Culinary producer @elsgoldman made a beautiful galette last week, and here’s what you need:

Puff pastry or pie dough, veggies, onion, cheese, garlic, egg, olive oil, herbs, salt & pepper

1.  Preheat oven to 425

2. Caramelize onions by heating 1 Tbsp oil or butter over medium and cook chopped onions and minced garlic until dark brown, 30-45 minutes

3. Roll out pastry dough. Leaving a 1" boarder around the edge, covering the dough in shredded cheese, caramelized onions, thinly slices veggies of your choice, olive oil, herbs, salt and pepper

4. Fold the exposed crust toward center of galette and wash with a beaten egg

5. Bake 30-40 minutes or until golden brown

  • ❤️Come promesso ecco qui la ricetta di questi biscotti super croccanti e leggeri 😋👩🏻‍🍳ovviamente basta non finirli in un giorno e sono anche a prova di dieta🤗 perfetti per uno spuntino o per colazione!!! Che aspettate???? Vi serviranno solo pochi ingredienti 😉
🍪 Biscotti all’arancia 🍪
• 100g farina di farro
• 130g farina integrale • 40g zuccherp di cocco
• 10g semi di chia
• 10/15g fave di cacao o gocce di cioccolato • scorza di un’arancia
• 70g succo di arancia
• 50g olio di semi • 1 pizzico di sale e un pizzico di lievito

In una ciotola metti le farine, il pizzico di sale e la puntina di lievito, aggiungi lo zucchero, la scorza di arancia e mescola. Unisci il succo d’arancia e l’olio, aggiungi anche i semi, le fave di cacao, e mescola con un cucchiaio, poi lavoralo con le mani fino a farlo diventare un panetto omogeneo appiattiscilo e mettilo in frigo con la pellicola per 30 minuti. Preriscalda il forno a 180 gradi. Riprendi l’impasto e stendilo su carta forno ad uno spessore di circa 4mm, ricava dei cerchi (io ho usato un bicchierino da caffè) finché non finisci l’impasto. Cuoci per 15/20 minuti e poi fai raffreddare 😉

Tonight on Quarantine Cooking, I made my super simple burger bowl with baked fries! Craving comfort food but want to include all the nutrients your body craves? Try this recipe! Chop up some lettuce, tomatoes, onions and pickles. I cooked the beef with simply salt, pepper and garlic! Fries were baked in the preheated oven on 425 degrees for 15 minutes each side. DELISH!!

  • REALLY FRIGGEN G 🤤🤤 D TACOS!! With easy homemade paleo cassava tortillas (optional)

Recipe makes 3-4 meals.. Double or cut measurements to suit the amount you need
Leftovers also make a really nice taco salad!

Ingredients:
1 lb grass fed beef or bison (could sub for other ground meat/cooked lentils if that’s your thing) 
1 medium onion diced 
3 + fresh minced garlic cloves 
1 c quartered mushrooms (optional)
1/2 red bell pepper sliced (optional)
1 jalapeño seeded and sliced 
1 tsp of each garlic powder, dried oregano, cumin, smoked paprika or chipotle, chilli powder
Add an additional tsp of smoked paprika and chilli powder 
1/4 c organic tomato purée (I like to add this when using leaner meat so it’s a little saucier, grass fed is usually pretty lean)

Method:
Begin by sautéing beef over medium heat with onion until browned 
Add spices and stir
Lower heat to low-med
Add in fresh garlic, peppers and mushrooms, tomato sauce and continue to cook for another 6-10 mins. 
Meanwhile fry your tortillas. Or heat if using prepared tortillas. 
To make cassava tortillas:
Combine 3/4 c cassava flour with 1/4 tsp sea salt
Slowly pour in 2 tbsp olive oil or avocado oil and 1/3 c warm water while mixing
Roll into 6 balls
Put one ball between 2 slices of parchment paper
Press top with a cutting board or roll out with a rolling pin (or wine bottle) to thin into taco shape 
Fry on a dry heated pan over low- med heat, until bubbles appear, flip (cook about 2 min per side) 
Serve tortillas fresh with your taco beef &&&
Suggested toppings: 
Sliced cabbage
Shredded romaine 
Fresh avocado 
Pickled onions (so easy to make - I’ve got a recipe in my stories somewhere) 
Salsa 
Organic sour cream 
Hot sauce, I looove valentinas or choloula 
Fresh cilantro - You can prep your toppings in advance or do them while the beef cooks

  • Fresh Mango Martini! 🍹

One of my favorite past times have always been mixology.  Here’s a great refreshing easy cocktail to put together.  Locally you can head to Chun Ching Market for thai mangos that are sooooo sweet.  Everyone in there is currently wearing mask and gloves to help with exposure.  I was able to run in and out the other day while picking up some spices for my dinner meal.  Let me know if you end up trying the recipe or if you’d like to see more post like these.  I’ll have to admit during the stay at home order, libations have helped me stay sane. 💁🏻‍♀️ Incase you don’t feel like making your own craft cocktail don’t forget to support your favorite bars who are doing Togo cocktails!!!

    One of my favorite past times have always been mixology. Here’s a great refreshing easy cocktail to put together. Locally you can head to Chun Ching Market for thai mangos that are sooooo sweet. Everyone in there is currently wearing mask and gloves to help with exposure. I was able to run in and out the other day while picking up some spices for my dinner meal. Let me know if you end up trying the recipe or if you’d like to see more post like these.   • I have a fondness for round foods. These coconut curry chicken meatballs by @halfbakedharvest are no exception. This recipe, which you can find on her blog, is super easy and ready in 30 minutes or less. I start the rice (jasmine in this case), then the meatballs, and the sauce is ready by the time the meatballs come out of the oven. The spicy mango lime accompaniment really makes the dish for me so don’t skip that part. I had some leftover onions and peppers from fajita night so I chopped those up and threw them in the sauce too. We don’t waste anything during these quarantine times!  #quarantinecooking

  • I made cheese straws with the left over pastry from making pie lids a few weeks ago. And they were really delicious. Just perfect to nibble on with a glass of wine as an aperitif 
Puff pastry – I probably had about a quarter of a @jus_rol ready rolled, roll left (other ready made pastry is available)
Cheese – finely grated, I would go for Parmesan or Grana Padano – about half to 2/3 of a cup (if you don’t have cheese or you want to make this a vegan recipe you could use chopped herbs instead) 
1. Preheat the oven to the temperature recommended on the pastry packet
2. Roll out the pastry and sprinkle 1/3 of the cheese over half of it
3. Fold it into four and roll it out again
4. Repeat with the remaining cheese, 1/3 at a time
5. Brush with milk, egg or a little oil and bake for ‪around 5 – 10‬ minutes, or until golden
6. Enjoy with an ice cold, pre-dinner drink

What to do:

Add the wet to this dry mixture:
1 3/4 cups of flour, 1 cup quick oats, bp + bs, a lot of cinnamon and cardamom and some sea salt.
Now add 1/2 cup chopped walnuts and 1 cup frozen blueberries. Fold in carefully.
Bake for 40-45 mins at 375 degrees. If you use fresh berries your baking time will be less.

  • Guys. This is my absolute favorite breakfast go-to. I don’t always use chicken sausage, but it’s a nice little addition. 🤤

2-4 Brussels sprouts (depending on size), chopped into quarters 
1-2 mushrooms, sliced thin
1 big leaf of kale, stripped off stem and sliced thinly 
2 garlic cloves, diced
1 chicken sausage, sliced 
2 eggs
All the hot sauce .

I heat up coconut oil in the pan and add the Brussels first because they need a little more time to soften. After a minute or two I add the kale and stir up to get oil mixed in. Then I add garlic and mushrooms. Stirring and cooking until everything’s soft. If using chicken sausage that is already cooked, add at the end just to warm through. Set aside in a bowl and add more oil to the pan to fry some eggs, salt and pepper to taste. Slap those eggs on top of veggies and add all the hot sauce you desire. .

  • Oven baked Croquettes with Coleslaw 
Croquettes are a perfect and tasty snack and a wonderful way to use all the leftovers you have in your pantry! You can do croquettes of pretty much everything! Meat, seafood and vegetables! [A croquette is a small cylinder of food consisting of a thick binder combined with a filling, which is breaded and deep-fried, and served as a side dish, a snack, or fast food worldwide. - Wikipedia]

In our recipe, we used a thick roux with brown sauce called Espagnole. We added finely chopped bacon, pork carnitas, chopped  red pepper, finely chopped onion, minced celery, minced garlic & garlic powder, mustard, red chili flakes, smoked paprika, sea salt & 5 pepper blend & cumin and half of a dark beer.

The mixture should be thick, and not sticking to your pan. Let everything cool down and refrigerate for at least one hour.  Then you'll be able to roll the cylinders, to the size you desire, roll them in breadcrumbs crumbs, then dip in egg and roll in breadcrumbs again. We baked ours, (since we don't have a deep-fryer here), but he best way is to deep-fry them. They should be crispy on the outside and creamy on the inside... 😋😋

  • Coriander and Garlic Naan. Tasted so good, That’s what I’m talking about! I rustled this bad boy up yesterday. I must admit I have struggled to find a lot of ingredients in the supermarkets recently, so I decided to make full use of the store cupboard and made some substitutes. Doesn’t mean we substitute on taste, no way! I decided to rustle up some no yeast Naan breads since yeast and bread flour are in short supply at the moment. And I wanted to share so you lovely lot can make this at home ❤️ it’s easy, quick, and tasty! 
I promise you’ll be chuffed with the results. 
Phew, it’s a golden all rounder 👌

  • Anyone else snacking and baking a lot more these days? 🙋‍♀️ Now, I am searching for more recipes on Pinterest. Looking for healthier options to curb my sweet tooth. I came across these carrot cake cookies which are great for breakfast or for a snack.

Ingredients:
1 cup instant oats (as a substitute you can use old fashioned rolled oats pulsed a few times in a food processor)
¾ cup whole wheat flour
1 ½ tsp baking powder
1–1 ½ tsp ground cinnamon (to taste)
Dash of salt
2 tablespoons coconut oil-melted and cooled
1 egg
1 teaspoon vanilla
½ cup honey
1 cup grated carrots

Directions:
1. Whisk together instant oats, flour, baking powder, cinnamon, and salt, set aside.
2. In a large bowl whisk together egg, vanilla and coconut oil. Add honey and stir to combine.
3. Stir in dry ingredients mixture, then fold in carrots.
4. Cover the dough with plastic wrap and chill for 1 hour. CHILLING IS MANDATORY!!! The oats need some time to soak some moisture, also prevent cookies from flatten completely.
5. Preheat the oven to 350 F, line large baking sheet with parchment paper and set aside.
6. Using ice cream scoop drop the ball of cookie dough onto baking sheet leaving two inch space apart. If you chill the dough longer and the dough is very thick flatten the cookies slightly before baking.
7. Bake for 11-13 minutes. 
8. Cool the cookies on a baking sheet for 15 minutes ( they need to finish cooking on warm baking sheet) then transfer to a rack.

  • A pot of beans on to simmer is perfect right now. The type of thing that can turn into many meals and require minimal hands on time - as with little kids there is endless time at home right now but no *time*. I’ve seen this no-soak method many places, from @alisoneroman to @epicurious, and finally decided to try on the bag in the back of the cupboard - with great scepticism I might add. But it totally works, and I’ve finally cooked my way through the bag of canellini that’s been lurking in the back of the cupboard since forever! Have used them for plenty of things in the past weeks, stewed in a tomato sauce, in salad, blended into soup, on toast, in last night’s cod bake, in todays tuna salad (above). So versatile! So simple. 🌱 Wash your beans - I leave them to soak while prepping the aromatics, rinse and cover with fresh water to a few cm above the beans. 🌱 Add aromatics. This week I added shallotts, garlic and bay, last week lemon zest, rosemary and garlic. Other woody herbs, chili etc would all be tasty. 🌱 Salt well, about 1 tsp per pound. Bring to the boil, turn down the heat and simmer on low until the beans are tender. These (small) cannelinis take about an hour and a half. 
So delicious - beats canned ones by miles. Todays tuna salad was a can of tuna, beans, a finely chopped shallott, finely chopped celery, parsley, olive oil, moscatel vinegar and lemon juice, salt pepper and hot sauce. .

I N G R E D I E N T S
2 over ripe medium bananas, mashed
100g smooth peanut butter
50g soft light brown sugar
1 large egg
35g cocoa powder
1 tsp baking soda
6 oreos, chopped
To decorate (optional)
50g dark chocolate
M E T H O D
* Preheat oven to 160°c. Grease and line brownie tin with parchment.
* Add the bananas to a bowl and mash with a fork until pureed, add the smooth peanut butter and sugar, beat together until really well combined.
* Add the egg and mix again.
* Sieve in the cocoa powder and baking soda and fold until just combined.
* Spoon into prepared tin and spread evenly. Add the chopped Oreos over the top and press into the tin slightly.
* Bake for 20 minutes. Allow to cool completely in the tin before removing from the tin and placing in the refrigerator for 30 minutes before cutting into squares.
* If using, melt the dark chocolate and drizzle over the whole batch.
* Best stored in the fridge.

  • ~ 6 INGREDIENT MINI CUPCAKES ~

I was in the mood to bake but in all honesty I don’t have the patience to be technical about measurements and procedures... And don’t get me started on having to wash those mixers, whisks and baking tins 😫 So in true Sabrina style I whipped these little babies up without a mixer in sight (only 1 bowl to wash up!) and I served them up to my kids in about 30 minutes which is completely acceptable to me 😊 I don’t profess these are the best cupcakes you’ll ever make (they’re not - I made the recipe up as I went along in 3 minutes flat) but they ARE super tasty, so incredibly easy and perhaps, most importantly, they’re a good way to get the kids involved in the kitchen. They kept my household happy for a few hours which is all I can ever ask for! Add chocolate chips, nuts or blueberries for a little extra yum, ice them or eat them plain - whatever tickles your tastebuds. I like my cupcakes when they’re a little more ‘cooked’ and textured with some delicious caramelised edges, but bake yours for a little less time if you want them super soft. The recipe is below. Enjoy 😘

Makes 16 mini cupcakes. You will need:
100g butter (salted is fine), softened at room temperature
100g self raising flour
100g caster sugar
1 medium egg
1.5 tsp vanilla
2-3 tbsp milk
🍃
Optional:
Handful chocolate chips
Handful chopped nuts
Handful fresh blueberries
🍃
1. Beat the sugar and butter together with a wooden spoon till fully combined.
2. Break in the egg, add vanilla and beat for a couple of mins.
3. Tip in the flour and gently mix to combine, taking care not to overwork the mix.
4. Add a trickle of milk to loosen the batter as needed until it reaches a  creamy (but firm) consistency. It shouldn’t be too runny. You’ll know it’s right if you can pick up some batter with the spoon without it running off. Fold in any optional ingredients at this stage.
5. Lightly grease a mini cupcake tin with a little oil/butter, and using 2 teaspoons fill each cupcake mould with 1.5 tsp of batter. You don’t need to level it off at the top, just be casual about it.
6. Bake at 180°C for 12-15 mins until the tops are light golden. Allow to cool for 10 mins before serving.

At the moment I am only cooking recipes that I know we will all enjoy. I’m very lucky as both boys eat all sorts of things but Charlie does not like chilli at all. For this recipe I kept the fajita mix with out chilli and instead added lots of heat to the salsa which meant we were all happy. Feel free to add a few more spices to the fajita mix, cumin or any Cajun spice would be nice. This recipe would work well with prawns tofu or halloumi. Obviously you will need to reduce the cooking time accordingly. Place everything on the table and let everyone load up their own wraps

  • Peanut butter baked oats, now we’ve all got a little extra time in the morning why not put that time into making these delicious peanut butter baked oats. Hit the save button to try this later. It’s one of my faves!
I N G R E D I E N T S
80g rolled oats
80ml oat milk
2 tbsp peanut butter
25g vegan chocolate protein (optional) I use Whey box
1 ripe banana
M E T H O D
* Preheat oven to 180°c and lightly grease a small skillet pan or baking tin.
* Mash the banana in a bowl, then add the peanut butter, oats, protein and milk. Mix together until fully combined.
* Spoon into a the skillet pan and bake for 20 minutes.
* Serve with greek yogurt, peanut butter and a drizzle of maple syrup.

  • Pan-fried zucchini buns😋, anyone? These buns are filled with crunchy zucchini & you can't stop eating after one bite😍
⁣
Recipe
🌱Bun ingredients:⁣
~ 1 3/4 cup all-purpose flour⁣
~ 3 teaspoons sugar⁣
~ 1 teaspoon active dry yeast⁣
~ a pinch of salt⁣
~ 2/3 cup water or plant-based milk (warm) mix with 3 teaspoons neutral oil⁣
🌱Filling ingredients:⁣
~ 6-8 cups shredded zucchini, leave the core untouched (about 2 large ones)⁣
~ 1/2 cup shredded carrot⁣
~ 1/2 cup sliced mushrooms (optional), sautéed & seasoned with salt⁣
~ chopped scallions, salt, a drizzle of toasted sesame oil, white pepper⁣
⁣
✅To make the bun wrapper in a mixer, place all dry ingredients in a mixing bowl & stir to combine. ⁣
Fit mixer with a dough hook & set speed to 2. slowly add in the wet ingredients & knead until a soft dough forms. Transfer dough onto a cleaned surface & knead with hands for 4-5 minutes until a smooth top forms. Place the dough in a bowl, cover & let sit for 30 mins.⁣
✅To make the filling, massage shredded zucchini with 1-2 teaspoons salt. Let sit for 15 mins. When ready, squeeze out all the liquid & place zucchini in a bowl. Then, mix in the carrot, sautéed mushrooms, chopped scallions & season with salt, a drizzle of toasted sesame oil & a few shakes of white pepper.⁣
✅After 30 mins, divide the dough into 14 equal portions. Flatten each dough & roll into a palm-size wrapper (check my bao rolling method). Place a spoonful of filling mixture in the middle & pleat to seal.⁣
✅To cook the bun, preheat a non-stick pan with 1 teaspoon oil. Place buns sealed side down slightly apart & pan fry for 1 min or until the bottom turns golden brown.⁣
✅Slowly add in 1/2 cup of water, turn heat to low-med & place a lid over. Cook until all water is absorbed & buns are fully cooked through. Top with sesame seeds & serve with chili oil. .⁣
