  • Winter weekend starter kit 🤣 What’s on your list to read this year? ⁣

📚 My library obsession is no secret, not the fact that I’ve been known to binge a beach read in an afternoon. I’d say my reading list is about half planned (I just peeked at my “to read” list in my library account, and it appears I have 40+ titles in there at the moment...), and the other half what calls to me when I wander the library aisles. And that covers a broad spectrum. I think I even have a book about MGM movie sets checked out right now, because why not?! ⁣

☕️ At any rate, reading knows no specific season for me, but cozy reading season has its perks, in my opinion. ⁣

Also, I haven’t ditched tea. Someone that I love really loves hot chocolate, so we mixed it up with a spin on a classic. 🥜 + 🍫 = 🤗⁣

Ingredients
2 racks pork back ribs
.
Dry Rub:
½ cup light brown sugar
1 tablespoon smoked paprika
2 teaspoons chili powder
1 tablespoon garlic powder
½ teaspoon pepper
2 tablespoons kosher salt
.
Sticky Sauce:
2 teaspoons ground ginger
2 teaspoons ground pepper
1 teaspoon onion powder
6 cloves garlic minced
1 tablespoon sweet chili sauce 
⅔ cup reduced sodium soy sauce
⅔ cup balsamic vinegar
⅔ cup brown sugar
⅔ cup honey
1 tablespoon cornstarch
1 tablespoon water

Instructions
To make the sticky sauce: In a medium sized dish, whisk together the ginger, pepper, and onion powder. Add the garlic and mix again to incorporate. Add sweet chili sauce, soy sauce, vinegar, brown sugar and honey. Whisk until incorporated.
Mix the dry rub ingredients together in a small bowl. Remove the membrane and place the ribs into the slow cooker. You can either curl the ribs along the slow cooker or cut them into sections and place on top of each other. Massage the dry rub into the ribs on both sides. Pour half of the sticky sauce mixture into the slow cooker and reserve the rest later for the sticky sauce. Cook the ribs for 6-8 hours on low heat until the meat is tender.
Remove the ribs from the slow cooker and place them on a foil lines broil pan with the meaty side up. Brush some sauce from the slow cooker on top of the ribs and broil until the edges start to look crisp and broiled. Allow tented with foil to rest while you make the sticky sauce.
To make the sticky sauce: In a medium saucepan over medium high heat, add the reserved sticky sauce to the pan. In a small bowl combine the cornstarch and water plus 1 Tablespoon of the hot liquid. Pour into the sauce pan with the sticky sauce whisk until the mixtures starts to thicken. Remove from heat and brush on top of the ribs. Serve immediately.

Spicy Egg Scramble (GF & DF)

Ingredients: 
2 eggs 
1 large shallot, diced 
1 clove garlic, diced 
1 red Thai chilli, sliced and seeds removed

I love @elisgranola , topped with fresh banana, and drowned in my all-time-fave @oatly oat milk. if your looking for a milk alternative(or not), oatly is the one to try(SO DAMN CREAMY)🥛.

Ingredients 🍱:
1 Tbsp Butter or Ghee or avocado oil
1 Medium Onion diced
2 Celery Stalks sliced
1 Medium Carrot thinly sliced
1 Large Red Bell Pepper diced
2-3 Garlic Cloves chopped
1½ Tsp Ground Cumin
1 Tbsp Chili Powder
1 Tsp Dried Oregano
15 oz Diced fire-roasted Tomatoes 1 can
¼ Cup Tomato Paste
4 Cups Low Sodium Chicken Broth
14.5 oz Red Kidney Beans rinsed, 1 can
14.5 oz Black Beans rinsed, 1 can
1 Cup Fresh or Frozen Sweet Corn
2 Cups Shredded Cooked Chicken
1 Cup Mexican Shredded Cheese Blend
Salt and pepper, to your taste

INSTRUCTIONS 👩‍🍳:
Melt butter or ghee (add avocado oil is using) in a large stockpot over medium-high heat.
Add onion, celery, carrots, bell pepper, garlic and cook until softens, about 5-6 minutes.
Stir in seasonings, diced tomatoes, tomato paste, and chicken broth and bring to a boil. Lower the heat and simmer for about 10-15 minutes, or until veggies are very tender.
Remove from heat and using a hand blender, blend the soup until smooth and creamy. Place the soup back over medium heat and add in beans, corn and shredded cooked chicken.
Stir to combine and boil for a couple of minutes, just to heat it all up.
Then pour into bowls and top with your favorite toppings. Enjoy!

    1 Tsp Dried Oregano
    15 oz Diced fire-roasted Tomatoes 1 can
    ¼ Cup Tomato Paste
    4 Cups Low Sodium Chicken Broth
    14.5 oz Red Kidney Beans rinsed, 1 can
    14.5 oz Black Beans rinsed, 1 can
    1 Cup Fresh or Frozen Sweet Corn
    2 Cups Shredded Cooked Chicken
    1 Cup Mexican Shredded Cheese Blend
    Salt and pepper, to your taste

    INSTRUCTIONS 👩‍🍳:
    Melt butter or ghee (add avocado oil is using) in a large stockpot over medium-high heat.
    Add onion, celery, carrots, bell pepper, garlic and cook until softens, about 5-6 minutes.
    Stir in seasonings, diced tomatoes, tomato paste, and chicken broth and bring to a boil. Lower the heat and simmer for about 10-15 minutes, or until veggies are very tender.
    Remove from heat and using a hand blender, blend the soup until smooth and creamy. Place the soup back over medium heat and add in beans, corn and shredded cooked chicken.
    Stir to combine and boil for a couple of minutes, just to heat it all up.
    Then pour into bowls and top with your favorite toppings. Enjoy!

❌Less than 100 calorie is cleverly advertised on the front of the veggie straws packet but the serve size (15 g) isn’t mentioned.

HONESTLY who eats 15g of chips 🙄? A snack size bag of crisps provides more!

Looking at the INGREDIENTS LIST:
1st ingredient: vegetable 71% - potato, so it’s just a potato crisps really...
❌ All the other ‘veggies’ are POWDERS - spinach powder, tomato powder, beetroot powder 😂
❌ Sunflower oil/canola oil is the second ingredient making it a high fat option...like ALL crisps/chips

SO I GUESS we could call them POTATO STRAWS with veggie flavourings instead 💁🏻‍♀️
