing a traditional Sunday roast, so I’ve done these to go with my new slow cooker rotisserie chicken (coming soon) and peas with bacon and feta.
EASY SKIN ON ROASTIES 
For approx 20 potatoes 
Ingredients 
1.1 kg floury potatoes, medium (halved) or large (quartered) 
2 tbsp olive oil 
2 tsp dried rosemary 
1 tsp dried thyme 
6 bashed whole cloves garlic 
Good pinch salt and pepper (Fresh rosemary just for show) 
Method 
1) Pre-heat oven to 220 degrees. Put the cut potatoes in a mixing bowl, add all the other ingredients and shake around until all the potatoes are well coated. Turn the potatoes out onto a large roasting tray and space them out, scoop any oil and herb mix left in the bowl into the potatoes. 
2) Place the tray in the middle of the oven for 50 -60 mins or until crispy golden brown, turning every 20 mins or so.
