  • Roasted & baked poblano pepper stuffed with quinoa, jalapeño, & mushrooms.  Added a hint of cheese.  Cheese can be omitted or vegan cheese can be used to make this vegan friendly.  Yummy kale salad with fresh squeezed lemon juice and home made agua fresca!  Agua de jamaica sweetened with Stevia.  Mexican done healthy.  This was so yummy, spicy, & comforting after a fast 2 mile walk.  Working out, cooking, food photography, & exploring food are some of my favorite things to do!  Blessed to have established a good relationship with food.  I do my best to choose fresh real nutrient dense foods & watch my portions ~80% of the time.  The other 20% I eat just about anything in moderation.  Sweets are my weakness, but I limit my sugar intake most days.  No crazy dieting or strict rules here.  Just intuitive eating.  Choose fresh real food that nurtures my body most of the time.  Limit refined carbs, processed foods, & sweets.  My occasional tequila, wine, and mimosas don’t count 😜! #craztfitfoodie

Quick Recipe of the Day

Kale and Quinoa Salad
203 calories/serving

INGREDIENTS:
1/2 cup red quinoa 
6-8 large leaves regular kale
3/4 cup fresh strawberries, sliced
3/4 cup fresh blackberries 
1/2 cup red grapes, halved
1/3 cup dried blueberries 
1/4 cup pistachios, coarsely chopped
4 ozs crumbled feta cheese
1 tsp coarse sea salt
1 lemon 
Balsamic salad dressing .

DIRECTIONS:
🔸 Combine quinoa and 1cup of water in a small pot. Add a pinch of salt, if desired. Cook and cool down.
🔸Wash kale leaves and remove stems. Finely chop and add sea salt and a few squeezes of fresh lemon.
🔸Massage kale with hands for 1-2 mins or until tender and a deeper green color. Dry.
🔸Toss cooled quinoa with kale.
🔸Add all fresh fruits and chopped pistachios(omit if nut allergy) to kale-quinoa mixture and toss.
🔸Add feta cheese(omit if vegan) and dressing.
🔸Toss & Enjoy immediately!

    Kale and Quinoa Salad

  • What steps have you taken this week to create a healthier, simpler, less stressful, more focused, positive day? We started being more purposeful with our breakfasts... And you know what? My morning is less stressful, and full of more nutrients. With our Papa Bear, Mama Bear, and Baby Bear sized overnight oats I get everything done at night and just pull it out and👏BAM👏 breakfast! This allows me to snuggle more and spend more quality time with my family in the morning without buzzing around trying to figure out breakfast on top of normal morning routine stuff. This also allows us so much freedom in what we are eating and what flavors we get.

Passado 24hs notara que o preparado tem uma cor mais turba e que se mexer o recipiente se desprenderá bolhas de ar. 
Pois chegado a esse ponto seu Rejuvelac está pronto, coe o liquido, o arroz pode jogar fora já que todos seus nutrientes ficaram na água. Guarde seu Rejuvelac na geladeira por até 60 dias. 
Beba 30 ml aproximadamente toda manhã antes do café, acrescente um gotinha de suco de Limão e uma pitadinha de sal desse jeito estará alcalinizado e acrescente minerais a seu pro-biótico. .

Bata no liquidificador:
✏4 OVOS ✏3 bananas ✏2 colheres de açúcar magro ✏3 Colheres de azeite oliva EXTRAVIRGEM ✏2 colheres de leite em pó desnatado (opcional) da bem certo sem tbm ✏1 xícara de quinoa em graos cozida e recorrida ✏2 dedos do copo de água, se ficar muito dura a massa, coloque mais aos poucos 
DEPOIS MISTURA COM A COLHER:
✏1 xícara de Coco ralado oi flocos sem açúcar ✏ameixa seca cortada em.pedacinhos, coloquei 10 (era o que tinha)
✏se quiser uma crocancia, coloque algumas castanhas ou noses picadinhos ✏1 Colher de fermento para bolo

I meal prepped the quinoa over the weekend, used canned black beans and store bought organic rotisserie chicken so I was able to put the bowl together in less then 10 minutes. It was a tasty and nourishing meal. I hope your having a great day!

  • Leftover flaked salmon from last nights dinner is what’s for lunch today with quinoa, avocado, olives and mixed greens with feta and a light drizzle of evoo and lemon. I’ve literally been eating this super slow and one small bite at a time in fear I may have another acid reflux flare up. So far so good! Luckily salmon and avocado two of my favorite foods don’t seem to effect me. Thank God! Hope your having a great day!

I’ve literally been eating this super slow and one small bite at a time in fear I may have another acid reflux flare up. So far so good!   • Remember when quinoa was super trendy?! I’m returning to 2012 and bringing back this super grain. Kale Pesto Quinoa Bowl with blistered tomatoes, crispy chickpeas, sliced avocado, tzatziki, and a sprinkle of fresh basil.

To make quinoa, I used my vegan Kale Cashew Pesto recipe (link in bio) and prepared 1 cup quinoa. Then when the quinoa was cooked I mixed the pesto into it to warm.

To blister tomatoes, add oil to a pan on medium high and cook for a few minutes, turning occasionally. Chickpeas are tossed in oil and @primalpalate New Bae Seasoning and smoked salt and baked at 425 for 25-30 min. Tzatziki is from @wholefoods!

🥒Souvent lorsque l’on parle de protéines c’est souvent les protéines de source animales qui ont la vedette (œuf, viandes, poissons...). Mais on trouve également des protéines dans les végétaux. Certaines personnes ont décidé d’arrêter de manger de la viande et tous les produits d’origine animale (Vegan), il est donc intéressant de savoir quelles sont les alternatives.

❓Mais quelle est la différence entre les 2 types ?

✅Pour fonctionner correctement, notre corps a besoin de 22 types d’acides aminés, notre corps arrive à en produire 13/22. Il manque donc 9 acides aminés qui sont donc dits essentiels, car ils ne sont pas produits par notre corps. Le problème avec les protéines végétales c’est qu’elles ne contiennent pas la totalité de ces 9 acides aminés, mais il y’a quelques exemptions comme le sarrasin et le quinoa.

🍗Les protéines animales contiennent ces 9 acides aminés, mais elles sont à consommer avec modération, car elles peuvent entraîner des problèmes de santé si l’on en abuse trop.

🥦Voici donc une petite liste d’aliments (végétal) qui sont riches en protéines et faciles à intégrer à notre alimentation. (Voir post).

  • I had the most beautiful lunch yesterday with my mom and sister at @terraincafe This is their harvest bowl and has basically all my favorite things in one dish (except maybe for avocado and sweet potato) I’m super close to going back to school so I’m trying to soak up all the family time I can since I won’t see them again until at least October. As always I love the ability of food to bring people together for a meal. What are some of your favorite activities to bond with others?
