  • 🇵🇪Vegan Peruvian Causa 😋 We made a veganized version of @foodwishes’s causa recipe. Causa is a layered potato salad of sorts. Layers consist of mashed potato mixed with lime juice and ají pepper paste, a mayonnaise-based chicken or tuna salad, and avocado slices. 🥑 .
We brought back ají amarillo paste from Peru last year, but Fiesta also carries it. Ají amarillo, which are native to Peru, are moderately spicy, yellow-orange peppers with a citrusy flavor profile and aroma. They are delicious and brought great flavor and heat to our potatoes. 🥔🌶

Chef John makes a chicken salad for his recipe, but we subbed in pinto beans for our protein, which we tossed with vegan mayo, onion, cooked carrots, green peas, roasted red peppers, lime juice, and cayenne pepper. The result was absolutely banging—totally remaking our bean salad in the future for sandwiches. 🔥

  • Boosting our immune system should always be a priority but more so on these difficult times, we have teamed up with @thefitstitch to bring you this Vitamin C gummies to give our body a sweet extra boost! We hope this recipe brightens up your day, stay healthy and safe! 🧡

Ingredients:
Zest & Juice of 1 large lemon 
1 tsp fresh ginger, chopped
1 Tbsp maple syrup 
1 tsp turmeric
1/2 tbsp apple cider vinegar 
300 ml water
3 tbsp vegetable gelatine or agar agar
2 tbsp plant based milk
3 tsp @unicornsuperfoods Tropicana Blend .

Method:
Place all ingredients except gelatine into a pot. Bring mixture to a boil, then lower heat to simmer and cook for 5 min. 
Add gelatine and bring heat to medium and bring to a boil whisking continuously.
Place a strainer on top of a mug and strain liquid to remove lemon zest and ginger bits.
Let cool down 5 min. Add mixture to an ice cube tray and place in the freezer for 1 hour or until it sets. Enjoy! ✨

  • One Pot Pasta is the modern version of a casserole and I am a big fan! I make this for my family at least once a week and no matter which variety of veggies I use, it is always a hit! Try it for an easy, filling plant-based dinner. So yum!

Italian Summer One Pot Pasta

9 oz whole wheat spaghetti
1/2 small zucchini, chopped (I didn't have any, so I left it out)
1 red bell pepper,, chopped
1 yellow bell pepper, chopped 
1/2 red onion, chopped
2 cloves of garlic, miced
1 cup cherry tomatoes, cut into halves
1/2 cup loosely packed fresh basil
1 large handful spinach, roughly chopped
3 1/2 cups vegetable broth
1 teaspoon dried Italian herbs (I rosemary, thyme, and oregano)
salt
black pepper

Put all ingredients except for the spinach and the basil into a large pot. Pour in the vegetable broth.

Season with dried Italian herbs, salt, and pepper. Cook for about 12-15 minutes or until the pasta is cooked.

Add the spinach and the basil about 10 minutes into cooking. •Top with vegan parm or nooch, and ENJOY!

  • Creamy vegan daal with aubergine 🍆 😍 made in the slow cooker and hardly any cooking!! Coz we got nothing else to do right now go treat yo self to a slow cooker(or can cook stove top like normal!) and enjoy the RECIPE below 🤩 .

1 onion, diced 
4 garlic cloves, crushed 
1 thumb size piece of ginger, diced 
1 tbsp garam masala 
2 tsp cumin
1 tsp chilli powder 
1 tbsp thai red/or green curry paste 
4 cups lentils (I used a mix)
4 cups water/ veg stock 
1 tin tomatoes 
1 tin coconut milk 
2 aubergines, roasted 
Sauté onion in slow cooker basin over hob with heated olive oil for few mins, add ginger and garlic and cook for further 2 mins
Then add spices including curry paste 
Put slow cooker into stand and add rest of ingredients. Stir well. 
Leave on low for 5 hours 
Dice aubergine into 1 inch cubes and roast in oven with olive oil for 30 min at 200C
Mix in when done

  • Die letzten Reste zusammengekratzt 😄 mit Panko panierte Süßkartoffelscheibchen und dazu eine cremige, provenzalisch gewürzte Gemüsepfanne 🍽🌈 Hefeflocken und Limettensaft durften am Gemüse auch nicht fehlen 😉 Zur Nachspeise gibt's jetzt noch ne Ceterizin, das hat man davon wenn man bissl in die Natur geht 😅🤓🤧

Pour célébrer le printemps, j’ai eu envie de concevoir des Spring rolls. J’ai tout simplement taillé des légumes en forme de spaghettis et réalisé une sauce joyeuse et savoureuse.Cette recette pour 2 personnes est facile à réaliser et apporte beaucoup de bonheur au déjeuner.

Le rouleau de printemps, appelé goi cuốn, bo cuốn ou bi cuốn selon la farce est une spécialité culinaire du Vietnam.

INGRÉDIENTS

Pour les rouleaux : – 4 feuilles de riz
– 1 courgette
– 1 carotte
– 1 betterave
– 1 avocat
– 80g de lentilles corails germées

Autre option : 100g de tempeh

Pour la sauce : – 1 càs de tahini
– 1 càs d’huile de lin
– 1/2 citron
– 20g de gomasio
– 1 càs de vinaigre de framboise
– 1 pincée de mélange 4 baies
+ 1 càs d’eau pour diluer

MÉTHODE

1. Lavez & taillez les légumes en spaghettis
2. Coupez l’avocat en lamelle
3. Humidifiez la feuille de riz et la placez bien à plat sur le plan de travail
4. Disposez les légumes, l’avocat & les graines germées en bas de la feuille de riz, roulez vers le haut (en serrant bien) jusqu’au 3/4, puis rabattez les 2 côtés du rouleau et continuez à rouler jusqu’en haut.
5. Préparez la sauce en commençant par bien émulsionner le tahini, l’eau et le citron

🍠Today I made baked purple sweet potatoes with veggies (I had carrot, leek, celery, chickpeas, red cabbage and spinach) that I stir fried in garlic, ginger and sesame oil.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥜I made the sauce by whisking peanut butter with tamari, apple cider vinegar, grated ginger and some water to thin it out. I topped with sesame seeds and parsley. Very yummy!🙌⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
🌿A tip for baking purple sweet potatoes: Wash them and put each on a little sheet of aluminium foil, rub their skins with a little bit of oil and then wrap in the foil. They take a bit longer than the regular orange ones, these medium sized purples took about 70 minutes in 200C/390F. Good to know if making them for dinner!👍⠀⠀⠀⠀⠀⠀⠀⠀⠀

Made with @huntergatherergourmet  Fluffy Pancake Waffle & Pikelet Mix (which I can confirm is amazing!) To the mix I added @purecocoltd coconut oil, @cathedralcovenaturals coconut yoghurt, eggs, apple cider vinegar, and @sogoodnz almond coconut milk. Once cooked add your favourite toppings. To make the drizzlicious purple sauce I blended the Cathedral Coves Coconut Yoghurt with oob organic blueberries and strawberries.

This colorful brekkie is packed with nutrients to nourish your body. 🌿

To make the chia pudding you will need: ⠀
▪️ 2 tbsp chia seeds ⠀
▪️ 1 tbsp maple syrup (or other sweetener) ⠀
▪️ 120 ml plant based milk ⠀
.
And choose your colour: ⠀
💙 1/2 tsp. blue spirulina ⠀
💚 1/4 tsp. green spirulina ⠀
💛 1/4 tsp. turmeric ⠀
💖 1/2 tsp. pitaya or beetroot powder ⠀
💜 1/4 tsp. blue spirulina + 1/4 tsp. pitaya powder ⠀
🤎 1/2 tsp. cocoa powder⠀
🖤 1/4 tsp. charcoal⠀

Method: Mix all ingredients together and let it sit for at least 30 min to 1 hour (or over night) until liquid is absorbed(in the beginning give it occasional stir to avoid lumps) and top it off with strawberry nice cream.
